CINNAMON RAISIN ROLLS



Cinnamon Raisin Rolls image

Warm and soft pull-apart bread filled with raisins, brown sugar and of course, lots of cinnamon. Topped with sticky sweet glaze. These rolls are divine and perfect for breakfast, dessert, or any time of the day!

1 cup 2% milk
6 tbsp unsalted butter
1 large egg (room temperature)
3 3/4 - 4 cups all-purpose flour
3 tbsp sugar
1/2 tsp salt
1 tbsp instant yeast
3/4 cup raisins
butter (for greasing bowl)
1/2 cup salted butter (softened, NOT melted)
1/2 cup brown sugar
2 tbsp cinnamon powder
2 oz cream cheese (softened)
3/4 cup powdered sugar
1/4 cup 2% milk
1/4 tsp pure vanilla extract

Steps:

  • Warm milk to 90-100 degree F. Melt butter to 90-100 degree F. Crack and beat up a room temperature egg. Combine all ingredients into a bowl or a standing mixer.
  • Add dry ingredients to mixture: flour, sugar, salt, yeast and raisins. Use a dough hook to mix the dough if using a standing mixer. Or knead the dough with hand.
  • Dough should not be sticky. When touch with fingers, a large clump of dough should not stick to fingers. Add more flour to dough if dough is sticky. A lot of factors (humidity, temperature, size of egg etc) can make the dough more or less wet, so the amount of flour needed may differ.
  • Lightly butter large bowl (bowl must be twice or three times larger than dough) and bring dough to bowl. Cover with cloth, and let it rise for an hour, preferably in a warm spot.
  • Dough should rise to ~2-3 times its original size.
  • When dough has risen, use a rolling pin to flatten out dough into a 15"x12" rectangle.
  • In a bowl combine softened (not melted) salted butter, brown sugar and cinnamon. Mix well.
  • Spread cinnamon filling evenly onto the flattened dough.
  • Gently roll dough from the long side into a long tube.
  • Using a serrated knife, cut tube into 12 cinnamon rolls. Each roll will be a little over an inch thick.
  • Place rolls onto a 9"x13" casserole dish lined with parchment paper, or greased with butter.
  • Cover casserole dish with a towel and let rolls rise again for 30-45 minutes.
  • Preheat oven to 350 degrees F.
  • Remove towel. Cinnamon raisin rolls should be slightly bigger in size. Bake in oven for 22-25 minutes.
  • While rolls are baking, make the glaze by combining all the ingredients under "Icing/glaze" using a hand mixture or a whisk. Add more cream cheese to make thicken the glaze and add more milk to thin out the glaze based on your preference.
  • When rolls are done, let it cool for 10-15 minutes. Drizzle glaze onto the rolls.
  • Serve and enjoy!

These raisin bread rolls are hard to resist. They are super soft, fluffy, tender, and chewy and they are ready in less than two hours.

3½ Cups Bread Flour (plus about a handful for kneading)
4 Tbsp Butter (Melted)
1 Tsp Salt
1 Cup Milk (Warm)
2 Tsp Sugar (for proofing the Yeast)
1 Tbsp Yeast
⅓ Cup Sugar
½ Cup Raisins
½ Tbsp Cinnamon
2 Eggs
1 Egg (Egg wash )

Steps:

  • Proof the yeast by dissolving the yeast, and the two teaspoons of sugar in the warm milk stir well and set aside for about 5 minutes.
  • In another large bowl, combine the flour, salt, Cinnamon, and sugar. Make a well at the center and add the proofed yeast, eggs, melted butter, and raisins. Mix until a soft and sticky dough is formed.
  • Cover the dough and leave to rest for 15 minutes
  • Transfer the dough to a lightly floured surface and knead for about 5 minutes until a soft, smooth, and elastic dough is formed.
  • Divide the dough into twelve pieces. Use your fingers to flatten it out and roll it up tightly (as you would roll up a mat and place the rolls on a parchment-lined baking tray.
  • Cover the rolls with a clean kitchen towel and leave them to rise in a warm place for 1 hr to 1 hr 15 minutes till doubled in size.
  • To make the egg wash, crack one egg, and whisk with a tablespoon of water.
  • Brush the bread rolls with the egg wash and place in a preheated oven, and bake at 350F for 15 to 20 minutes or till golden brown.

These sweet yeasted breakfast buns may be prepared and refrigerated in muffin tins overnight so they are oven-ready after one last rise the next day.

