STRAWBERRY-BANANA CEREAL TREATS

Strawberry-Banana Cereal Treats image

These sweet and tangy cereal treats get a flavor punch from freeze-dried fruit (often sold in pouches at specialty food stores).

Categories     dessert

Time 50m

Yield 24 servings

Number Of Ingredients 8

4 tablespoons unsalted butter, plus more for greasing
One 10-ounce bag mini marshmallows
1 tablespoon honey
1 teaspoon pure vanilla extract
Kosher salt
6 cups toasted whole-grain oat cereal, such as Cheerios
1 1/2 cups freeze-dried strawberries, crushed
1 1/2 cups freeze-dried bananas, crushed

Steps:

  • Line a 9-by-13-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and honey and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in the vanilla and a pinch of salt. Add the cereal and 1 cup each of the crushed strawberries and bananas. Stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Transfer to the prepared baking dish and pat down into an even layer. Scatter the remaining crushed fruit on top and press into the top (use the bottom of a measuring cup to help). Let sit at room temperature until firm, about 30 minutes.
  • Cut into 24 bars. Store at room temperature in an airtight container for up to 3 days.

CRISPY CEREAL TREATS

Crispy Cereal Treats image

For a no-bake treat just right for lunchboxes or after school, try this fun twist on a childhood favorite that goes beyond the usual "Snap, Crackle, and Pop" blueprint and plays with other great combinations found in the cereal aisle. Each of the four variations uses the same marshmallow base-whether you want to use the mix-ins to take it in a chocolatey, tropical, or fruity direction is entirely up to you!

CEREAL TREATS I

Cereal Treats I image

This version has no chocolate topping, but it would be easy to melt chocolate chips and spread them over the top. We have a nut allergy in our family and I omit the peanut butter and substitute 1/2 cup of butterscotch chips melted with the margarine instead.

  • Measure out all of your ingredients. This process moves quickly and you need everything to be ready to go so the marshmallow doesn't set before everything is added.
  • In a large pan over medium-low heat, melt your fat of choice. Alternatively, you can place it in a large microwave safe bowl, and melt it in the microwave.
  • Add the marshmallows to the pan and stir continuously with a silicone spatula until they are completely melted. Don't turn the heat up during this process as the final marshmallow treats can get hard if the marshmallow gets too hot. Alternatively, you can add the marshmallow to the bowl and microwave in 20 second bursts, stirring in between until fully melted.
