SLOPPY JOE CORNBREAD BAKE
Sloppy Joe Cornbread Bake - comfort food at its best! Sweet cornbread crust topped with sloppy joe meat, and cheese. A weeknight favorite. Everyone always cleans their plate! Jiffy mix, creamed corn, eggs, milk, cheese, ground beef, and Manwich sloppy joe sauce. Super easy to make and tastes great!

- Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
- In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
- In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add sloppy joe seasoning. Cook for an additional 5 minutes.
- Spread beef mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
- Allow to cool for 5 to 10 minutes and cut into squares.

- Preheat oven to 300°F Wrap all the tortillas tightly together in foil and place in oven for 5 minutes. In a medium skillet, brown the beef or turkey. Add the sloppy-joe sauce (or seasoning, tomato paste, and water according to the label directions). Place 1 tortilla on each plate. Spoon the sloppy-joe mixture evenly onto each tortilla. Divide the Cheddar evenly among the tortillas and fold them over. Serve with a green salad.

- Brown beef with onion, and garlic make sauce according to package directions (adding tomato paste and water); mix into beef.
- Mix cornbread mix, eggs, butter, salt, and canned corns.
- Pour corn bread mixture into prepared 9X13 inch casserole.
- Top with meat mixture.
- Sprinkle with cheese.
- Bake at 350°F until done, 45 minutes, until bread at the edges begin to brown.

- Preheat oven to 350 degrees.
- Heat large skillet on medium-high heat. Add ground beef. When meat is browned, add onions and peppers.
- In a medium-sized bowl, prepare BBQ sauce by mixing together brown sugar, vinegar, BBQ seasoning, Worcestershire sauce, and tomato sauce.
- When vegetables are tender, add BBQ sauce to skillet, reduce heat to medium and cook for 5 minutes. Reduce heat and simmer for 5 more minutes and let the mixture thicken up a little bit.
- During that time, stir together corn muffin mix, egg, oil, and milk. It will be a little lumpy.
- Once the beef mixture has thickened up a little bit, spoon it into an 8 x 8 inch baking dish. Pour the cornbread mixture evenly on top.
- Bake for 25-35 minutes or until a toothpick inserted into the center of the cornbread comes out clean. Remove from the oven and immediately sprinkle with cheese. Let cheese melt for a couple of minutes and then serve.
