EASY SWEET AND SOUR CHICKEN



Easy Sweet and Sour Chicken image

This a really easy recipe that the whole family will enjoy! Serve over rice.

3 tablespoons all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 green bell peppers, diced
1 onion, chopped
½ cup ketchup
½ cup lemon juice
½ cup crushed pineapple with syrup
⅓ cup packed brown sugar

Steps:

  • Combine flour, garlic powder, salt, and black pepper in a shallow dish.
  • Roll and coat chicken cubes in flour mixture.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
  • Heat 1 tablespoon vegetable oil in the same skillet over medium heat.
  • Cook and stir celery, green peppers, and onion in heated oil until slightly tender, about 5 minutes.
  • Return chicken to the skillet.
  • Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl; pour into the skillet; bring to a boil.
  • Cook and stir chicken and vegetables in sauce until heated through, 2 to 3 minutes.

This is such an easy and delicious recipe I thought I would share it. I found this recipe on browneyedbaker.com.

3 -4 boneless skinless chicken breasts (cut into chunks)
salt and pepper, to taste
1 cup cornstarch
2 eggs (slightly beaten)
1/4 cup canola oil or 1/4 cup vegetable oil
3/4 cup sugar
4 tablespoons ketchup
1/2 cup vinegar (preferably rice or white)
1 tablespoon soy sauce
1 teaspoon garlic powder

Steps:

  • Preheat oven to 325 degrees.
  • Season chicken with salt and pepper.
  • Working in two batches, toss the chicken pieces in cornstarch and then coat with the egg.
  • Heat the oil over medium-high heat and again in two batches, brown the chicken, turning it so that all sides are browned but not cooked through.
  • Place the chicken in a single layer in a foil lined 9x13 inch baking dish.
  • Wisk together the sauce ingredients in a small bowl.
  • Pour sauce evenly over the chicken and turn the chicken to ensure each piece is coated.
  • Bake for 1 hour, turning the chicken every 15 minutes.

12 boneless chicken thighs
2 teaspoons salt
1 tablespoon turmeric
2 teaspoons cinnamon
3 tablespoons peanut oil
10 dried whole arbols chilies
5 Thai red chili peppers or 1 habanero pepper
4 stalks lemongrass, cleaned and minced
8 shallots, minced
8 garlic cloves, minced
1 cup ketchup
2/3 cup white vinegar
5 tablespoons sugar
1 tablespoon salt
1 cup diced carrot, blanched
1 cup cooked peas
40 fresh mint leaves

Steps:

  • Toss the chicken with the salt, turmeric and cinnamon.
  • Cut off and discard the chili stems, shake out the seeds. Place the dried chilies into a cup of boiling water and refresh for 10 minutes.
  • Drain and puree the fresh chilies, the shallot, garlic and lemon grass in a food processor. Reserve.
  • Heat the peanut oil in a large pan or wok over high heat. Brown the chicken and set aside.
  • Add the chili mixture to the pan, and cook for 4 minutes until fragrant and mahogany-colored.
  • Add the chicken back to the pan and cook, tossing, until cooked thoroughly.
  • Stir in the ketchup and vinegar, the salt and the sugar. Cook for several minutes; after the mixture boils, add the vegetables and mint. Toss and serve.

1/2 cup packed brown sugar
1 tablespoon cornstarch
1 can (8 oz) crushed pineapple in juice, drained and juice reserved
1/3 cup white vinegar
1 tablespoon soy sauce
1/4 cup finely chopped green bell pepper

Steps:

  • In 1-quart saucepan, mix brown sugar and cornstarch.
  • Add enough water to reserved pineapple juice to measure 1/2 cup; stir into sugar mixture. Stir in vinegar and soy sauce.
  • Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in pineapple and bell pepper.
  • Use sauce immediately, or cover and refrigerate up to 2 weeks or freeze up to 1 year. Serve with pork, poultry and seafood.

  • Add the chile puree to the skillet and cook over moderate heat, stirring, until golden brown, about 5 minutes. Add the ketchup, vinegar, sugar and 1/2 cup of water and bring to a simmer. Return the chicken to the skillet and simmer over moderately low heat until the chicken is tender and cooked through, about 15 minutes.
  • Meanwhile, in a medium pot of salted boiling water, cook the carrots until crisp-tender, about 3 minutes; drain.
