FELICIANO TAMALE CASSEROLE
Another recipe born by my desire to make things quicker in a casserole, as opposed to forming individual tamales by hand. It's a family favorite. If you can find Masa Harina, use that instead of the corn meal mix. It tastes more like real tamales. It's usually in the international aisle, in 5-pound bags like flour.

Steps:
- 1. In a heavy skillet, brown ground beef and crumble well. Pour off fat.
- 2. Stir in Ro-Tel and chili powder (and Sazón Azafran if using). Simmer mixture for 5 minutes; set aside and cool to room temperature.
- 3. Optional: Stir in 1 can corn or beans, drained well.
- 4. In medium bowl, stir masa harina and salt SLOWLY into the cool water. (If boiling water and cornbread mix was used, stir and set pan in large bowl of ice water.) Beat until it reaches room temperature (this will be thick) and mixture is smooth. When corn batter has cooled, beat in eggs, melted butter or oil, and enough milk or buttermilk to make a thick batter like cake batter. It should drop from the spoon in dollops, not pour. If too thin, you can stir in a couple tablespoons flour or masa harina to get the thick batter.
- 5. In a 2-3 quart greased baking dish, spread half the masa harina mixture evenly over bottom. Spoon meat filling evenly over. Top with the shredded cheese.
- 6. Finally, spoon remaining masa harina evenly over top of all and smooth out with back of spoon.
- 7. Bake at 375° for about 30 minutes, until masa harina is cooked and lightly browned. Allow to rest 5 minutes before slicing.
- 8. LEFTOVERS: If you have about half of the casserole left over: Place leftover casserole in a baking dish that fits. Top with one can of chili, 1 cup crushed Fritos corn chips, and 1 cup shredded cheese. Cover with foil and bake at 350° for 30-45 minutes until very hot and cheese is melted. So good!
- 9. NEW NOTE On the Masa Harina: I had to buy a new brand of Masa Harina because my store stopped carrying the old one. This one was labeled INSTANT Masa (corn) flour for tortillas, tamales, etc. It uses COLD water, not hot. I used the boiling like I always do with regular cornmeal, and got a very thick lump. I had to beat and beat to get it smooth enough to spread. So watch what type of Masa flour you get. Boiling water works fine with cornmeal, but use cold water on the instant masa harina.
CHILI TAMALE CASSEROLE
The combination of chilies and chocolate in this casserole from Ralph Stamm of Dayton, Ohio is a good match for the spicy chocolate cinnamon cane sugar. Just a little bit goes a long way to enhance the flavors of his original recipe. -Taste of Home Test Kitchen

- Drain corn, reserving liquid; set corn aside. Place masa harina in a large bowl. In a small bowl, combine the broth, butter, egg and reserved corn liquid; stir into masa harina just until moistened. Set aside., In a large skillet coated with cooking spray, cook pork and onion over medium heat until pork is no longer pink. Add the beans, chilies, chocolate, orange juice, lime juice, garlic powder, spicy chocolate cinnamon sugar, cumin, reserved corn, and cilantro and jalapeno if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes., Transfer to a greased 13x9-in. baking dish; sprinkle with cheese. Spread masa harina mixture over cheese. , Bake, uncovered, at 325° for 50-60 minutes or until golden brown. Let stand for 10 minutes before serving.

TAMALE CASSEROLE
Here's a great recipe that's quick to make, but not short on taste. Canned beef tamales with onions and Cheddar. Mmmm!

- Preheat oven to 350 degrees F (175 degrees C).
- Unwrap tamales and cut into thick chunks. Place a portion of the chopped tamales in the bottom of a 2 quart casserole dish. Then layer the onions, cheese, tortilla chips and chili without beans.
- Repeat this until all ingredients are used, topping off with cheese and chips. Then sprinkle with the water.
- Bake, uncovered, at 350 degrees F (175 degrees C) for 40 to 45 minutes.

