SWEET POTATO PIE WITH JACK DANIELS - MAKES 2 PIES

Sweet Potato Pie With Jack Daniels - Makes 2 Pies image

Sweet Potato Pie is so much better than pumpkin pie, IMHO, LOL! In fact, if it has the same color as Pumpkin Pie it means that someone has used pumpkin pie seasonings. True Sweet Potato Pie is a bright orange, as opposed to the brownish orange hues of Pumpkin. This pie has 3 shots of Jack Daniels. I've been told that the alcohol evaporates, but I can't swear to it. So if you have problems with alcohol, or it clashes with your meds, take this into consideration. It is to die for

Time 1h20m

Yield 2 pies, 12 serving(s)

Number Of Ingredients 9

4 -5 large sweet potatoes
2/3 cup butter, softened to room temp (you can use margine, but why mess with Mother Nature?)
4 large eggs, lightly beaten
2 (15 ounce) cans sweetened condensed milk (I use Eagle Brand, but do NOT substitute evaporated milk!!!)
3 ounces Jack Daniels Whiskey (that's 2 shots)
2 teaspoons vanilla
1 1/2 teaspoons salt
2 deep dish pie shells
whipped cream (optional)

Steps:

  • Pop the sweet taters in the microwave until they are soft inside and easily pierced with a knife.
  • Put them aside and allow them to cool.
  • Preheat the oven to 350 degrees F.
  • Put the eggs in a large bowl and beat them lightly.
  • Add the Eagle Brand, the butter, the vanilla, and the salt.
  • Combine well.
  • By this time the potatoes should be cool enough to touch. The peel should easily come off the potatoes. (I have found this easier that peeling, cubing, and boiling.).
  • Add the potatoes to the Eagle Brand liquids.
  • Mash well until everything is well mixed and smooth.
  • Pour into the 2 deep dish pie crusts.
  • Bake 55 minutes or until a knife inserted into the middle comes up clean.
  • Serve with whipped cream if desired.
  • Enjoy, Enjoy, Enjoy!

SWEET POTATO PIE FOR TWO

Sweet Potato Pie for Two image

If having too much leftover pie around is a problem in your household, we've got a solution! We've scaled down sweet potato pie so you can make just enough for two. Substitute an equal amount of pumpkin puree for the sweet potato if you like.

Time 1h45m

Yield 2 servings

Number Of Ingredients 14

2/3 cup all-purpose flour
3 tablespoons unsalted butter, cut into small pieces, at room temperature
1 tablespoon granulated sugar
1 tablespoon confectioners' sugar
Pinch kosher salt
2 large eggs
1/4 cup heavy cream
2 tablespoons packed dark brown sugar
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
3/4 cup sweet potato puree
2 tablespoons unsalted butter, melted
1/2 cup mini marshmallows or 2 big dollops lightly sweetened whipped cream, for serving

Steps:

  • For the crust: Put a small baking sheet on a rack in the center of the oven, and preheat to 375 degrees F. Process the flour, butter, granulated and confectioners' sugars and salt in a food processor until the mixture resembles wet crumbs and holds together when squeezed in your palm, about 2 minutes (this takes longer than seems necessary, but be patient). Divide the mixture evenly between 2 disposable 5-inch pie tins, and press the dough very firmly into the bottoms and up the sides, making sure to press it into the corners very well. Smooth and flatten the tops with your fingers or the back of a small spoon.
  • Bake the crusts on the hot baking sheet until the bottom and sides are golden brown (probably more in some spots than in others), about 12 minutes. Let cool completely on a cooling rack.
  • For the filling: Whisk together the eggs, cream, brown sugar, vanilla, cinnamon and allspice in a medium bowl. Whisk in the sweet potato and then the melted butter.
  • Mound the filling in the pie shells, and bake until puffed and the centers still look slightly wet but not loose, 25 to 30 minutes. Transfer to a cooling rack to cool completely before serving.
  • If using marshmallows: Right before serving, preheat the broiler. Pile 1/4 cup mini marshmallows in the center of each pie, and broil until the marshmallows are bubbling and well browned, 30 to 40 seconds. Serve immediately.
  • If not using marshmallows: Dollop each pie with some whipped cream, and serve.

SPICED SWEET POTATO PIE WITH NUTS

Spiced Sweet Potato Pie With Nuts image

I am always on the lookout for a good sweet potato pie recipe and usually make at least 2 different kids every Thanksgiving and Christmas. This is a good one from Debbi Field's cookbook, Great American Desserts.

1 cup evaporated milk
1 1/4 cups firmly packed light brown sugar

1 teaspoon pumpkin pie spice
1/2 teaspoon salt

  • With a pastry cutter, cut in the butter until the mixture is coarsely texture with small irregular flakes and bits the size of small peas.
  • Stir in the almonds until combined.

  • Chill the shell in the freezer while making the filling.
  • Preheat the oven to 400°F.

  • Lower the oven temperature to 325°F and bake for 30 to 35 minutes longer (until the tip of a sharp knife inserted in the center comes out clean).

MAMMAM'S PUMPKIN PIE (MAKES 2 PIES)

Mammam's Pumpkin Pie (Makes 2 Pies) image

This is my Great Grandmother's pumpkin pie recipe. I've been eating it since I was a kid and I've always loved it more than any other pumpkin pie. Apparently the secret ingredient was whiskey. Now it's here for anyone to enjoy. I hope you like it and am interested in hearing about any substitutions that could make it better.

Categories     Pie

Time 1h24m

Yield 2 Pies, 8-12 serving(s)

Number Of Ingredients 12

1 (29 ounce) can pumpkin
2 cups milk
1 teaspoon salt
2 1/4 cups sugar
3 tablespoons butter
6 eggs
1 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 tablespoon vanilla
1 fluid ounce whiskey (technically optional, but it's what makes it so good)
2 pie crusts

Steps:

  • Preheat oven to 450°F.
  • In a medium pot, add Pumpkin, Butter, Salt, Sugar, Ginger, Nutmeg, and Cinnamon.
  • Simmer over medium heat for about 5 minutes. Do not let pumpkin boil, it will lead to a watery pie. Lower heat if pumpkin looks like it may boil.
  • Remove from heat.
  • In a bowl, beat 5 eggs and one yolk (save extra egg white for crust).
  • Add milk to eggs and stir.
  • Keep stirring and add pumpkin to egg mixture a little at a time.
  • Stir in the Vanilla and Whiskey.
  • Brush egg white over the inside and edge of the pie crust and let egg white dry. This will prevent the crust from getting too soggy and will create a nice shine to the edge of the pie crust.
  • Pour pumpkin evenly into 2 pie crusts.
  • Bake at 450 for 20 minutes then reduce the heat to 325 for 45 minutes.
  • Keep an eye on the pie toward the last 10 minutes. If you see cracks forming take the pies out of the oven, this is a sign of over cooking.
