Here's what you need: oil, red bell pepper, yellow bell pepper, large red onion, salt, pepper, ground turkey, taco seasoning, diced tomato, rice, black beans, corn, salsa, lime, cheddar cheese, fresh cilantro

2 tablespoons oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large red onion, sliced
1 teaspoon salt
1 teaspoon pepper
1 lb ground turkey
1 tablespoon taco seasoning, 1 packet
28 oz diced tomato, 1 can, drained
2 cups rice, cooked
1 can black beans, drained, rinsed
1 can corn
1 jar salsa
1 lime, sliced into wedges
cheddar cheese
fresh cilantro, for garnish

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add the peppers and onions and season with salt and pepper, to taste. Cook, stirring occasionally, until vegetables have softened. Remove from pan, set aside.
  • Add ground turkey to hot skillet. Break apart with a wooden spoon to separate.
  • Season with taco seasoning, stir, cooking until meat has browned and cooked through.
  • Stir in tomatoes. Bring to a gentle simmer for about 5 minutes. Remove from heat.
  • To assemble the taco bowls, add a base of rice to 4 food storage containers. Top each with a scoop of black beans, corn, salsa, cheddar cheese, cooked peppers and onions, and taco meat. Garnish with fresh cilantro and a lime wedge.
  • Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.

1 round focaccia bread (10 inch)
1/2 cup chopped pitted ripe olives
2 tablespoons sour cream
2 tablespoons mayonnaise or salad dressing
1 teaspoon Old El Paso™ taco seasoning mix
1 small tomato, sliced
4 oz thinly sliced cooked turkey
2 oz thinly sliced Monterey Jack cheese with jalapeño peppers
2 oz thinly sliced Cheddar cheese

Steps:

  • Cut bread horizontally in half. In small bowl, mix olives, sour cream, mayonnaise and taco seasoning. Spread olive mixture evenly over cut sides of bottom and top halves of bread.
  • Layer tomato, turkey and cheeses on bottom half. Top with top half. Secure loaf with toothpick or small skewer. Cut loaf into 8 wedges.

1 pound lean ground turkey
1/2 cup chopped sweet pepper
1/4 cup thinly sliced celery
2 green onions, chopped
1 jar (16 ounces) medium salsa
1 can (16 ounces) kidney beans, rinsed and drained
1 cup uncooked instant brown rice
1 cup water
4 whole wheat tortillas (8 inches)
1 tablespoon canola oil
8 cups torn romaine (about 1 head)
Optional toppings: Chopped tomatoes, sliced ripe olives, cubed avocado, shredded cheddar cheese and chopped green onions

Steps:

  • Preheat oven to 400°. In a large skillet, cook and crumble turkey with pepper, celery and green onions over medium-high heat until no longer pink, 5-7 minutes. Stir in salsa, beans, rice and water; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed, about 15 minutes., Brush both sides of tortillas with oil; cut each into 8 wedges. Arrange in a single layer on a baking sheet. Bake until lightly browned, 8-10 minutes., To serve, divide lettuce among 8 bowls; top with turkey mixture. Serve with tortilla wedges; add toppings as desired.

1 (8 ounce) can tomato sauce
8 fluid ounces water
1 (4 ounce) can diced green chile peppers
½ onion, chopped
1 (1.25 ounce) package taco seasoning mix
1 clove garlic, minced
12 (6 inch) corn tortillas
1 cup shredded lettuce, or to taste
½ cup Cheddar cheese, or to taste
½ cup diced tomatoes, or to taste
¼ cup chopped green onion, or to taste
¼ cup chopped cilantro, or to taste
2 tablespoons sliced olives, or to taste

Steps:

  • Cut the turkey breast into four or five pieces of about the same width and salt them well. Mix the tequila and lime juice and submerge the turkey breast in this. I do this in a Ziploc bag. Refrigerate overnight, or at least 1 hour.
  • Roast all your peppers, seed and remove the stems and cut into strips or chop coarsely. This can be done a day or two ahead. If you are doing this ahead, toss the roasted chiles with some lime juice and salt and keep in the fridge.
  • Get a comal or skillet very hot over high heat. Get a tortilla warmer or some kitchen towels ready. Heat the tortillas for a minute or so on each side, until they char just a touch and puff up. Keep them warm in the tortilla warmer or in the towels.
  • When you are ready to make tacos, pat the turkey breast dry. Cut the marinated turkey into about 10 pieces of roughly equal size. Coat with the oil.
