Smoked Chicken Salad image

Smoked chicken is given a husky taste that complements the inherent sweetness of the fowl and brings a hearty note to the pasta it's combined with. The sweeter-smelling the wood used, the more alluring the flavor it leaves behind. Hickory or fruitwoods, maple, oak and alder chips, dried grapevine trimmings or herb branches lend a sweet, firm flavor to food cooked in a closed container above it.

Number Of Ingredients 11

1/2 large shallot, peeled and minced
1/4 cup red wine vinegar
2 tablespoons walnut oil
1/2 teaspoon canola oil
1/4 teaspoon salt, plus more to taste
Freshly ground pepper to taste
8 cups torn chicory leaves
2 warm smoked chicken breasts (see recipe), cut on the diagonal into 1/4-inch-thick strips
2 Bosc pears, halved, cored and cut lengthwise into 1/8-inch-thick slices
1/2 cup toasted walnuts, coarsely chopped
1 medium carrot, peeled and cut into fine julienne

Steps:

  • Combine the shallot and vinegar in a small saucepan over medium heat. Simmer until reduced by a third, about 3 minutes. Whisk in the walnut oil, canola oil, 1/4 teaspoon of salt and pepper.
  • Place the chicory in a large bowl and toss with 3 tablespoons of the dressing. Season to taste with salt and pepper. Divide among 4 plates. Arrange the chicken and pears over the chicory. Scatter the walnuts on top and place the carrots in a mound in the center of each plate. Drizzle with the remaining dressing and serve immediately.

With grilling and smoking season coming on, it's nice to have a deliciously different way to use some leftover smoked chicken. The great smoky flavor comes through the simple dressing, and the sweet taste of red grapes complements it nicely. Serve over lettuce for a stand alone salad, or use in a sandwich, if you prefer.

2 cups chopped leftover smoked chicken
⅔ cup chopped celery
½ cup halved seedless red grapes
¼ cup chopped pecans
3 medium scallions, white and green parts, chopped
½ cup mayonnaise
1 teaspoon raspberry vinegar
½ teaspoon ground paprika
freshly ground black pepper to taste

Steps:

  • Combine chicken, celery, grapes, pecans, and scallions in a medium bowl.
  • Stir mayonnaise, vinegar, paprika, and pepper together in a small bowl until well blended. Pour over chicken mixture and stir until well combined.
  • Serve immediately or refrigerate until ready to serve, up to 2 days.

Tasty salad using freshly smoked chicken, great with a chilled white wine and good company. Adapted from a recipe book provided with my first barbeque. Need a hooded gas barbeque or charcoal kettle bbq. would probably set off the smoke alarms if done inside an oven

2 cups olive oil
2 cups dark soy sauce
4 garlic cloves
4 skinless chicken thighs
1 head lettuce, whole lettuce, shredded (soft leaf variety)
1 red capsicum, sliced thinly
1 yellow capsicum, sliced thinly
1 carrot, grated
2 mixed mushrooms, sliced thinly
1/4 cup black tea leaves
1/4 cup brown rice
2 tablespoons brown sugar
2 tablespoons honey, warmed
1/4 cup olive oil, extra
2 tablespoons red wine vinegar
1 teaspoon caster sugar
1 teaspoon coarse grain mustard
parmesan cheese (shaved)
salt & fresh ground pepper

Steps:

  • Combine 2 cups olive oil, dark soy and garlic in a bowl and pour over chicken thighs, cover and refrigerate for at least 1 hour.
  • Combine black tea, brown rice and brown sugar in a bowl to create the smoking mixture.
  • Line baking dish with aluminium foil and cover with smoking mixture.
  • Place smoke mix in hooded BBQ preheated to 175 degrees and leave until just smoking.
  • Place chicken on elevated rack above mixture and smoke for 25 minutes or until almost cooked turning once.
  • meanwhile combine remaining olive oil, red wine vinegar and wholegrain mustard to make viniagrette, add salt and pepper to taste.
  • Remove chicken from rack and complete cooking for approx 5 minutes each side on grate section of BBQ glazing with warmed honey.
  • Remove and thinly slice, place over combined salad ingredients.
  • Drizzle with red wine vinaigrette and serve immediately.
