Kittencal's Deli-Style Egg and Olive Salad image

This is a deli-quality egg salad and one I have made many times in the past to serve a luncheons and buffets and always receive rave reviews! --- for a change of pace this is great stuffed between pita bread with a leaf of lettuce, plan ahead the egg mixture *must* be chilled for several hours or even overnight to blend the flavors, the amounts listed should give you 4 to 5 sandwiches, please add in the olives they are what really makes this recipe! :)

Number Of Ingredients 10

1 (3 ounce) package cream cheese, very soft
1/4-1/3 cup mayonnaise (not salad dressing)
1 teaspoon prepared mustard
1 pinch dill (optional)
8 hard-boiled eggs, chopped
1 celery rib, finely diced
2 green onions, chopped
1/3-1/2 cup green pimento stuffed olive (do not chop and hand-squeeze out excess moisture)
seasoning salt & freshly ground black pepper (to taste)
Tabasco sauce (optional and to taste)

Steps:

  • In a bowl, combine first 4 ingredients until smooth and well combined.
  • Add eggs, celery, green onion and olives; mix well and season with salt, pepper and Tabasco sauce if using.
  • Cover, and chill for at least 2 hours (or more, the more time chilled the better!).
  • If desired serve on pita bread, using 1/3 to 1/2 cup for each sandwich.

3 Tbsp. MIRACLE WHIP Dressing
2 tsp. GREY POUPON Hearty Spicy Brown Mustard
4 hard-cooked eggs, coarsely chopped
7 pimento-stuffed green olives, halved
21 woven wheat crackers

Steps:

  • Mix dressing and mustard in medium bowl.
  • Add eggs and olives; mix well.
  • Serve with crackers.

This comes from AllRecipes.com, it has been modified according some of the readers suggestions. Mustard was reduced from 1/4 cup to 1/8 and garlic salt made garlic powder, since it already calls for salt.

8 eggs
1/8 cup mustard
1/2 cup mayonnaise
1/2 teaspoon fresh basil, chopped
1/2 teaspoon fresh parsley, chopped
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon onion powder
1/2 teaspoon hot pepper sauce
1/2 cup celery, finely chopped

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and finely chop.
  • In a medium bowl, mix yellow mustard, mayonnaise, basil, parsley, garlic powder, salt, onion powder and hot pepper sauce. Fold in eggs and celery.
  • Chill in the refrigerator until serving.

My mom used to put a booth in a local church's fall craft bazaar. The church ladies made these sandwiches every year. They are simply amazing. I went back to the bazaar this past fall for the first time in years... They were still making the same sandwiches, but I didn't get one -- they were sold out!! The recipe comes from the church's cookbook. The book suggests only Sunbeam white bread, but since when do I follow rules?! Pita bread, whole grain bread, wheat bread, or just a a bed of lettuce... It's all good. :)

5 hard-boiled eggs
1 (16 ounce) jar stuffed green olives
1/2 cup Hellmann's mayonnaise
1/2 cup finely chopped pecans
3 dashes Tabasco sauce

Steps:

  • Chop eggs and olives finely. The finer, the better. If you're adventurous, use a food processor.
  • Mix all ingredients gently by hand.
  • Tightly cover and cool the mixture for a few hours, maybe even overnight.
  • Make into sandwiches and cut into quarters or use cookie cutters to make fun shapes.
  • **start with a 1/2 cup of mayonnaise and add as needed **.
