SWEET AND TANGY CHICKEN



Sweet and Tangy Chicken image

4 Ingredient Sweet and Tangy Chicken is a go-to chicken recipe using common ingredients and is one of the most popular recipes on Syrup and Biscuits.

Number Of Ingredients 4

8 chicken thighs (You can use a whole chicken or other parts. We love thighs the best. And we want them on the bone with the skin)
1 package dry french onion soup mix
1 8 oz bottle Russian dressing ((I prefer Wishbone Russian dressing))
1 small jar of apricot preserves ( or about a cupful)

Steps:

  • Mix all ingredients, except chicken, in a bowl.
  • Place chicken pieces in a baking pan. Sprinkle with pepper. No extra salt is needed.
  • Pour sauce over chicken and make sure it's coated well.
  • Roast uncovered at 400 degrees for 1 hour to 1 hour and 15 minutes until chicken is done. Baste several times during cooking. This is the way the chicken will look when done.

3 chicken breasts boned, skinned and halved
1/4 teaspoon black pepper
All-purpose flour
3 garlic medium, unpeeled
3 tablespoons butter or margarine
1/4 cup water
1 tablespoon red wine vinegar
1 cup water
2 tablespoons tomato paste
1 tablespoon cornstarch
1 tablespoon red wine vinegar
2 teaspoons chicken bouillon
Hot buttered noodles

Steps:

  • Sprinkle chicken with pepper and coat lightly with flour. In a 10-inch skillet over medium heat, brown chicken with garlic in butter or margarine for 2 to 3 minutes on each side or until golden brown.Add water and vinegar cover and simmer for 5 minutes or until chicken is no longer pink in the center. Remove chicken from liquid set aside. Crush garlic, discard skin and mash softened garlic into liquid.In a small bowl, stir water, tomato paste, cornstarch, vinegar and bouillon until smooth. Pour into skillet and bring to a boil, stirring constantly. Boil for 1 minute or until slightly thickened.Return chicken breasts and anyaccumulated liquid to skillet and heat through in sauce.Serve chicken and sauce over a bed of noodles.

This recipe comes from the Alscace Lorraine region of France and is made with heavy cream and Reisling wine. French beans and garlic mashed potatoes are a must with this rich dish. Because of the cooking time, I recommend using Chicken Thighes (on the bone and skin on)

6 tablespoons salted butter
8 chicken thighs
1 large onion, halved and sliced
8 ounces mushrooms, halved
4 tablespoons brandy
2 cups riesling wine
1 1/2 cups heavy whipping cream
salt & pepper

Steps:

  • Preheat oven to 350°F.
  • Melt the butter in a large skillet over high heat and add the chicken thighs skin side down. Cook for about 6-7 minutes until golden brown and turn over and cook for an additional 4-5 minutes.
  • Using a metal ladle, warm the brandy quickly and ignite the surface of the brandy using a lighter. Pour the brandy slowly and evenly over the chicken and wait for the flames subside. Be careful not to boil the brandy in the ladle as this boils off the alcohol. Pouring slowly and evenly will avoid "Flare-up"
  • Remove chicken and place in a casserole dish. Keep warm.
  • Reduce heat to medium and add onions to skillet and cook gently for about 3 minutes. Add mushrooms to pan and cook for a further 4 minutes. Using a slotted spoon, remove onions and mushrooms and place in casserole dish with Chicken.
  • Add wine to the pan, bring to a boil and add the mixture to the casserole dish.
  • Cook the casserole in the oven uncovered for about an hour and 15 minutes.
  • Pour off the liquid into a skillet and keep chicken warm. Reduce the liquid down to about 2 cups. Add cream and salt and pepper to taste and simmer for about 10 minutes.
  • Pour mixture over chicken and serve.

2 bone-in chicken breast halves (8 ounces each)
1/4 teaspoon salt, optional
4-1/2 teaspoons butter
1 small onion, thinly sliced
1 celery rib, thinly sliced
1/2 cup chicken broth
1/2 cup apple jelly
3 tablespoons orange juice
1 tablespoon minced fresh parsley
1/4 to 1/2 teaspoon dried thyme

Steps:

  • Sprinkle chicken with salt if desired. In a large skillet, melt butter over medium heat; brown chicken on all sides. Remove and keep warm. , In the pan drippings, saute onion and celery until tender. Add the remaining ingredients; cook and stir until jelly is melted. Return chicken to pan. Cook, uncovered, for 30-35 minutes or until a thermometer reads 170°. Remove skin if desired. Top chicken with onion mixture.
