EASY SWEET AND SOUR CHICKEN



Easy Sweet and Sour Chicken image

This a really easy recipe that the whole family will enjoy! Serve over rice.

3 tablespoons all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 green bell peppers, diced
1 onion, chopped
½ cup ketchup
½ cup lemon juice
½ cup crushed pineapple with syrup
⅓ cup packed brown sugar

Steps:

  • Combine flour, garlic powder, salt, and black pepper in a shallow dish.
  • Roll and coat chicken cubes in flour mixture.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
  • Heat 1 tablespoon vegetable oil in the same skillet over medium heat.
  • Cook and stir celery, green peppers, and onion in heated oil until slightly tender, about 5 minutes.
  • Return chicken to the skillet.
  • Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl; pour into the skillet; bring to a boil.
  • Cook and stir chicken and vegetables in sauce until heated through, 2 to 3 minutes.

1/4 cup hoisin sauce
1/4 cup sweet chili sauce
2 tablespoons low-sodium soy sauce
2 tablespoons mirin
1 teaspoon minced fresh ginger
1/2 teaspoon toasted sesame oil
2 cups pulled rotisserie chicken
4 Hawaiian sweet rolls, sliced
Butter, for toasting the rolls
Pickled Broccoli Slaw, recipe follows
1 jalapeno, thinly sliced
One 12-ounce bag broccoli slaw
1 cup white vinegar
1/4 cup sugar
1 teaspoon kosher salt

Steps:

  • Combine the hoisin, sweet chili sauce, soy, mirin, ginger and sesame oil in a small pot. Bring to a gentle simmer, lower the heat and cook about 5 minutes. Add in the chicken and toss to combine.
  • Meanwhile, toast the rolls in a skillet with a little butter until golden brown.
  • Divide the chicken mixture among the bottom rolls and top with some Pickled Broccoli Slaw and sliced jalapeno. Add the top rolls and serve.
  • Put the slaw in a medium heatproof bowl.
  • Heat the vinegar, sugar, salt and 1 cup water in a small pot until boiling. Add the hot vinegar mixture to the bowl with the broccoli slaw. Let cool on the counter. Transfer to a resealable container and store in the refrigerator.

3 tablespoons all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 medium green peppers, diced
1 medium onion, diced
1/2 cup ketchup
1/2 cup lemon juice
1/2 cup crushed pineapple with syrup
1/3 cup packed brown sugar
Hot cooked rice

Steps:

  • In a shallow dish, combine the flour, garlic powder, salt and pepper; coat chicken. In a skillet, saute chicken in 2 tablespoons oil over medium-high heat for 8-10 minutes or until tender. Remove and set aside. , Saute the celery, green peppers and onion in remaining oil for 5 minutes or until crisp-tender. Return chicken pan. Combine the ketchup, lemon juice, pineapple and brown sugar; add to skillet. Bring to a boil; cook and stir for 1-2 minutes or until heated through. Serve over rice.

1/4 cup soy sauce
1/4 cup sherry
1/4 cup rice vinegar
1 tablespoon brown sugar
1 tablespoon tomato paste
1 teaspoon crushed garlic
1 teaspoon chopped ginger
sweet hawaiian rolls and barbecue sauce for serving

Steps:

  • Place the chicken breasts in the bottom of a 4-quart slow cooker. In a small bowl combine the soy sauce, sherry, rice vinegar, brown sugar, tomato paste, garlic, and ginger. Pour this mixture over the chicken. Cover the crock and cook on HIGH for up to 4 hours and on LOW for 6 hours. The chicken will be very tender and easy to shred. Remove the chicken and shred the meat. Return it to the crock and mix with the juices. Serve on rolls with barbecue sauce, if desired. Chicken mixture is also good inside a lettuce or napa cabbage wrap. To freeze: the shredded meat and any sauce can be frozen for a later date. Simply cool and store in an airtight container. 1 bottle (18 ounces) sweet and spicy barbecue sauce, divided
2 tablespoons honey mustard
1 can (8 ounces) unsweetened crushed pineapple, undrained
8 hamburger buns, split and toasted
Optional: Bibb lettuce leaves and thinly sliced red onion

Steps:

  • Place chicken breasts in a 4-quart slow cooker. Combine 1/4 cup barbecue sauce and mustard; pour over chicken. Cover and cook on low 2-1/2 to 3 hours or until chicken is tender., Remove chicken; discard liquid. Shred chicken with 2 forks; return to slow cooker. Add crushed pineapple and remaining barbecue sauce; cover and cook on high for 15 minutes., Serve on toasted buns with lettuce and onion if desired. Freeze option: Place shredded chicken in freezer containers. Cool and freeze. To use, partially thaw in refrigerator overnight. 1/2 stick butter or margarine
1/4 c brown sugar
1/4 c finely diced red pepper
1/4 c finely diced yellow pepper
1 c pineapple tidbits/crushed pineapple, drained
3 Tbsp finely diced onion
1/2 tsp minced garlic (i use from a jar)
1 tsp mrs. dash kitchen blend seasoning
1 can(s) white meat chicken (10 0z.), drained & shredded
romaine or red leaf lettuce
4 slice 12-grain bread

Steps:

  • 1. Melt butter in nonstick skillet over medium heat. Add sugar, peppers, pineapple, onion and garlic. Sprinkle seasoning over and stir to combine. Let this mixture cook over medium¬high heat, stirring occasionally, until sauce starts to thicken and everything is tender.
  • 2. Add chicken to skillet and stir well to combine, cook until completely heated through.
  • 3. Put leaf lettuce on two slices of the bread, divide skillet mixture evenly between the two pieces of bread. Top with more lettuce and other two slices of bread.
  • 4. Note: You can put mayonnaise or mustard on the bread but mixture is tasty without it and is very moist.
