Sweetbreads With Mushrooms and Cherries image

Hearth Restaurant recently held a dinner featuring modestly priced Burgundy wines. Among the dishes paired with them were sautéed sweetbreads served on scrambled eggs seasoned with black truffles.Sweetbreads are a superb choice with red Burgundies. I wanted to pick up the cherry flavors that showed up in the Côte Chalonnaise wines we tasted, so I skipped the eggs and instead added dried cherries.There is a certain amount of preliminary preparation - soaking, peeling and poaching - required before sweetbreads are ready to cook. Some recipes also call for pressing them, but I think that just makes them dry, which they certainly are not in this pinot noir-friendly dish.

1 1/3 pounds sweetbreads
Salt
1 lemon
1/2 cup dried cherries
1/3 cup dry red wine
3 tablespoons flour
Freshly ground black pepper
2 tablespoons unsalted butter
1 1/2 ounces pancetta, in one slice, diced
1/2 cup finely chopped onion
24 very small cremini mushrooms, stems removed
2/3 cup chicken stock
1 tablespoon minced tarragon

Steps:

  • Rinse sweetbreads under cold running water. Dissolve 1 tablespoon salt in 2 cups cold water in a 2-quart bowl. Add juice of 1/2 lemon. Add sweetbreads; water should cover them. Soak 1 to 2 hours. Place cherries in a dish, add wine and set aside at least 2 hours.
  • Remove sweetbreads from water and use a sharp knife to peel off translucent membrane and remove any bits of fat. If sweetbreads separate into sections, that is fine. Place sweetbreads in a saucepan, cover with cold water, add almost all remaining lemon juice, bring to a slow simmer and poach 15 minutes. Allow to cool in liquid, then refrigerate until ready to use.
  • Remove sweetbreads from liquid. Separate into 1- to 2-inch nuggets. Pat dry. Season flour with salt and pepper and dust sweetbreads. Melt butter in a 12-inch skillet or sauté pan with a cover. Very lightly brown sweetbreads. Remove to a dish. Add pancetta and onion to skillet. Sauté on medium-low until starting to color. Add mushrooms and sauté until softened. Add cherries with wine, and stock. Stir to deglaze pan. Bring to a simmer, add sweetbreads, baste with sauce.
  • Cover and simmer gently 10 minutes. Season sauce with remaining juice of lemon and salt and pepper. Baste sweetbreads again, add tarragon and serve.

Sweetbreads are so delicious! Pity they have fallen out of fashion. This recipe is an old favorite from San Francisco a la Carte. The authors suggest serving the sweetbreads with brown rice, broiled tomatoes and fresh green beans. The blanching directions come from Julia Child (who else?).

2 lbs sweetbreads, blanched (see instructions below)
4 tablespoons vinegar, approximately
2 teaspoons salt, approximately
2 tablespoons lemon juice, approximately
2 tablespoons butter, approximately
16 fresh button mushrooms, halved
1/4 cup fresh lemon juice
1 cup chicken stock
1/4 cup tomato paste
1/2 cup sherry wine
1 bay leaf, broken
pepper, freshly ground, to taste
1 teaspoon arrowroot
1 tablespoon dry white wine

Steps:

  • To blanch sweetbreads, first wash in cold water, then place in a bowl and soak for about 2 hours in several changes of cold water . Pull off as much membrane and filament as you can without tearing the flesh. Soak for another 2 hours, this time adding 1 tablespoon of vinegar per quart of cold water. Pull off the filament and remove connecting tubes between lobes, if present. Place sweetbreads in a saucepan and cover by about two inches with boiling water. Add the salt and lemon juice (1 tsp salt and 1 tablespoon lemon juice per quart of water). Bring to a bare simmer and cook for 15 minutes. Drain and plunge into cold water for 5 minutes. Drain.
  • When ready to cook, cut the blanched sweetbreads into bite-size cubes and brown them in the butter in a roomy skillet (You may need to brown them in two batches so as not to crowd them). Remove the sweetbreads to a plate. In the same skillet quickly brown the mushrooms over a brisk flame, adding more butter if needed. Add the lemon juice to the skillet and cook, covered, for 3 minutes.
  • Return the sweetbreads to the skillet and add the chicken stock, tomato paste, sherry (I actually prefer dry marsala -- port or madeira would probably be OK, too), and bay leaf. Simmer, uncovered, over medium heat for 15 minutes. Add pepper. Dissolve the arrowroot in the white wine and add to skillet to thicken.
  • The sweetbreads may be prepared ahead of time and refrigerated. Return to room temperature before reheating.

