CORNBREAD TACO BAKE (+VIDEO)



Cornbread Taco Bake (+Video) image

Cornbread Taco Bake is a cornbread base topped with seasoned ground beef, a creamy filling and topped with melted cheese! So good!

7 ounce packet cornbread mix
½ cup milk
1 large egg
1 pound ground beef
3 Tablespoons taco seasoning ((or 1 packet))
1/3 cup water
11 ounce can Mexicorn (drained)
10 ounce can Rotel (drained)
2 cups sour cream
2 cups shredded Mexican cheese blend ((divided use))
1/2 cup chopped green onions
shredded lettuce, sliced olives, diced tomatoes, taco sauce

Steps:

  • Preheat oven to 350f degrees. Spray a 9" x 9" (or 2 1/2 quart) baking dish with nonstick cooking spray.
  • Combine cornbread mix with milk and egg. Stir well.
  • Pour batter into prepared baking dish and bake for about 15 minutes.
  • Meanwhile, cook and crumble ground beef until no longer pink, drain excess grease.
  • Then add in taco seasoning and 1/3 cup water and stir to combine.
  • Then add in Mexicorn and Rotel. Stir well and simmer for a couple of minutes.
  • Once cornbread is cooked, take out of oven, then cover with ground beef mixture.
  • Next, combine sour cream, ONE cup of shredded cheese and green onion in a bowl.
  • Gently spread the sour cream mixture on top of the ground beef mixture.
  • Sprinkle the top with the remaining cup of shredded cheese.
  • Bake for about 25 minutes until heated through and cheese is melted.
  • Allow to cool for a few minutes. Slice and serve.

1 pound taco seasoned ground beef ((either leftover meat or beef cooked specifically for this purpose))
8 ounces Jiffy Corn Muffin mix ((1 box))
15 ounces whole kernel corn ((drained))
15 ounces creamed corn ((not drained))
1 cup sour cream
1/2 cup melted butter
1 cup shredded cheddar cheese
1/4 cup diced green chilies ((drained))
pico de gallo
sour cream

Steps:

  • Preheat the oven to 350 degrees.
  • In a bowl, mix all of the ingredients together and pour into a greased 9x9" or 9x13" baking pan. (NOTE: Ours fit in an 9" baking pan with deep sides. This casserole WILL expand slightly while baking so if you are afraid of it spilling over or want it to bake more quickly, use a 9x13 baking pan. Baking time will change if you use a different pan.)
  • This casserole will take about 60-70 minutes to bake if using a square 9x9 baking dish or 45-50 minutes in a 9x13 baking pan. Bake until lightly browned and set in the center. (The exact time will depend on the pan you use so watch it closely. The center should not be jiggly. If it is a deep casserole it will take longer to bake.)
  • Serve immediately with fresh salsa and a dollop of sour cream.

Serve up this taco cornbread casserole that is bursting with Tex-Mex flavor. A taco cornbread bake that is cornbread, seasoned ground beef, black beans, mexicorn, and more. A must make weeknight dinner idea.

1 box cornbread (8x5 ounces + Ingredients on Box)
1 pound ground beef
2-3 tablespoons taco seasoning
1/4 cup water
1 can Mexicorn (11 ounces, drained)
1 can Green chiles (4 ounces)
1 can Black beans (15.25, rinsed and drained)
2 cups sour cream
2 cups shredded cheese

Steps:

  • First preheat your oven to 350 degrees, and prep a 9x9 or 8x8 pan. Then make up the cornbread as directed on the box.
  • Pour the prepared cornbread in the pan and bake for 10-15 minutes. You want the cornbread to be lightly golden around edges.
  • While cornbread is cooking cook up the ground beef until no longer pink. Then drain off fat. Add in taco seasoning and the water and stir till coated.
  • Add in the black beans, green chiles, and the mexicorn. Stir until mixed and set aside.
  • In a new bowl place your sour cream and 1 1/2 cups shredded cheese. Mix till creamy.
  • When cornbread is done, remove and pour the meat mixture on top, followed by spreading on the sour cream mixture. Then top with the remaining shredded cheese.
  • Bake another 15 minutes or until the cheese is melted.
  • Dish up your taco cornbread casserole and pile on all your favorite toppings.

1 pkg 8.5 oz corn bread/muffin mix
1 egg
1/3 c milk
1 lb hamburger
1 pkg taco seasoning mix
1 can(s) black beans
1 c sour cream
1 c mexican cheese (or any cheese you like)
1/2 c onion, chopped
1 medium tomato, chopped
1 c shredded lettuce
1 can(s) sliced olives (optional)

Steps:

  • 1. Brown the hamburger and then add the taco seasoning, according to package directions.
  • 2. Preheat the oven to 350. In a large bowl, combine the corn bread, egg and milk until blended. Spread into an 8 x 8 pan sprayed with cooking spray. Bake for 15 minutes.
  • 3. Combine taco meat and beans, spread over corn bread. Combine sour cream, 3/4 cup cheese and onion. Spread over meat mixture. Bake for 20 - 25 minutes longer or until heated through and cheese is melted. Sprinkle with tomato, lettuce and remaining 1/4 cup of cheese.

1 can (2.8 ounces) french-fried onions, divided
1/3 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the corn, tomato sauce, water, green pepper and taco seasoning. Spoon into a greased 2-qt. baking dish., Prepare cornbread mix according to package directions for cornbread. Stir in half of the onions. Spread over beef mixture. Bake, uncovered, at 400° for 20 minutes. , Sprinkle with cheese and remaining onions. Bake until cheese is melted and a toothpick inserted into cornbread layer comes out clean, 3-5 minutes longer.

1 lb ground beef
1 medium onion, finely chopped
1 green bell pepper, finely chopped
1 (3/4 ounce) envelope taco seasoning
1 (15 ounce) can tomato sauce
1 cup frozen corn
4 ounces cheddar cheese, shredded
1 cup cornmeal
1 tablespoon all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 tablespoon lemon juice
1 cup milk
1 tablespoon melted butter

Steps:

  • Brown ground beef and drain. Return to skillet, add onions & peppers and cook until vegetables are soft.
  • Add corn, tomato sauce, corn and taco seasoning. Mix well and cook, over med about 15 minutes to reduce liquid.
  • Spoon into baking dish and top with cheese.
  • Mix cornmeal, flour baking powder and salt together in mixing bowl. Add egg and milk and then add butter and blend. Pour over meat mixture.
  • Bake for 25 minutes at 375°F.
