These addictively delicious walnuts make for crunchy nibbling to enjoy out of hand or on a salad. This snack can be prepared well in advance and stored in an airtight container at room temperature. A slender rasp-style grater is the ideal tool for the orange zest. Recipe is from Williams-Sonoma's "Thanksgiving Entertaining".

3 tablespoons sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground cloves
1/4 teaspoon fine sea salt
1/4 teaspoon freshly ground pepper
1 large egg white
2 teaspoons grated orange zest
2 cups walnut halves

Steps:

  • Preheat an oven to 375°F Line a rimmed baking sheet with aluminum foil and lightly butter the foil.
  • In a small bowl, combine the sugar, cinnamon, cardamom, cloves, salt and pepper. In another bowl, whisk the egg white until frothy. Add the sugar mixture and whisk to blend, then whisk in the orange zest. Add the walnuts and stir until thoroughly coated. Spread the walnuts on the prepared baking sheet in an even layer.
  • Bake the walnuts, stirring every 10 minutes to loosen them, until golden, about 30 minutes. Transfer the walnuts to a bowl and let cool. Store in an airtight container for up to 3 weeks.

Number Of Ingredients 10

2 ½ Cups Raw, Unsalted Nuts (- any variety or varieties you love! (pecans, walnuts, peanuts, cashews, almonds))
2 TBS Unsalted Butter
2 tsp Pure Maple Syrup
2 heaping TBS Fresh Rosemary (- finely chopped (can substitute 2 1/4 tsp Crushed Dried Rosemary))
1 TBS Light Brown Sugar (- heaping and packed)
1 tsp Cumin
¼ tsp Cayenne Pepper
2 tsp Coarse Sea Salt
scant ¼ tsp Fresh Cracked Black Pepper
Optional for finishing: 1 TBS Turbinado Sugar (Sugar in the Raw) (and/or 2 tsp Flaked Sea Salt (Maldon))

Steps:

  • Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper for easy clean up.
  • Melt butter: Melt butter using the stovetop or the microwave (directions below)!(In the Microwave) Place butter in the microwave- safe bowl. Microwave on 50% power for 1 minute. Continue to microwave at 50% power for 10 second increments until just melted. Stir in the rosemary and set aside for 1 minute. Stir in the maple syrup. Set aside.(On the Stovetop) In a medium sized sauté pan, over medium low heat, melt the butter. Stir in the rosemary and cook until fragrant, about 1 minute. Remove from heat and stir in maple syrup. Set aside.
  • Season nuts: Place the nuts in a medium sized mixing bowl. Add the brown sugar, cumin, cayenne, salt and black pepper. Stir well and set aside.
  • Add butter to nuts: Pour the butter over the nuts. Stir and toss to completely coat. Transfer the seasoned nuts to the prepared baking sheet, arranging them in a single even layer.
  • Bake: Bake nuts for 10 minutes. Remove and stir, arranging nuts into a single layer. Return nuts to oven and continue to roast for an additional 5-8 minutes, or until they are aromatic and light golden in color (they will get darker upon sitting).
  • OPTIONAL (for more flavor!): While the nuts are still hot and fresh out of the oven (on the pan), sprinkle the Turbinado sugar and flaked sea salt evenly over the nuts.
  • Cool: Place the baking sheet on a wire rack and stir the nuts, spreading them back out into an even single layer once. Set aside and allow the nuts to cool on the pan for 15 minutes.
  • Serve: Transfer to a serving bowl or a container with a tight fitting lid for storage. Enjoy!

Cooking spray
1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

These are really simple and use much less butter than some. They are mildly sweet and mildly spicy---those who love super spicy will have to add cayenne, etc. They are a lovely complement to a glass of sherry or a cheese board to be served with wine. They are a great addition to salads and can be chopped and included in any number of sweet and savory pastries.

2 cups walnut halves
1/4 cup brown sugar (dark or lite(may use more if you prefer the nuts sweeter)
1/2 teaspoon cinnamon
1/2 teaspoon smoked paprika
1/2 teaspoon five-spice powder
3 -4 roasted garlic cloves
1 tablespoon butter

Steps:

  • Have ready a silpat on a sheet pan or a parchment lined pan on a surface which can withstand heat.
  • Mash the garlic with the brown sugar and spices to form a paste.
  • Melt the butter in a non stick skillet over medium heat.
  • Add the sugar/spice paste to the skillet and, using a wooden spoon or spatula, stir to combine the butter and paste (about a minute or two).
  • Once it is roughly combined, add the walnuts and stir to coat; this will take no more than a minute or two.
  • When the walnuts are coated, transfer them to the silpat or parchment.
  • Spread them out with your wooden spatula and allow to cool.
  • Store the cooled nuts in a tin or jar.
  • Use in salads (butter lettuce, beets, blue cheese and these nuts--super!), or as a nibble with cocktails/apertifs.

Steps:

  • In a large nonstick skillet, heat honey, oil, and 1 tablespoon water over medium heat. Add walnuts; toss to coat.
  • Sprinkle the sugar, salt, cumin, coriander, and cayenne over the nuts. Cook, tossing and stirring until the nuts are well coated and lightly browned, 2 to 3 minutes. Transfer to a baking sheet to cool completely.

Steps:

  • Preheat oven to 350°F with rack in middle. Lightly oil a 4-sided sheet pan.
  • Whisk together sugar, spices, and 3/4 teaspoon salt in a small bowl. Whisk egg white in a medium bowl until frothy, then stir in nuts. Add spice mixture and toss to coat.
  • Spread nut mixture in 1 layer in sheet pan. Bake, stirring once or twice, until dry and well toasted, about 20 minutes. Loosen nuts from pan, then cool completely.