Aspic of Slow-Simmered Veal with Crisp Sweetbreads and Black Trumpet Mushrooms image

3 ounces veal consomme
2 sheets gelatin, bloomed
Leek greens, for assembly
6 ounces slow-simmered veal top round, sliced very thinly
5 ounces root vegetables, such as carrot, celeriac, and kohlrabi, sliced thinly and blanched
3 ounces poached and cleaned sweetbreads
1 tablespoon butter
2 tablespoons safflower oil
2 ounces black trumpet mushrooms
1 tablespoon Champagne vinegar
1 tablespoon vegetable brunoise (1/8-inch cubes)
2 tablespoons Napa Valley Blanc de Blanc sparkling wine
Serve with: Bouquet of microgreens

Steps:

  • To make the aspic: Heat consomme, add bloomed gelatin. Let cool slightly but not enough to set. Lay a slice of leek inside a 3-inch ring mold. Assemble the chartreux by using one layer of meat, pour on a thin layer of consomme, and then a layer of vegetables, continuing to the top of the mold. Chill down in refrigerator until the gelatin sets. Repeat with 3 more molds.
  • To make the vinaigrette: In a small skillet, sear the poached sweetbread pearls in the butter. Put aside and keep warm.
  • In another skillet, heat 1 tablespoon of the oil and sweat the black trumpets until softened but not browned. Add the vinegar, scraping the pan to deglaze any drippings, and then add the sparkling wine, the remaining 1 tablespoon of oil, and the vegetable brunoise. Just before serving, add the warm sweetbreads.
  • Toss the microgreens with a little vinaigrette. Put the chartreux in the middle of the plate, drizzle some of the warm vinaigrette around, and garnish with a little bouquet of the salad.

BRAISED SWEETBREADS MARSALA WITH HONEY MUSHROOMS



Braised Sweetbreads Marsala with Honey Mushrooms image

I adore sweetbreads, but, alas, they are becoming increasingly hard to get. So, whenever I see a package of them in the supermarket, I snatch them up and give myself a treat. I'm apt to vary the aromatics, but basically the technique is the same. If you do all the preparation in the morning, or even the night before, the final sautéing with just the right complementary flavors takes about 15 minutes. And when you have your first bite, there is something so deeply satisfying about the tender creamy texture of sweetbreads, and their ability to absorb and transform the aromatic flavors you give them, that you feel a small miracle has taken place. No wonder they are called sweetbreads.

About 1/3 pound calves' sweetbreads
1/2 lemon
Salt
About 2 tablespoons loosely packed dried honey mushrooms
1 tablespoon butter
1 shallot, chopped
All-purpose flour for dredging
Marsala wine
2 teaspoons glace de viande, or about 3 tablespoons beef stock
Freshly ground pepper

Steps:

  • The night before or the morning of the day you plan to cook your sweetbreads, or at least several hours before, put them in a small pot with enough water to cover by 2 inches. Squeeze the juice of the half-lemon into the pot, and add a good pinch of salt. Bring to a boil, and then reduce the heat to a lively simmer and cook for 15 minutes. Drain the sweetbreads, and plunge them into cold water. When they are cool enough to handle, carefully open up the lobes just enough to ease out some of the connective tissue. You won't get it all, but don't worry. Now put the sweetbreads on a small plate, put another plate on top, and set something heavy on it-a jar of jam or a soup can. Refrigerate for an hour or so, or overnight.
  • About 20 minutes before cooking, soak the dried honey mushrooms in 3/4 cup warm water.
  • When ready to cook, melt the butter in a small skillet and sauté the shallot until softened. Break the sweetbreads up into about six pieces, following the lobes, and dredge the pieces in lightly salted flour. Toss them into the pan, and sauté for 4-5 minutes, until lightly browned. Pour in a good splash of Marsala, and let it cook down until almost evaporated. Strain the soaked honey mushrooms, reserving the straining water, and toss them into the pan. Sauté together for another minute before adding the mushroom soaking liquid and the glace de viande or stock. Turn the heat down, cover, and let braise for about 10 minutes, checking frequently to see that there is enough sauce, and adding a little water and/or stock as necessary. Taste, correct seasonings, and add some freshly ground pepper.
  • Enjoy this delight with some steamed new potatoes and/or fresh peas or other compatible seasonal vegetable.
  • Of course, different kinds of mushrooms can be substituted, including fresh, but I find that using at least some dried mushrooms gives an intensity to the sauce. And Madeira is every bit as good as Marsala here.