3/4 cup/180 milliliters whole milk
2 teaspoons dry active yeast
2 tablespoons sugar
1 teaspoon kosher salt
1 egg plus 1 egg yolk, beaten
1/2 cup/113 grams unsalted butter (1 stick), melted and cooled, plus butter for greasing muffin tins
2 3/4 cups/425 grams all-purpose flour
2 cups/360 grams light brown sugar
1 teaspoon cinnamon
1 cup/120 grams chopped pecans
1 cup/150 grams golden raisins, soaked 30 minutes in warm water and drained
Egg wash (see note)
1 cup/100 grams granulated sugar
1/2 teaspoon cinnamon

Steps:

  • Prepare the dough: Put milk in a mixing bowl and stir in yeast and sugar. Leave until mixture begins to bubble, about 10 minutes.
  • Whisk in salt, beaten egg and melted butter, then stir in flour until a rough dough forms. Knead dough until smooth, soft and satiny, about 5 minutes. Cover with plastic wrap and let rise until doubled, about 1 hour.
  • Butter a standard 12-muffin tin. Punch down dough and turn out onto a lightly floured surface. Roll out to a rectangle approximately 12 by 8 inches.
  • Prepare the filling: Mix together brown sugar, cinnamon, pecans and raisins. Sprinkle mixture evenly over rolled-out dough.
  • As if rolling up a carpet, roll dough tightly into a 12-inch-long cylinder. Cut into 12 equal pieces, about 3 ounces each. Set dough pieces flat side down into buttered muffin tin and paint each lightly with egg wash. (At this point, unbaked rolls may be wrapped in plastic and refrigerated overnight, to be baked the next day if you'd like.)
  • Heat oven to 350 degrees. Loosely cover muffin tin with plastic wrap and put in a warm place to rise. Let rolls rise until doubled, about 45 minutes. Paint rolls lightly with egg wash, place tin on a baking sheet and bake for 25 minutes, until tops of rolls are well browned. Remove from oven and let sit for 5 minutes.
  • Carefully invert hot muffin tin over a baking sheet. Use a fork if necessary to help remove rolls from tin. (Be careful: The hot caramelized sugar on rolls will cause a bad burn if dripped on skin.) If desired, make topping by combining sugar and cinnamon, and sprinkle rolls with the topping while still warm. Let rolls cool bottom side up on baking sheet.

  • Begin by combining lukewarm milk, 2 tablespoons flour (from the 260 g (2 cups + 2 tablespoons/ 9 oz)), 1 tablespoon sugar (from 2 tablespoons sugar) and yeast in a jar. Whisk well and let the mixture stand for 5 minutes. In the meantime combine the remaining flour, the remaining sugar, egg and salt in a large bowl. Pour over the yeast – sugar mixture. Start mixing, while adding the melted butter.
  • Knead the dough very well, until you see bubbles in the dough or until it’s no more sticking on the walls of the bowl. I normally knead my dough like this: If I’m kneading it with the hand mixer, I knead the dough for about 8 minutes at low speed and then for 5 minutes on medium high speed. With the kitchen machine I knead the dough for 7 minutes at low speed (speed 1, on Bosch kitchen machine) and for 3 more minutes at medium high speed (speed 3). With the hands, I knead the dough for about 10 to 12 minutes. If the dough is too sticky when kneading with your hands, just oil them with few drops of vegetable oil. If you’re using a heavy duty kitchen machine, please knead your dough for maximum 7 minutes in total. Otherwise you will be overworking the dough.
  • Using one hand, remove the dough from bowl and grease with 1 teaspoon sunflower oil. Put the dough back, turn in well so that it is completely covered with oil. Cover with cling film and then with kitchen towel. Let rise in a warm place for about 1 hour or until dough has doubled in size. After 1 hour remove the dough from the bowl and put it on a working surface. There is no need to dust it.
  • Gently flatten the dough with your hands. Since the dough is nicely kneaded, it doesn't stick. Therefore extra flour for dusting is not needed here. Put the raisins in the middle of the flattened dough and carefully press them into the dough and then fold. Then shape it into a long baguette form. You want to retain the air bubbles in the dough intact so that you’ll have nicely fluffy buns. Cut the baguette roll into approximately 8 equal rolls. Cut the roll in the middle first, it makes it easier to cut the rest of the rolls. Form the rolls into buns and put them on a baking sheet lined with a parchment paper. Cover and let raise for another 30 minutes.
