Steps:
- Heat oven to 180C/160C fan/gas 4. Grease and line a 16 x 28cm Swiss roll tin with baking parchment.
- Beat the eggs and sugar together for 5 mins with an electric hand whisk until thick and pale. Gently fold in the flour in two batches using a large metal spoon. Pour the mixture into the tin and gently ease into the corners. Bake for 10-12 mins until golden and firm. Be careful not to overbake, or the sponge will break when rolled.
- While the sponge is baking, sprinkle 2 tbsp sugar over a square of baking parchment. Warm the jam in the microwave for 20 secs.
- Turn the baked sponge onto the sugared paper. Peel off the lining paper and spread the sponge with the warm jam. Roll up from the short edge using the paper to help you then cool on a wire rack.

SWILL
I invented this based on what the jailor serves the "Spook" in prison, in the comic strip "Wizard of Id." Add more ingredients if you like. It's flexible.

GARLICKY SWISS CHARD
There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

Steps:
- Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips.
- Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil. Cover pan and let cook for about 2 minutes, until chard is wilted. Uncover, stir and cook for 2 minutes longer. Season with salt.

- Easy Spiral Cheesecake Swirl. If you’re working with a recipe that uses jam or fruit, try this simple method. Using a piping bag (or just a zip-top bag with the corner cut off) pipe a dots in a spiral pattern.
- Marbled Cheesecake. For a more abstract effect, you can add a marble finish to your cheesecake. This works really well for cakes that use two flavors of batter, like this chocolate brownie swirl cheesecake.
- Flower or Clover-Inspired Design. If you’re looking for a flower design (and you don’t have time to master cake decorating), look no further. Simply pipe caramel in a clover-shaped pattern (or a four-petaled flower).
- Two-Tone Cheesecake Swirl. If you have more than one flavor that you want to swirl into your cheesecake, this is the perfect method. Use a piping bag or a teaspoon, add small dollops of fruit filling or jam into your cheesecake batter (this is our favorite store-bought strawberry jam).
- Herringbone Pattern Cheesecake. Give your cheesecake a bakery-style touch with this herringbone method. Just like the others, it’s incredibly easy—but it definitely has a bit of a polished touch.
