3 c. all-purpose flour
1/2 c. sugar
5 tsp. baking powder
3/4 tsp. cream of tartar
1/2 tsp. salt
3/4 c. shortening or butter-flavor shortening
1 1/4 c. milk
2 tsp. vanilla extract

Steps:

  • Preheat oven to 425 degrees F. Grease 2 cookie sheets.
  • In large bowl, combine flour, sugar, baking powder, cream of tartar, and salt. With pastry blender or two knives used scissor-fashion, cut in shortening until mixture resembles coarse crumbs. Stir in milk and vanilla extract; quickly mix until just combined.
  • Drop dough by 1/4 cups, 2 inches apart, onto cookie sheets to make 16 biscuits.
  • Place cookie sheets on 2 oven racks; bake biscuits 12 to 15 minutes until golden, rotating cookie sheets between upper and lower racks half-way through baking time. Serve warm. Or, if not serving right away, cool biscuits on wire rack. Store in tightly covered container to reheat before serving. Makes 16.

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Mix flour, baking powder, salt, and sugar in a bowl. Cut in the cold butter with a knife or pastry blender until the mixture resembles coarse crumbs. Add milk a little at a time, stirring lightly between additions.
  • Drop the batter by spoonfuls onto a cookie sheet, and bake for 12 to 15 minutes, until the tops are golden.

Don't ask me who Mary is, 'cause I don't know! I found this recipe in some hand-written files. These are easy to make (like most biscuits) and taste great with butter and jam, berries and cream, or a slightly sweet dinner dish.

3 cups all-purpose flour
1/2 cup sugar
5 teaspoons baking powder
3/4 teaspoon cream of tartar
1/2 teaspoon salt
3/4 cup shortening (must be cold!)
1 1/4 cups milk
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 425 degrees F.
  • In a large bowl, combine flour, sugar, baking powder, cream of tartar, and salt. Cut in shortening with a pastry blender (or 2 knives) until mixture resembles coarse crumbs. Stir in milk and vanilla extract and mix until just combined.
  • Drop biscuits onto a cookie sheets (use a 1/4 cup measure and space 2 inches apart).
  • Place cookie sheets on 2 oven racks near the center of the oven. Bake biscuits for 12-15 minutes, until they are golden brown, rotating cookie sheets between the upper and lower racks halfway through baking time.
  • Serve warm.

¼ cup lard (optional)
¼ cup butter
1½ cup butter milk

Steps:

  • Pre-heat oven to 350. Mix ingredients in a bowl until all mixed together; do not over mix. Should be a wet & lumpy consistency. Adjust amount of milk if you need it a moister consistency. With a spoon, place dollops of batter onto a sheet pan lined with either parchment paper or shortening. Bake for approx. 20 min or until a light golden brown. Serve hot with butter or honey butter.

Once the wet ingredients are pulsed into the dry, we simply scoop drops of dough onto a baking sheet and bake. The result is a coarsely textured, golden biscuit with a tender, buttery crumb.

1 teaspoon kosher salt
1 stick cold unsalted butter, diced
3/4 cup whole milk, plus more for brushing
Flavored butters, for serving (recipes follow)
1 stick softened butter
1/4 cup chopped dill
2 tablespoons capers
Zest and juice of 1 lemon
1 stick softened butter
3 tablespoons mango chutney
2 tablespoons roasted curry powder
1 stick softened butter
2 tablespoons pure maple syrup
1 tablespoon adobo sauce, from a can of chipotles

Steps:

  • Preheat the oven to 400˚ F. Line a baking sheet with parchment paper. Combine the flour, baking powder, sugar and salt in a food processor. Pulse to combine. Pulse in the butter just a few times, until it is in pea-size pieces. Add the milk and pulse just until the dough comes together.
  • Scoop 1/4 cupfuls of dough with a cup measure or ice cream scoop onto the baking sheet (about 10 scoops). Brush the tops lightly with milk. Bake until golden, 15 to 20 minutes.
  • Mash butter with dill, capers, lemon zest and juice.
  • Puree butter with mango chutney and curry powder.
  • Puree butter with maple syrup and adobo sauce.

