CLASSIC MEATLOAF WITH SWEET AND TANGY GLAZE

- Preheat oven to 350°F.
- If using a loaf pan, spray it with nonstick cooking spray. If using a sheet pan, line it with foil.
- Combine breadcrumbs and milk in a large bowl and set aside to soak.
- Combine onions, carrots, and garlic in the bowl of a food processor and pulse until finely chopped (the largest pieces should be about the size of a pea). (Note: If you prefer, you can also finely chop these by hand.)
- Melt butter in a large saute pan over medium heat.
- Add onions, carrots, and garlic with a pinch of salt.
- Saute until vegetables are soft, about 5 minutes.
- Set aside to cool for 5 minutes.
- To breadcrumbs and milk, add beef, egg, parsley, Worcestershire sauce, salt, and black pepper.
- Top with cooked carrots and onions.
- Using your hands, gently mix everything together until just combined. (Try not to over mix or this will make your meatloaf more tough.)
- Gently shape the meat mixture into a loaf shape and transfer to loaf pan or sheet pan.
- Transfer meatloaf to oven and bake for 55 to 60 minutes (use an instant read thermometer if you have it - the center will register 155°F when the meatloaf is done).
- While meatloaf cooks, whisk together ketchup, brown sugar, and mustard.
- Remove meatloaf when it has about 20 minutes left to cook and spread glaze over top.
- Rest meatloaf for 10 minutes then slice and serve.

- Line a 9"x5" loaf pan with parchment paper and preheat oven to 375°F.
- In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
- Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
- In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.
SWEET CHICKEN/PORK MEATLOAF
I have made this several times, and it does not fail it gets eatin as quickly as it comes out.

- (Preheat oven to 350) Take your 2 lbs. meat, 1 egg, 2/3 cup milk, and Lipton soup package; and combine them all together into a bowl (usually a medium size bowl will work).
- Take the mixture above and pack it into a "meatloaf"/"bread" pan. Make sure it is a tight pack.
- Then take the 3 tbsp. brown sugar (lightly packed) and 3 tbsp. ketcup, and mix them together. Pour and spread over the top of your uncooked meatloaf; then place all in the oven and cook for 1 hour.
- Take out in 1 hour, let cool for 10 minutes. Enjoy!

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 7x11-inch glass or thick metal pan with nonstick spray.
- Combine ground chicken, onion, carrot, Parmesan cheese, bread crumbs, bread cubes, egg, garlic, milk, crushed bouillon, pepper, and sage in a large bowl. Use your hands to mix ingredients thoroughly. Form mixture into a loaf and place in the center of the prepared pan.

SWEET MEATLOAF
If you are looking for a meatloaf that is slightly different with a sweet twist. This is perfect. My family doestn't like the traditional meatloaf. It's funny because my husband will bring this recipe up to people he doesn't even know sometimes and there for awhile my one teenage son was asking for it at least twice a week. That always makes me feel good. Anyway... Give it a try and I hope you like it as much as my family does.

- Cut up the onion, carrot, celery and bellpepper and put it in a frying pan with water on medium to cook until it is soft and the onion starts to look a little translucient. If you need to add a little more water that is okay but when you add them to the ground beef mixture DO NOT add any liquid that is left. I turn them off to cool a bit while I start adding the other ingredients in a bowl.
- In a large bowl mix the ground beef, crackers(or saltines). Make sure you crush the crackers real good. Add the eggs, 3/4 ketchup, 1/4 brown sugar and the veggies that you cooked. Mix together until blended.
- Press together into a square pan. I use a larger pan instead of a meatloaf pan because I sometimes will add a little bit more meat and I like the room for the sauce.
- Bake for 1 hour at 350 degrees in a preheated oven. While the meatloaf is cooking mix together the ingredients for the sauce, 1 cup ketcup, salt, mustard and 1/2 cup of brown sugar.
- After 1 hour drain any excess grease from your pan and add the sauce on top and cook for an additional 15 minutes.
- Enjoy !
