- Cook spinach according to package directions. Drain well and set aside. Saute onion and garlic in butter in a large skillet until tender. Stir in the spinach, bacon, nutmeg, salt and pepper; heat through.

- In a small saucepan, combine the sugar, flour, mustard and salt. Gradually stir in water and vinegar until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Gradually stir a small amount of hot dressing into beaten egg; return all to the pan, stirring constantly. Bring to a gentle boil., Place spinach in a large salad bowl. - Toss cracker crumbs and pecan meal together in a large bowl. Add Colby-Jack cheese, onion, spinach, garlic, parsley, poultry seasoning, and salt. Beat the eggs together in a bowl; incorporate into the mixture.
- Form meatballs using a 1-inch cookie scoop. Roll smooth.
- Heat vegetable oil in a deep fryer. Drop meatballs gently into the hot oil until golden brown, 3 to 4 minutes.

- Fry bacon in medium skillet until almost crisp.
- Fry onion in bacon grease until soft.
- Remove onion and bacon from grease.
- Place spinach in grease, stirring until hot.
- Return onion and bacon to skillet.
- Mix sugar and vinegar.
- Beat egg then mix with vinegar and sugar.
- Pour over spinach.
- Cook 2-5 minute.
- Salt to taste.

- In a large pan, fry the bacon until nicely crisped, drain on paper towels and set aside. Pour off the fat and add the spinach to the pan.
- Cook the spinach over medium heat, stirring frequently, until all of the liquid has evaporated, 5 to 7 minutes. Add the apple cider vinegar and sugar and cook until the sugar is thoroughly dissolved. Season to taste with salt and pepper.
- Increase the heat to medium-high and add the butter and heavy cream. Continue cooking, stirring constantly, until the butter has melted and the cream is blended into the spinach, 2 minutes. Taste and adjust the seasoning if needed. Transfer to a serving bowl.