PAUPIETTES OF TURKEY, SWEETBREADS AND MUSHROOMS



Paupiettes of Turkey, Sweetbreads And Mushrooms image

2 tablespoons unsalted butter
1/2 tablespoon vegetable oil
2 tablespoons finely minced shallots
2 prepared uncooked paupiettes of turkey stuffed with sweetbreads and mushrooms
2 tablespoons dry white wine
6 tablespoons veal stock
4 ounces fresh mushrooms, sliced thin
1 tablespoon Cognac or brandy
2 tablespoons heavy cream or creme fraiche (optional)
Salt and freshly ground black pepper to taste
1/2 tablespoon chopped chervil

Steps:

  • Heat 1 tablespoon of the butter and the vegetable oil in a heavy 2- to 3-quart saucepan or heat-proof casserole. Add half the shallots, and cook over medium heat until lightly browned. Add the paupiettes, and briefly brown them on both sides.
  • Add the wine and stock to the saucepan, cover and cook over medium-low heat for about 35 minutes, or until the juices run clear and an instant-read thermometer registers 150 degrees when inserted into the center. Remove the paupiettes from the pan.
  • While the paupiettes are cooking, heat the remaining butter in a skillet. Add the mushrooms and remaining shallots, and cook over high heat until the mushrooms are lightly browned. Stir in the Cognac, scrape the pan, and set aside.
  • When the paupiettes have been removed from the pan, stir in the contents of the skillet. Cook briefly, until the sauce is lightly thickened. If desired, the cream can be added at this point and the sauce cooked for a few minutes longer. Season with salt and pepper.
  • Return the paupiettes to the pan briefly to reheat them, basting with the sauce, then serve, sprinkled with the chervil.

3 lobes fresh sweetbreads, about 1 1/2 pounds
Salt to taste if desired
1 bay leaf
2 sprigs fresh parsley
1/4 teaspoon dried thyme
6 peppercorns
Freshly ground pepper to taste
1/2 cup flour
3 tablespoons corn, peanut or vegetable oil
3 tablespoons butter
3 tablespoons finely chopped shallots
3/4 pound whole mushrooms, rinsed, drained and quartered
1/3 cup Madeira wine
1 cup fresh or canned chicken broth
1 teaspoon tomato paste
1 tablespoon finely chopped parsley

Steps:

  • Place the sweetbreads in a saucepan and add cold water to cover. Add salt, bay leaf,parsley,thyme and peppercorns. Bring to a boil and cook 5 minutes. Drain thoroughly.
  • Slice each lobe on the bias into four pieces of equal thickness. Sprinkle the slices on both sides with salt and pepper.
  • Dredge the slices in flour and shake off excess.
  • Heat the oil and 1 tablespoon of the butter in a large, heavy skillet. Add the sweetbread slices and cook 5 minutes on one side or until golden brown and slightly crisp. Turn the slices and cook 5 minutes or until golden brown and crisp. Transfer to a heated platter.
  • Pour off any fat remaining in the skillet and add 1 tablespoon butter. Add the shallots and mushrooms and stir. Cook until the mushrooms are wilted.
  • Sprinkle the mushroom mixture with the Madeira and stir. Add the broth and tomato paste, and bring to a boil. Add the sweetbread slices in one layer. Cover closely and cook 5 minutes.
  • Transfer the sweetbread slices to a warm platter. Swirl the remaining tablespoon of butter into the sauce and pour it over the sweetbreads. Sprinkle with parsley and serve.
