This is a delicious breakfast casserole that's also great for dinner. Comes from Quick Cooking cookbook.

2 cups biscuit mix or 2 cups baking mix
1/2 cup cold water
8 ounces sliced swiss cheese
1 lb sliced bacon, cooked and crumbled
4 eggs, lightly beaten
1/4 cup milk
1/2 teaspoon onion powder

Steps:

  • Cook bacon on stovetop or microwave; crumble.
  • Mix biscuit mix and water in a bowl for 20 strokes, or until just combined.
  • Knead 10 times and place into the bottom of a greased 13x9x2 inch baking dish.
  • Spread dough evenly into bottom of dish and slighty up the sides.
  • Place Swiss cheese in 1 layer over the dough, then top with crumbled bacon.
  • In a bowl, whisk together the eggs, milk and onion powder and pour evenly over bacon.
  • Bake at 425*, for 15-18 minutes or until tests done in center. Cut into squares and serve while hot.

A very easy and filling breakfast/brunch dish, whether it's for "just the family" or overnight guests. Breaks the boredom of everyday bacon and eggs. Tastes great too!

2 c baking mix
1 lb bacon, cooked and crumbled
1 pkg (8 oz.) natural swiss cheese slices
1/2 c cold water
4 eggs
1/2 c milk
1/2 tsp onion powder

Steps:

  • 1. Mix the baking mix and water until soft dough forms. Beat vigorously 20 strokes. Gently smooth into ball on floured surface and knead 10 times. Pat into 13x9" baking dish with floured hands, 1/2" up the sides of dish.
  • 2. Top dough with cheese slices, overlapping edges. Sprinkle with bacon. Mix remaining ingredients and pour over bacon.
  • 3. Bake in a 425-degree oven until knife inserted near center comes out clean, about 25 minutes. Cool slightly and cut into squares.

These scrumptious squares are kind of like quiche you can eat with your hands. Perfect for brunch. Throw a fried egg on top of the leftovers for an easy, cheesy breakfast.

2 cups baking mix (such as Bisquick)
1/2 cup cold water
8 ounces sliced Swiss cheese
1 pound sliced thick bacon, cooked and crumbled
1 small onion, thinly sliced
4 eggs, lightly beaten
1/4 cup milk

Steps:

  • Preheat the oven to 425 degrees F. Combine the baking mix and cold water in a bowl and mix for 1 minute with a spoon. Turn the baking mix dough out on to a lightly floured work surface. Knead the dough 10 times. Roll the dough out to a 10x14-inch rectangle using a rolling pin. Carefully transfer the dough to a 9x13-inch baking dish, pressing the dough up the sides about 1/2-inch. Place the Swiss cheese slices evenly over the bottom of the crust. Sprinkle the cheese with the crumbled bacon and sliced onion. In a bowl, whisk together the eggs and milk. Mix until uniform in color. Pour the egg batter over the bacon and onion. Place the baking dish in the oven and bake at 425 degrees F for 15-18 minutes or until set and a knife inserted in the middle comes out clean. Remove the bacon Swiss squares from the oven and let cool for 1 minute before slicing and serving. Best served immediately.

6 slices bacon
⅓ cup chopped green bell pepper
⅓ cup chopped onion
4 roma (plum) tomatoes, seeded and chopped
1 teaspoon dried basil
2 tablespoons mayonnaise
1 clove crushed garlic
1 refrigerated pizza crust dough
¾ cup shredded Swiss cheese

Steps:

  • Preheat oven 375 degrees F (190 degrees C).
  • Place bacon in a large skillet over medium heat. Fry bacon until crisp. Drain on paper towels.
  • Crumble bacon into a medium-size mixing bowl. Mix in bell pepper, tomatoes, and basil. In a separate small bowl, combine mayonnaise and garlic.
  • Roll pizza crust into a 12x15 inch rectangular baking sheet. Spread the mayonnaise mixture evenly over the crust. Sprinkle the bacon mixture over the mayonnaise, and top the entire pizza with cheese.
  • Bake 18 to 20 minutes or until the top is bubbly and the crust is golden brown. Cool and cut the pizza into 24 squares.

  • Mix all ingredients together.

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
8 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss cheese (4 oz)
1/3 cup finely chopped onion
4 eggs
2 cups whipping (heavy) cream or half-and-half
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground red pepper (cayenne)
Additional crisply cooked crumbled bacon, if desired

Steps:

  • In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish or pie plate. Unfold and ease into dish, pressing firmly against bottom and side.
  • Sprinkle bacon, cheese and onion in pastry-lined quiche dish. In large bowl, beat eggs slightly with fork or wire whisk. Beat in remaining ingredients. Pour into quiche dish.
  • Bake 15 minutes. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Sprinkle with additional bacon. Let stand 10 minutes before serving.
