BANG BANG SHRIMP
Steps:
- In a medium bowl, whisk together mayonnaise, sweet chili sauce, and Siracha hot sauce. Set aside.
- Place the cornstarch in a shallow bowl. Gently press the shrimp into the cornstarch and coat on both sides. Shake off any excess.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Cook the shrimp in batches. Each batch should cook for 3 to 5 minutes or until the shrimp are lightly browned on the outside. Once cooked, transfer to paper towels to drain.
- Place cooked shrimp in a bowl and pour chili sauce mixture on top. Toss gently to coat.
- Top with green onion if desired.

Steps:
- Heat olive oil and butter on medium heat in a cast iron pan. Add shrimp and cook for 1 to 2 minutes or until they start to turn pink.
- In a small bowl, add Sriracha, honey, vinegar, ketchup, onion powder and paprika. Mix well then add to the pan. Stir the shrimp and sauce well and cook for another minute or until shrimp are fully cooked. Remove shrimp with a slotted spoon and keep warm in a bowl.
- Continue to cook sauce for another 5 minutes or until it starts to thicken. Pour sauce over shrimp.
- Garnish with green onion or cilantro before serving.

- Wash clean the shrimp, drain and pat dry with paper towels and put in a bowl.
- Add salt and baking powder to shrimp and mix. Let sit, covered, for at least one hour and no more than three hours in the refrigerator.
- Meanwhile, mix together the mayonnaise, milk, pineapple and lemon juice in a bowl. Cover and place in the refrigerator and chill one hour, or until the sauce becomes firm.
- Wash the shrimp in cold, running water for three minutes, to cleanse it of the baking powder and salt. Drain and dry with paper towels. Put the shrimp in a bowl.
- Heat the oil to 400 degrees.
- Beat the egg yolk and add to the shrimp, mixing thoroughly to coat. Pour off any excess egg yolk. Now, add the cornstarch to the shrimp and mix.
- Fry the shrimp in the oil for about 3 minutes, or until they turn golden yellow.
- Remove the shrimp and drain on paper towels.
- Mix the shrimp with the mayonnaise sauce, sprinkle sesame seeds on top, if desired, and serve immediately.
SHRIMP IN MAYONNAISE

- Whisk together the egg yolk, salt, mustard, and vinegar in a roomy bowl. To add the oil, start whisking the yolk mixture and let the oil fall from the spout, drop by drop, until you have achieved a thick, velvety mayonnaise. Taste it. Add lemon juice, salt, and pepper until the balance is to your liking.
- Heat the olive oil in a saute pan. Fry the shrimp until just cooked through and still juicy. Arrange the shrimp on a platter with the mayonnaise in a dish alongside, for dipping.

- Combine soy sauce, 2 minced scallions, garlic, sesame seeds, cornstarch, ginger, mirin, sugar, red pepper flakes, and sesame oil in a bowl to make marinade.
- Place shrimp in a large resealable plastic bag; pour in marinade. Seal the bag and shake to coat shrimp. Place in refrigerator and marinate for 15 to 20 minutes.
- Heat a skillet over medium-high heat; add shrimp. Cook, turning and basting a few times with leftover marinade, 5 to 7 minutes. Transfer shrimp to a bowl, reserving oil in the skillet.
- Pour 3 tablespoons of the marinade and gochujang to the skillet over medium heat. Cook and stir until thickened, about 2 minutes. Brush glaze over cooked shrimp or use as a dip. Sprinkle the remaining minced scallion on top.

- In a small bowl, mix mayonnaise, chili sauce, green onion and Sriracha. Sprinkle shrimp with salt and pepper. SHRIMP WONTON WITH SWEET MAYONNAISE SAUCE
Steps:
- 1. Peel and de-vein shrimps, then dice. Combine it with the onion, shallot, oil, salt and pepper in a bowl. Cover and refrigerate for 30 minutes.
- 2. Fill and shape wonton. Meanwhile heat oil in pan until the surface shimmer slightly. Add wontons in batches and cook until light browned, about 2 minutes. Remove wonton and place on napkin lined plate to drain oil. Serve over with sweet mayonnaise sauce.
- 3. Make eight serving, 4 pieces each.
- While shrimp is marinating, prepare sauce
- 1. Combine all ingredients in a microwave safe bowl and mix thoroughly.
- 2. Microwave on high for 2 minutes. Every 30 second, stop microwaving and stir mixture with a spoon to prevent it from overheating or separating. Continue the process until sauce is smooth and sugar has fully melted.
- 3. Set aside to cool. When completely cooled, cover with plastic wrap and refrigerate. Serve chilled with wonton.
