I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

Cooking spray
1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

Sweet and Spicy Candied Pecans - With a Kick image

These nuts are addictive!!! Serve as a delicious snack, super-easy appetizer (great on a Ritz cracker with whipped cream cheese), topping for salads (see my Waldorf Salad recipe #117914) or in candied sweet potatoes. And, they make the perfect hostess gift especially during the Holiday Season! I make a double batch before Thanksgiving and freeze in ziplock bags for use at Christmas and New Years. The kick is up to you, as they are really very mild as written (we think they are perfect this way). Recipe was given to me by my sister, originally from Bon Appetit.

vegetable oil cooking spray
3 tablespoons light corn syrup
1 1/2 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon generous fresh ground black pepper
1/8 teaspoon cayenne pepper
1 1/2 cups pecan pieces (or halves)

Steps:

  • Preheat oven to 325°F Spray baking sheet with nonstick spray. Combine corn syrup and next 4 ingredients in large bowl. Stir to blend. Add pecans; stir gently to coat. Transfer to baking sheet.
  • Place large piece of foil on work surface. Bake pecans 5 minutes. Using fork, stir pecans to coat with melted spice mixture. Continue baking until pecans are golden and coating bubbles, about 10 minutes. Transfer to foil. Working quickly, separate nuts with fork. Cool. (Can be made 3 days ahead- store airtight at room temperature).
  • Makes 1 1/2 cups.
  • NOTE: Recipe is easily doubled, freezes well in ziplock bags.
  • Serve as a snack, topping for appetizers or salads (see my Waldorf Salad recipe #117914) or candied sweet potatoes, -or- give as a gift for the holidays.

1 large egg white
2/3 cup sugar
Kosher salt
1 teaspoon pumpkin pie or chai spice blend
1/4 teaspoon cayenne pepper
3 cups assorted mixed nuts
2 dashes Worcestershire sauce

Steps:

  • Preheat the oven to 275. Line a large baking sheet with parchment paper.
  • Whisk the egg white with 1 tablespoon water in a large bowl until frothy. In a small bowl, combine the sugar, 1 1/2 teaspoons salt, the spice blend and cayenne pepper. Toss the nuts in the egg white mixture, then stir in the sugar-spice mixture and Worcestershire sauce.
  • Spoon the nuts onto the prepared baking sheet in small clusters and bake until golden, 30 to 35 minutes. Cool completely, then break into pieces.

1 cup hazelnuts (5 ounces)
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1/8 teaspoon ground allspice
1 tablespoon lightly beaten egg white
1 cup whole blanched almonds (5 1/2 ounces)
Special Equipment
parchment paper

Steps:

  • Put oven rack in middle position and Preheat oven to 350°F.
  • Toast hazelnuts in 1 layer in a large shallow baking pan (1 inch deep) until pale golden and skins are blistered, 10 to 15 minutes. Wrap nuts in a kitchen towel and let steam 1 to 2 minutes, then rub off any loose skins in towel (don't worry if some skins don't come off). Cool nuts completely on plate.
  • Reduce oven temperature to 325°F and line shallow baking pan with parchment paper.
  • Whisk together sugar, cinnamon, nutmeg, and allspice in a large bowl.
  • Whisk egg white in small bowl until foamy, then add hazelnuts and almonds and toss to coat. Transfer nuts to sugar mixture and toss to coat.
  • Arrange nuts in 1 layer in pan and bake, shaking pan occasionally, until golden brown, 20 to 25 minutes. Cool nuts completely in pan on a rack.

Pinch of ground cloves
1 large egg white
2 cups walnut halves (1/2 pound)
2 cups pecan halves (1/2 pound)

Steps:

  • Preheat oven to 350°F with rack in middle. Lightly oil a 4-sided sheet pan.
  • Whisk together sugar, spices, and 3/4 teaspoon salt in a small bowl. Whisk egg white in a medium bowl until frothy, then stir in nuts. Add spice mixture and toss to coat.
  • Spread nut mixture in 1 layer in sheet pan. Bake, stirring once or twice, until dry and well toasted, about 20 minutes. Loosen nuts from pan, then cool completely.

I found a fabulous sweet spicy nut recipe here on Food.com that used sugar. Since I'm a low-carb gal I altered that recipe slightly, replacing the sugar with Swerve, which is a granular Erythritol. You could also use the Truvia granular. I guess you could use Splenda granular but they would have a funny after-taste. Also feel free to use whatever nuts you love. This is just what I love. These sweetly spiced nuts are soooo yummy!!! They look & taste just like the sugary version.

1 egg white
2 cups walnuts
1 cup macadamia nuts
1 cup pecans
3/4 cup erythritol, I used Swerve brand
1 teaspoon kosher salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 250 degrees.
  • Spray a sheet pan with non-stick spray.
  • Beat egg white in a large bowl until very frothy. Add all nuts and toss until the egg white is evenly distributed.
  • In a separate bowl, mix the remaining ingredients.
  • Pour the spice mix onto the nut mix and toss with a large spoon until the nuts are evenly coated. Pour nuts onto the sheet pan & shake to evenly distribute.
  • Bake at 250 degrees for 45 minutes, stirring every 15 minutes. Allow to cool on sheet pan & enjoy!

These glossy, burnished, not-too-sweet and not-too-spicy nuts are irresistible. With fresh or dried fruit, they make an elegant dessert. Or add to one of our Fruit & Cheese Plates. A great little something to snack on, too-we like to keep them around to nibble on when supper is a little late. They keep for up to a month.

Yield yields 3 cups

Number Of Ingredients 7

1/3 cup sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
Pinch of cayenne (optional)
3 cups shelled nuts (pecans, almonds, walnuts, peanuts, cashews)

Steps:

  • Preheat the oven to 350°. Generously oil a baking sheet.
  • In a saucepan on medium-high heat, stir together the sugar, 1/4 cup of water, salt, pepper, cardamom, cinnamon, and cayenne and bring to a boil. Reduce the heat to a simmer and stir constantly for a minute, until the sugar is dissolved. Remove from the heat and add the nuts and mix well to evenly coat them with the syrup. Remove the coated nuts with a slotted spoon and spread them out on the prepared baking sheet.
  • Bake until browned, 10 to 15 minutes, stirring once after 5 or 6 minutes. After you've taken them out of the oven, stir again to break apart any clusters. Allow the nuts to cool before serving.

these are super tasty and have a slightly hot aftertaste.. wich i love. since the first prepararation is similar to the glazed popcorn recipe #17061 i threw in some popcorn with the nuts and it was also deeelicious. there are 2 ways to prepare.

1 egg white
1 1/2 teaspoons vanilla
1 lb nuts (i used walnuts and pecans but any would work)
1/2 cup sugar
1 tablespoon cinnamon
1 teaspoon ginger
1/4-1/2 teaspoon salt
1/2 teaspoon coriander
1/4 teaspoon allspice
1 pinch red pepper

Steps:

  • first way to prepare: whisk egg white and vanilla together until frothy, add the remaining ingredients and stir well, add nuts(may want to use more nuts if a lot of juice is left -- depending how coated you want your nuts)
  • 2nd way to prepare: whisk the egg white and vanilla and stir in nuts and stir to coat and then drain nuts for 5 minute.
  • meanwhile put sugar, salt and all spices in a zip lock bag and mix, add nuts. 1/2 at a tiime. and shake vigourously until coated, repeat with remaining nuts.
  • after preparing nuts either way spread them in a single layer on a baking sheet either sprayed with cooking spray or use parchment.
  • bake at 250 for 50-60 min or until carmalized to your liking, stirring every 15-20 minute.
  • cool and store in a dry place.
