Cooking the egg custard in a water bath makes this dairy-free kugel creamy, soft and silky in texture, a lovely contrast to the golden brown crunchy topping.

3 tablespoons olive oil, plus extra for greasing the dish
Kosher salt
8 ounces wide egg noodles
5 large eggs, lightly beaten
1/2 cup chicken or vegetable broth
Pinch freshly grated nutmeg
3 shallots, thinly sliced
1 bunch Swiss chard (12 ounces), stems finely chopped, leaves torn into small pieces and reserved separately
2 cloves garlic, finely chopped
Freshly ground black pepper
1/4 cup fresh dill fronds, chopped, plus extra for garnish

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat a 2-quart oval baking dish with olive oil. Bring a large pot of water to a boil and add enough salt so that the water tastes like the sea. Add the noodles and cook 2 minutes less than the package directions. The noodles should be firm-tender. Reserve 1/2 cup pasta water, and then drain the noodles. Let the noodles and pasta water cool slightly. In a large bowl whisk the eggs with the broth and pasta water until smooth. Add the noodles and nutmeg and stir to combine. Set aside.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add the shallots and cook, without stirring, until the edges are browned, about 5 minutes. Stir the shallots and continue to cook, stirring, until well browned. Add the chard stems, garlic 1/2 teaspoons salt and pepper to taste. Cook until the stems are softened, about 5 minutes. Stir in the chard leaves and a splash of water and cook until wilted, 2 to 3 minutes. Remove from the heat, cool slightly and then stir in the dill.
  • Add the chard mixture to the noodles and season with 3/4 teaspoon salt and pepper to taste. Transfer to the prepared baking dish and drizzle with the remaining tablespoon olive oil. Place the baking dish in a large roasting pan and add enough water so it comes up the side of the pan about one-third of the way.
  • Carefully transfer to the oven and bake until the center is set, about 1 hour 20 minutes, tenting the kugel with foil when the noodles are golden brown and crisp. Let stand at least 5 minutes. Garnish with dill. Serve hot or at room temperature.

2 cups canola oil, plus 2 tablespoons
6 shallots, peeled and thinly sliced
1 tablespoons all-purpose flour
Kosher salt and freshly ground white pepper
2 bunches (about 2 to 2 1/2 pounds) Swiss chard, trimmed and washed, leaves separated from stalks, the stalks cut into 1-inch thick and 3-inch long matchsticks, leaves torn into bite-size pieces
1 tablespoon extra-virgin olive oil
2 tablespoons sherry vinegar

Steps:

  • In a medium pot, heat 2 cups oil to 325 degrees F.
  • In a bowl, toss the shallot slices with the flour. Test a shallot slice to assure the oil is sufficiently hot enough to fry the shallots. Fry them in small batches until golden brown, removing them with a slotted spoon and drain them on a paper towel. Season with salt and pepper, to taste.
  • Heat a large skillet, and add 1 tablespoon of oil. When the oil begins to smoke, add the Swiss chard stalks and season with salt and pepper. Cook until tender, 3 to 5 minutes. Transfer to a serving bowl. Heat the remaining oil and quickly saute the leaves until they "wilt", 1 to 2 minutes. Combine in the bowl with the stalks. Stir in the olive oil and sherry vinegar. Top with the shallots.

  • Slice shallots about half an inch thick until you have 8 oz. when sliced. Chop 7-10 fresh chard leaves and stalks about an inch long, and separate the chopped stalks from the leaves. Grate 2 tbsp. of fresh parmesan. Mince 4 large garlic cloves.
  • In a large sauté pan, add 2 tbsp. olive oil and sliced shallots. Sauté over medium heat until brown. About 5-8 minutes. When they look nice and brown, pour in 2 tbsp. balsamic vinegar and turn off heat. Quickly mix shallots in the vinegar to coat, and allow them to sit in the pan as it cools for about 30 seconds to caramelize them. Remove shallots and set them aside.
  • Add 2 tbsp. salted butter and 2 more tbsp. olive oil to the pan. Over medium heat, add the chopped chard stalks and sauté for 2-3 minutes. Add minced garlic and sauté with the stalks for 1-2 minutes, until the garlic is a nice light brown.
  • Place the chopped chard leaves right on top of the stalks and garlic and allow it to wither down for about 2-4 minutes, then begin to move it around the pan to stir up the stalks and garlic below. Add caramelized shallots and grated parmesan. Gently mix ingredients together, sprinkle with fresh pepper and crushed, shaved almonds and serve.
