EASY SWEET AND SOUR CHICKEN
This a really easy recipe that the whole family will enjoy! Serve over rice.

Steps:
- Combine flour, garlic powder, salt, and black pepper in a shallow dish.
- Roll and coat chicken cubes in flour mixture.
- Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
- Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
- Heat 1 tablespoon vegetable oil in the same skillet over medium heat.
- Cook and stir celery, green peppers, and onion in heated oil until slightly tender, about 5 minutes.
- Return chicken to the skillet.
- Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl; pour into the skillet; bring to a boil.
- Cook and stir chicken and vegetables in sauce until heated through, 2 to 3 minutes.

Steps:
- Preheat oven to 325 degrees.
- Season chicken with salt and pepper.
- Working in two batches, toss the chicken pieces in cornstarch and then coat with the egg.
- Heat the oil over medium-high heat and again in two batches, brown the chicken, turning it so that all sides are browned but not cooked through.
- Place the chicken in a single layer in a foil lined 9x13 inch baking dish.
- Wisk together the sauce ingredients in a small bowl.
- Pour sauce evenly over the chicken and turn the chicken to ensure each piece is coated.
- Bake for 1 hour, turning the chicken every 15 minutes.

Steps:
- Toss the chicken with the salt, turmeric and cinnamon.
- Cut off and discard the chili stems, shake out the seeds. Place the dried chilies into a cup of boiling water and refresh for 10 minutes.
- Drain and puree the fresh chilies, the shallot, garlic and lemon grass in a food processor. Reserve.
- Heat the peanut oil in a large pan or wok over high heat. Brown the chicken and set aside.
- Add the chili mixture to the pan, and cook for 4 minutes until fragrant and mahogany-colored.
- Add the chicken back to the pan and cook, tossing, until cooked thoroughly.
- Stir in the ketchup and vinegar, the salt and the sugar. Cook for several minutes; after the mixture boils, add the vegetables and mint. Toss and serve.

- In 1-quart saucepan, mix brown sugar and cornstarch.
- Add enough water to reserved pineapple juice to measure 1/2 cup; stir into sugar mixture. Stir in vinegar and soy sauce.
- Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in pineapple and bell pepper.
- Use sauce immediately, or cover and refrigerate up to 2 weeks or freeze up to 1 year. Serve with pork, poultry and seafood.

- In a heatproof bowl, soak the árbol chiles in the boiling water until softened, about 10 minutes. Drain the chiles. In the bowl of a food processor, combine the árbol chiles with the Thai chiles, lemongrass, shallots and garlic and puree until smooth.
- In a medium bowl, toss the chicken with the turmeric, cinnamon and 1 tablespoon of kosher salt. In a large, deep skillet, heat the oil until shimmering. Add half of the chicken thighs and cook over moderately high heat, turning once, until browned on both sides, about 8 minutes total; transfer to a plate. Repeat with the remaining chicken.
- Add the chile puree to the skillet and cook over moderate heat, stirring, until golden brown, about 5 minutes. Add the ketchup, vinegar, sugar and 1/2 cup of water and bring to a simmer. Return the chicken to the skillet and simmer over moderately low heat until the chicken is tender and cooked through, about 15 minutes.
- Meanwhile, in a medium pot of salted boiling water, cook the carrots until crisp-tender, about 3 minutes; drain. Add the carrots and peas to the chicken and simmer until heated through, about 5 minutes. Stir in the mint and season with salt. Transfer the chicken to a platter and spoon the sauce over the top.
