Cottage Cheese Pancakes are to-die-for! They have wonderfully crispy edges and a melty center that will have you HOOKED.

Steps:
- Combine all ingredients in the following order - cheese, eggs, vanilla extract, sugar, baking powder and flour. Mix in each time you add an ingredient.
- Preheat a skillet with canola oil on a medium heat. Fry the cottage cheese pancakes on each side until golden brown.
- Serve with maple syrup or jam, while they are still hot and the cheese inside is melted.

- Combine cottage cheese, flour, oil, and eggs in a large bowl.
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

- Beat cottage cheese, egg yolks, flour, sugar, cream salt and lemon zest until smooth.
- Beat egg whites until stiff but not dry and fold into the cheese mixture.
- In a frying pan over medium high heat, heat oil until hot.
- Drop 2 to 3 tablespoons batter into the pan to form each latke. Fry until golden, about four minutes per side.
- Use more oil as needed. Drain latkes on paper towels and keep warm in a 250 degree F oven until ready to serve.

These are an old favorite of mine. I use small-curd, low-fat cottage cheese. They come out thin and delicate, somewhere between a classic pancake and a crepe. A nice addition to a reduced-carb diet.

- Strain cottage cheese in a sieve fitted over a bowl, pressing down occasionally, until cottage cheese has dried out, about 1 hour.
- Beat eggs in a medium bowl; add cottage cheese, flour, melted butter, and salt. Mix until just blended.
- Heat butter in a frying pan over medium-high heat; drop large spoonfuls of batter into the melted butter. Sprinkle blueberries into batter. Cook until lightly browned, 2 to 3 minutes per side.

Growing up, our next door neighbor used to make these. I was lucky enough for her to pass this wonderful recipe on to me. She just recently passed away, and I'm posting this in her honor.

- In a blender, combine all ingredients, except applesauce and cinnamon.
- Blend until smooth.
- Pour mixture onto a nonstick skillet, making 8 pancakes.
- Turn pancakes when edges appear dry.
- Brown lightly on both sides.
- To serve, place pancakes on serving plates.
- Divide applesauce among pancakes on top.
- Sprinkle with cinnamon.
LATVIAN COTTAGE CHEESE PANCAKES (BIEZPIENA PLACENISI)
This is my adaptation of a common Latvian dish. It was a common breakfast or lunch dish in Latvia. It was topped with a little butter and honey. My kids like to put maple syrup on instead. I almost always double the recipe because it is easy to reheat for a quick snack.

- Mix together cottage cheese, raisins, eggs, sugar, vanilla extract, cinnamon, and salt in a large bowl until well combined. Add flour slowly, mixing until incorporated and batter is very thick.
- Heat oil in a large skillet over medium heat. Drop batter by tablespoonfuls onto the hot skillet and cook for 1 minute. Flip and flatten slightly with a spatula, cook until browned on the other side, about 2 minutes more. Flip back to the first side and cook until browned, about 1 more minute. Repeat with remaining batter.

- Put everything in a food processor and blend so they are well combined but still with a little bit of texture.
- Warm a medium-large skillet or griddle over a medium heat and brush lightly with oil. Drop tablespoonfuls of the mixture on to the pan spreading out slightly in to circles with the back of the spoon. Only cook around 4-6 at a time to save overcrowding the pan.
- Cook for around 2-3 minutes on the first side until you can see it starting to brown slightly around the edge. Flip over then cook another minute or two on the other side. Both sides should be a nice golden brown.
- Repeat with the rest of the mixture then serve with cinnamon sugar, maple syrup or jam and sour cream, as you prefer.
