EASY SWISS STEAK



Easy Swiss Steak image

Swiss Steak is a perfect family dinner; it's easy to make and can be cooked either in the oven or in the slow cooker. This dish has delicious tender beef in a rich tomato gravy and is perfect served over rice, noodles or mashed potatoes!

1 ½ pounds round steak
½ cup flour
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon pepper
2 tablespoons olive oil (or as needed)
2 onions (chopped)
2 carrots (chopped)
1 can diced tomatoes with juice (28 ounces)
1 can beef broth (10 oz)
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch (optional, see note below)

Steps:

  • Preheat oven to 350°F.
  • Using a meat mallet, pound meat to ½″ thickness.
  • Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
  • Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
  • Place onion & carrot in the bottom of the pot. Top with browned steaks.
  • Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.
  • Serve over mashed potatoes.

1 ounce salad oil
1 teaspoon minced garlic
7 ounces marinated beef caps
seasoning salt, to taste
1/2 cup freshly-sliced mushroom (1/4-inch hand cut)
1/2 cup julienne red onion (1/4" by 2 1/2-inch)
1 ounce Burgundy wine
4 ounces rice, pilaf
1 slice monterey jack cheese
1 piece kale (fist size for garnish)
1 dash of chopped parsley, for garnish

Steps:

  • Note: You will also need an 8 ounce rarebit dish and a larger dinner dish.
  • Ladle 1 ounce of oil into heated sauté pan. Add minced garlic and cook for 10 seconds. Place 7 ounces of beef tips into pan and generously season with seasoning salt. After tips have cooked for 1 1/2 minutes, add vegetables. When vegetables are 50% done, add burgundy wine. Cook tips to medium doneness. If you're cooking beef tips medium-well or well done, do not add garlic until wine is added because garlic will burn.
  • When tips are done, portion rice into bottom of a large rarebit dish and place tips and veggies on top of rice. Do not drain.
  • Place a slice of Monterey Jack cheese over tips, covering beef tips completely. Tuck the cheese around the beef tips so it is contained within the dish. Place rarebit dish into a cheese melter, broiler, or oven. Carefully remove dish when cheese is completely melted.
  • Serve rarebit on dinner dish. Garnish with a fist size piece of kale and a sprinkle of parsley and serve.

This makes a nice sauce. This is from Mr. Food, give it a try. This was also made for freezer tag March 2008. Freezer instructions are included below for as I call it future food. Enjoy!

1/3 cup flour
1/2 teaspoon garlic salt
1/4 teaspoon pepper
2 lbs cube steaks
3 tablespoons vegetable oil
2 (8 ounce) cans tomato sauce
1 (1 1/3 ounce) package dry onion soup mix
1 cup sour cream

Steps:

  • Combine first 3 ingredients.
  • Dredge cube steak in flour mixture.
  • Heat oil in a dutch oven over medium-high heat; add steak, in batches, and cook until no longer pink.
  • Return all steak to pot.
  • Stir in tomato sauce and soup mix; bring to a boil.
  • Cover, reduce heat, and simmer 15 minutes.
  • Remove steak to serving platter, reserving liquid in pot; keep warm.
  • Stir sour cream into tomato mixture; simmer, stirring constantly, until heated. Do Not Boil.
  • Serve over steak.
  • To Freeze: Combined the flour, garlic and pepper and dredged the cube steaks.
  • Fry the meat quickly in the oil to brown and crisp rather than cooking.
  • Set aside to cool.
  • Add the tomato sauce and soup mix to the pan and cool.
  • Freeze the meat and sauce in separate ziplok bags.
  • To Serve: After thawing add the meat and sauce to the pan.
  • Simmer for 15 minutes or until the meat is heated through.
  • Remove the meat and add the sour cream.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

2 lbs sirloin steaks, cubed (or round steak)
3 tablespoons vegetable oil
16 ounces tomato sauce
1 ounce dry onion soup mix
8 ounces sour cream

Steps:

  • Combine first 3 ingredients. Dredge cubed steak in flour mixture. Brown steak, in batches, in hot oil in a Dutch oven. Stir in tomato sauce and soup mix; bring to a boil. Cover, reduce heat and simmer 15 minutes. Remove steak, reserving liquid in pan; keep warm. Stir sour cream into tomato mixture; simmer, stirring constantly, until heated. Serve over steak.

2 tablespoons all-purpose flour
1/2 teaspoon salt

1-1/2 pounds beef round steak, cut into 6 pieces
1 medium onion, cut into 1/4-inch slices
1 celery rib, cut into 1/2-inch slices
2 cans (8 ounces each) tomato sauce

Steps:

  • In a bowl or shallow dish, combine the flour, salt and pepper. Add the steak and turn to coat. , Place the onion in a greased 3-qt. slow cooker. Top with the steak, celery and tomato sauce. Cover and cook on low for 6-8 hours or until meat is tender.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.
