- 1. Preheat oven to 375 degrees
- 2. IN a mixing bowl cream together the butter, and brown sugar. Add the eggs one at a time, and beat well.
- 3. Heat a pot of water until hot. Place a stainless steel bowl over the pot to make a makeshift doubler.
- 4. Add the chocolate chips and stir until melted. Let cool slightly and add to the butter mixture along with the coffee, rum flavoring, and almond extract. Stir well until blended.
- 5. Stir in the flour and cherries. Pour into the pie shell. Bake at 375 degrees for 25 minutes. Cool and serve with whipped topping.

- Melt the chocolate and butter together in a heavy saucepan over low heat. Remove the pan from the heat and add the sugar, then the eggs; beat well. Pour the filling into the pie crust and bake for 25 minutes or until just set. Serve warm or cold, with ice cream or whipped cream.
- Note from Paula: If you like a thicker pie, use 1.5x the filling ingredients, and bake at 375˚F for 40 minutes. It should jiggle a bit.

- Add eggs, one at a time, beating well after each addition.

- Pour mixture into pastry shell.
- Bake at 375 degrees for 25 minutes; cool completely.
- Chill.

- Melt butter and chocolate in a pan over low heat.
- Remove from the heat. Add sugar, eggs, corn syrup, and vanilla; stir until well combined. Pour into the pie crust.

- Remove from the oven and cool to room temperature before serving; filling will thicken as it cools.

- In a medium bowl combine eggs, melted butter or margarine, and sugar. Stir in vanilla extract. Set mixture aside.
- In a separate bowl mix together flour and cocoa powder. Pour egg mixture into flour mixture and stir until thoroughly combined. Fold in chocolate chips if desired. Pour into pastry shell.