These biscuits, from my own original recipe, are light, rich, moist and slightly spicy. The sweet potato flavor is pronounced but not overpowering. They're great for breakfast, but since they aren't sweet, they work well as a side dish for lunch or dinner, too.

1 1/2 cups unbleached white flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon fresh nutmeg
1/4-1/2 teaspoon cayenne pepper (optional)
6 tablespoons unsalted butter, cut in 1/4-inch cubes and chilled in freezer
1 cup sweet potato, cooked and mashed*
1/2 cup plain yogurt (or buttermilk)
1 tablespoon light brown sugar (or agave nectar)

Steps:

  • Preheat oven to 425Ëš.
  • Sift dry ingredients together into food processor. Pulse to blend. Add cold butter and pulse several times, until mixture resembles coarse crumbs. Turn mixture out into mixing bowl.
  • Combine sweet potato, yogurt and sugar or agave nectar in processor and run for several seconds to blend thoroughly.
  • Add sweet potato mixture to flour mixture and stir together briefly, just until all flour is incorporated and dough forms a ball. (Mixture may be sticky.) Do not overwork the dough.
  • Line 2 baking sheets with parchment paper. Using a cookie scoop-either ½ or ¼ cup capacity-scoop uniform mounds onto sheets. You can get 5 large or 10 small biscuits onto each cookie sheet.
  • Bake until biscuits are set and just start to brown: about 20 minutes for large and 15 minutes for the small size.
  • These are best served hot (with butter if desired). They can be reheated on a baking sheet for 5 minutes at 400Ëš: good as new.
  • * Use 2 small-to-medium sweet potatoes baked whole for 1 hour at 375Ëš and scooped out. I also made this w/ 1 giant sweet potato (1 1/4 cup): excellent! Very sticky batter, but biscuits were light, moist and nicely peppery.
  • Makes about 12 medium or 24 small (bite size) biscuits.

SWEET BISCUITS FOR BREAKFAST OR SHORTCAKE

I wanted a sweet biscuit, but found that the more sugar I used, the heavier they would be. I started experimenting with a basic rolled biscuit recipe from The Joy of Cooking, and came up with this. The way you handle the dough is important, and be sure to use a sharp cutter to cut the rounds, so all of the edges puff up. A preheated oven and an insulated cookie sheet are necessary. If you don't have an insulated sheet, put two regular sheets together. Recipe is easily doubled. I've served this as shortcake with strawberries and whipped cream, and we also like it at breakfast with apple jelly.

2 cups all-purpose flour (I measure by fluffing up the flour, then dipping the metal cup into the canister and shaking the flo)
1/4 cup all-purpose flour, for patting out the dough
1 teaspoon regular table salt

1/4 lb ice cold unsalted butter, if you have european style butter,use that

Steps:

  • Preheat oven to 400, I place a rack in lowest position in the oven.
  • Combine dry ingredients.
  • Cut in butter.
  • Stir in liquid until it just begins to pull from the sides- it will be pretty moist.
  • Spread 1/4 C flour on a pastry board and dump the dough onto the flour.
  • Gently turn the dough until all sides are covered with flour.
  • Knead by gently rubbing the dough into the flour, a scant 8 to 10 turns.
  • Pat the dough into a 1 inch thich slab.
  • Cut into rounds with a sharp round biscuit cutter- I use a 2 1/2 inch cutter-- you can push the scraps together to make room to cut a few more, try not to knead it too much.
  • Place on insulated cookie sheet about 1/2 inch apart.
  • Put in HOT oven and bake for 12- 15 minutes.
  • You can test by lifting the top layer of the center biscuit; if it's done it will look dry inside and the edges will be golden.
  • (I get 9 biscuits when I use a 2 1/2" cutter).

Drop biscuits are heavenly, and considering how little work they are to put together, they're also a real kitchen miracle. A few pantry staples and a hot oven are all you need for crunchy golden biscuits with soft interiors. They are excellent on their own, but a bit of butter and jam doesn't hurt either. Once you've nailed the basic version, try stirring in some cracked black pepper and Parmigiano-Reggiano, finely chopped tender herbs or chocolate chips.
