Steps:
- Calienta el horno a 400°F.
- Espolvorea el pollo con el sazonador. Corta 4 hojas grandes de papel de aluminio grueso y coloca 1/4 taza de las papas en el centro de cada una de ellas; pon encima el pollo, el queso y la salsa.
- Dobla el papel aluminio para formar 4 paquetitos. Colócalos en una charola (bandeja) para hornear con bordes.
- Hornea los paquetitos de 30 a 35 min. o hasta que el pollo esté cocido (alcance una temperatura interna de 165º F). Sácalos del horno. Déjalos reposar 5 min. Haz varios cortes en el papel aluminio para dejar que el vapor escape antes de abrir los paquetitos. Ponles encima la crema agria.

- Corta papel aluminio y papel para hornear (parchment paper) en 24 trozos (7x6 pulgs.). Cocina la carne, en tandas, en una sartén grande a fuego medio-alto 2 min. o hasta que esté dorada, revolviéndola de vez en cuando.
- Apila 1 trozo de papel aluminio, 1 trozo de papel para hornear y 1 tortilla. Repite esto con los trozos de papel aluminio, de papel para hornear y las tortillas restantes. Pon encima los frijoles, la carne y el queso. Enrolla las tortillas y luego, envuélvelas bien apretadas con papel para hornear y papel aluminio. Colócalas en una vaporera con 1 pulg. de agua hirviendo; tapa la olla.
- Cocina los tacos a fuego medio-bajo de 15 a 20 min. o hasta que el queso se derrita, y estén completamente calientes. Quítales el papel a los tacos. Sírvelos con la salsa.

ENCILANTRADA DE POLLO/ENVUELTOS
A semi-spicy chicken dish that is served with Mexican rice and beans. This I usually prepare into envueltos (a soft taco). I sauté corn tortillas (soft not crunchy like a taco shell) and spoon the encilantrada mixture onto the tortillas, roll it up and top it with crema Mexicana and crumbled white Mexican white cheese. I prefer chicken thighs, but you may use chicken breasts if you prefer white meat or a whole chicken. This recipe feeds at least 8 persons 3-4 envueltos each. The cooking time for the chicken is usually 30 minutes. Please remember that additional time is needed to debone and dice the chicken. The salsa verde I use is Herdez, the taste compares to fresh.

- In a large pot, add chicken salt and pepper cook till done (saving the chicken stock), remove skin, debone and dice. Sauté onion and minced cilantro (coriander) on low-medium heat for about 3 minutes or till onion gets slightly golden. Add minced garlic last (garlic flavor gets tarty if sauteed too long) and sauté one more minute. Add the cans of Herdez salsa verde and chicken stock, cook on low to medium heat for 5-8 minutes. Add the diced chicken and continue to simmer for 5 more minutes.
- Sauté corn tortillas in oil on medium heat about 6 seconds on each side till soft, spoon encilantrada onto tortilla roll it up and top with crema mexicana and white Mexican cheese. Serve with Mexican rice and beans.

TINGA DE POLLO TACOS
Tinga de pollo, or shredded chicken, is a classic taco filling beloved for its flavorful sauce and simple preparation-in fact, it's a great way to use up leftover chicken! (Note: You may want to use tortillas from Chef Cámara's Homemade Corn Tortillas recipe on Panna.)

- Poach chicken: In a saucepan, add chicken and enough water to cover by 1 inch. Add 2 pinches salt, onion, garlic, and cilantro. Bring to a boil, then reduce to a simmer and cook until opaque and cooked through, 20-30 minutes. Meanwhile, make Tinga Sauce.
- Tinga Sauce: In a Dutch oven, heat oil over medium-high heat until smoking, 2 minutes. Add the onions (you should hear a sizzle when they hit the pan). Stir until lightly caramelized, 20 minutes. Meanwhile, place tomatoes, peeled garlic cloves, chipotle peppers, and chicken stock in a blender. Purée on medium speed until smooth, 30 seconds; then add tomato mixture to the onions. Stir and simmer, 5 minutes.
- Remove chicken from poaching liquid. When cool enough to handle, shred by hand and add to Tinga Sauce. Check for seasoning, and add salt to taste (Chef Cámara adds 2-3 teaspoons). Simmer, 5 more minutes.
- Assembly: Divide Chicken Tinga evenly among the tortillas. Garnish each with an avocado slice and a sprinkle of sea salt before serving.
