1 pound lean ground beef (90% lean)
2/3 cup water
1 envelope taco seasoning
2 tubes (12 ounces each) refrigerated buttermilk biscuits
1 can (15 ounces) chili con carne
1 cup shredded reduced-fat cheddar cheese
Salsa and sour cream, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in water and taco seasoning. Bring to a boil; cook and stir for 2 minutes or until thickened., Meanwhile, quarter the biscuits; place in a greased 13x9-in. baking dish. Layer with beef mixture, chili and cheese. , Bake, uncovered, at 375° for 25-30 minutes or until cheese is melted and biscuits are golden brown. Serve with salsa and sour cream if desired.

3 cups leftover taco-seasoned ground beef
1 can (16 ounces) kidney beans, rinsed and drained
1 cup shredded Monterey Jack cheese
2 large eggs, lightly beaten
1 cup whole milk
1-1/2 cups biscuit/baking mix
1 cup sour cream
2 cups shredded lettuce
1 medium tomato, diced
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a large bowl, combine the taco meat and beans; spoon into a greased 8-in. square baking dish. Sprinkle with cheese. , In another bowl, combine the eggs, milk and biscuit mix until moistened. Pour over cheese. , Bake, uncovered, at 400° for 20-25 minutes or until lightly browned and a knife inserted in the center comes out clean. Spread with sour cream. Top with lettuce, tomato and olives.

2 lbs ground beef
2 envelopes taco seasoning
water
3/4 cup milk
4 eggs
1 1/4 cups biscuit mix (Bisquick)
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 cup sour cream
2 1/2 cups shredded lettuce
1 large tomatoes, chopped
1 small onion, chopped fine
2 cups shredded sharp cheddar cheese or 2 cups Mexican blend cheese
taco sauce

Steps:

  • Preheat oven to 400 degrees.
  • Brown ground beef in frying pan over medium heat and drain.
  • Add taco seasoning mix and water according to package directions and simmer for 5 to 10 minutes.
  • Place meat into a 9 x 13 baking dish.
  • In a large mixing bowl, beat eggs and milk.
  • Add biscuit mix, salt and pepper and mix until well combined.
  • Pour over ground beef.
  • Bake for 25 minutes or until golden brown.
  • Allow to cool for about 15 minutes.
  • Spread top with sour cream and sprinkle with lettuce, tomato, onions and cheese.
  • Drizzle with taco sauce and serve immediately.

Number Of Ingredients 8

16 ounces refrigerated biscuit dough (like Pillsbury Grands)
1 1/2 cups textured vegetable protein
1 1/2 cups boiling water
1 ounce taco seasoning mix (1 envelope)
1 cup prepared salsa (I used medium)
1 1/2 cups frozen corn, defrosted
1 cup colby-monterey jack cheese, shredded
cooking spray

Steps:

  • Preheat oven to 375 and prepare spray an 8x8 pan with cooking spray.
  • Mix TVP, taco mix and water. Let stand uncovered for 8-10 minutes to rehydrate. Most of the liquid should be absorbed.
  • Cut each biscuit into 4 pieces and drop randomly into the pan.
  • When TVP is rehydrated, mix with salsa, corn and cheese.
  • Drop mixture into the pan over the biscuits.
  • Bake for 10-15 minutes or until TVP mixture is hot and the biscuits are golden brown.
  • Serve with more shredded cheese, sour cream or whatever you like to top tacos with.

1 (16 ounce) can tomato sauce
1 (15 1/4 ounce) can green giant whole kernel corn
2 cups shredded cheddar cheese (8 ounces) or 2 cups processed American cheese (8 ounces)
2 cups original Bisquick baking mix
1 cup milk
2 eggs
sour cream
chopped tomato
shredded lettuce

Steps:

  • Heat oven to 325°F Grease rectangular pan, 13- x 9- x 2-inches.
  • Cook ground beef and onion in 10-inch skillet, stirring frequently, until beef is brown; drain. Stir in dry seasoning mix, tomato sauce, and corn. Spoon into pan; sprinkle with cheese. Stir Bisquick mix, milk and eggs until smooth. Pour over beef mixture.
  • Bake about 35 minutes or until knife inserted in center comes out clean. Cool 10 minutes before cutting. Serve with remaining ingredients.