CHICKEN TAMALE CASSEROLE
When I think of tamales, I think of the rich masa and a chicken filling. This recipe recreates the masa in the topping, kind of like cornbread, but without sugar. If you don't have masa, use finely ground cornmeal. The filling uses convenience items too, like leftover cooked chicken, a can of fire-roasted tomatoes, and a can of chopped green chiles. Top with a good melting cheese of your choice, avocado slices, and chopped tomatoes. Garnish with black olives and sliced green onions, if desired. A little dollop of sour cream would be good, too!

Steps:
- Combine masa harina, baking powder, and salt in a small bowl and stir to combine.
- Place vegetable shortening in the bowl of a stand mixer and whip on medium-high speed until fluffy.
- Mix in 1/3 of the masa harina mixture on medium speed, about 2 minutes. Mix in 1/2 of the chicken broth and mix until combined. Add 1/3 of the masa marina mixture, and mix about 2 minutes. Pour in the remaining broth and mix an additional 2 minutes. Add in the remainder of the masa mixture and mix about 5 minutes. The mixture will be a slightly thick batter. Allow to stand while the filling is prepared.
- Preheat the oven's broiler. Place poblano chiles directly on the oven rack under the broiler and broil until the skin is blackened and bubbly. Turn the peppers to blacken the skin on all sides, about 8 minutes total.
- Place broiled peppers in a paper bag, close the bag, and allow the peppers to steam inside the bag, about 10 minutes.
- When peppers are cool enough to touch, remove the skins. Cut the peppers open and remove the seeds and membranes. Slice into 1/4-inch thick slices.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add onions and cook until softened, 2 to 3 minutes.
- While the onions are cooking, use some more olive oil to grease a 10x10-inch baking dish, and preheat the oven to 375 degrees F (190 degrees C).
- Add garlic to the skillet and cook about 1 minute. Stir in sliced poblano peppers, fire-roasted tomatoes and juice, green chiles, capers, cumin, and cloves. Cook for 4 minutes. Stir in cooked chicken and continue to cook, stirring occasionally, about 5 minutes.
- Pour filling into the prepared dish.
- Carefully and evenly spread the masa harina mixture on top of the filling.
- Remove excess water from each corn husk and place on top of the masa mixture, overlapping as necessary. Cover the dish tightly with aluminum foil.
- Bake in the preheated oven for 1 hour.
- Remove foil and corn husks. Sprinkle on Monterey Jack cheese and return to the oven until the cheese melts, about 5 minutes.
- Top with avocado slices, black olives, chopped tomatoes, sour cream, and green onions to taste. Serve warm.

TURKEY TAMALE CASSEROLE
An easy, delicious version of a tamale that tastes like the real thing! I cheated a little bit with the taco mix, but it was in the cupboard and I figured it couldn't hurt, and it turned out great.

Steps:
- Crumble turkey into a large skillet over medium high heat and cook until almost all the pink is gone, about 4-5 minutes.
- Add green bell pepper, onion, green chili, tomatillos and cilantro and cook until softened
- Add taco seasoning mix, chili powder, cumin, oregano, paprika, salt and pepper.
- Reduce heat to low and allow to simmer, shutting off burner after 10 minutes.
- Preheat oven to 350 degrees Fahrenheit.
- Meanwhile, in a medium mixing bowl beat vegetable shortening on low speed until fluffy.
- In a separate mixing bowl whisk masa harina flour, salt, sugar and baking powder.
- Add chicken broth and mix with your hands until thoroughly combined.
- Beat flour mixture into vegetable shortening until the dough is combined. It may still have a few lumps, but that's normal.
- In a round casserole dish spread half of the masa harina dough in the bottom.
- Layer turkey filling mixture on top of that and sprinkle with monterey jack cheese.
- Top with remainder of masa harina dough.
- Place casserole dish in 9 x 13 baking dish and fill with water 1/2 way up the casserole dish.
- Cover with foil and bake for 55 minutes.
- Remove foil and turn oven temperature up to 425 degrees Fahrenheit and bake for an additional 10 minutes until top of crust just starts to turn golden brown.
- Remove from oven and garnish with monterey jack cheese and torn cilantro.
