Sweet Potato Rice Crispies image

Make this recipe for rice crispies with a twist: Sweet potato and brown rice puffs add nutrition and flavor to the childhood favorite.

3 Tbsp (42 g) butter
1/4 cup (60 g) pureed sweet potato (about 1 small sweet potato)
1 tbsp (15 ml) vanilla extract
1 tsp salt
11/2 tsp (4 g) ground cinnamon
1/4 tsp ground nutmeg
1/3 cup (50 g) toasted pecans, chopped
1 (10-oz) bag marshmallows
6 cups (210 g) brown rice cereal

Steps:

  • Have an 8 x 8-inch or a 9 x 9-inch baking dish lined with parchment and sprayed with cooking spray nearby.
  • In a large pot, melt the butter over medium heat, then add the pureed sweet potato, vanilla, salt, cinnamon, nutmeg and toasted pecans. Add the marshmallows and continue to cook, stirring with a wooden spoon, until the marshmallows are melted. Add the cereal, folding gently to combine, and then, working quickly before the mixture stiffens, transfer it to the prepared baking dish, packing the mixture into the pan with a sheet of parchment or wax paper to make an even and dense layer. Allow to cool completely to harden, about 30 minutes, then slice into nine 3-inch squares and serve.

5 pounds sweet potatoes
3 cups brown rice crispy cereal or Rice Krispies
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper, plus more for seasoning
1/2 cup granulated sugar, plus 2 tablespoons
6 1/2 teaspoons unsalted butter
1/4 cup water
1/4 cup heavy cream
1/2 teaspoon finely grated orange zest
Freshly ground black pepper and kosher salt to taste

Steps:

  • Heat your oven to 350 degrees and line a large rimmed baking sheet with foil. Prick the potatoes with a fork all over and transfer to the prepared baking sheet. Bake potatoes for 30 minutes, then turn over and bake for 30 more minutes, or until tender. Let cool slightly.
  • Meanwhile, line a large rimmed baking sheet with foil. Lightly coat the baking sheet and 2 large spoons with nonstick cooking spray. Lightly coat a large heatproof bowl with nonstick cooking spray and put brown rice cereal in the bowl. In a small bowl combine baking soda, salt, and 1/8 teaspoon cayenne pepper. In a medium saucepan, combine the sugar, 1/2 tablespoon butter and 1/4 cup water and bring to a boil, stirring until sugar dissolves. Boil over moderately high heat, swirling the pan as needed until a golden caramel forms, about 7 minutes. Remove from the heat and stir in the baking soda mixture. The caramel will foam. Immediately drizzle all of the hot caramel over the cereal and using the 2 greased spoons, quickly toss to coat. Spread the topping on the prepared baking sheet in an even layer and let cool completely, then break into small pieces.
  • Scoop cooled sweet potato flesh into a food processor. Add the remaining 6 tablespoons butter, water, cream, orange zest and a generous pinch of cayenne and puree until smooth. Season with salt and pepper and transfer the sweet potatoes to a serving bowl. Serve, passing the crispy rice topping at the table.

3 cups cooked mashed sweet potatoes
1 cup sugar
1/2 cup melted butter
2 eggs, well beaten
1 teaspoon vanilla
1/3 cup milk
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
2 cups Rice Krispies
1 cup chopped pecans
1 cup brown sugar
1/2 cup butter, melted

Steps:

  • Combine all sweet potatoes ingredients and spoon into 9x13 baking pan or casserole.
  • Mix all ingredients for topping and spoon over casserole.
  • Bake casserole at 400° for 30 minutes .

  • Preheat an oven to 400°F. Place sweet potatoes and yams on a foil-lined baking sheet. Melt 2 tablespoons of butter in the microwave, and drizzle over the potatoes and yams. Sprinkle with kosher salt and freshly ground black pepper, rolling the spuds around until evenly coated. Roast until tender (about 1 hour). Let cool a bit.
  • While the potatoes and yams are cooking, make the topping. Lightly spray 1 large baking sheet, 2 large spoons and 1 large mixing bowl with non-stick spray. Add the Rice Krispies to the large bowl, and set aside. Add baking soda, kosher salt and cayenne to a small bowl, and set aside.
  • In a medium saucepan set over medium-high heat, combine sugar, 1/2 tablespoon butter and 1/4 cup water. Clamp on a lid, bring to a boil, and cook for 7 minutes (the lid keeps sugar crystals from forming). Remove the lid, and continue to cook for 2 - 3 minutes until a golden caramel forms. Don't stir the mixture while it's cooking. Instead, occasionally gently swirl the pan to ensure even cooking. Take the mixture from the heat, and stir in the baking soda-salt-cayenne mixture. Immediately drizzle the caramel over the Rice Krispies, using the 2 prepared spoons to toss*. Transfer the topping to the prepared baking sheet, spreading it out in an even layer. Sprinkle with chopped rosemary, and let cool completely before breaking into smaller pieces.
  • Take the skins off the sweet potatoes and yams, and discard. Transfer the flesh to a stand mixer fitted with the paddle attachment (you can also hand mash or use a hand mixer here). Warm cream and 6 tablespoons butter in the microwave in a small bowl until the butter is melted. Add butter and cream to the sweet potatoes along with orange zest and a big pinch of cayenne pepper. Beat the potatoes and yams on low speed until well-combined. Season to taste with kosher salt and freshly ground black pepper.
