These sweet mixed nuts will leave you hot, hot, hot! I gave these out for Christmas last year and got rave reviews. Not just for the holidays, they're great anytime you need a sassy treat!

Number Of Ingredients 6

1/4 cup brown sugar, packed
1/2 teaspoon cinnamon
3/4 teaspoon cayenne pepper
1 egg white
3 1/2 cups mixed nuts (I use deluxe mixed nuts with no peanuts)
1/2 cup dried cranberries

Steps:

  • Preheat oven to 300°F and prepare baking sheet. I like to line a jelly roll pan with parchment paper, but you can grease your pan if you like.
  • Combine brown sugar, cinnamon and cayenne, set aside.
  • In a bowl large enough to accommodate nuts, whisk the egg white; add nuts, cranberries, sprinkle with sugar mixture and toss to coat. Spread onto prepared baking sheet.
  • Bake for 18-20 minutes or until golden brown, stirring once. Cool completely.
  • Store in an airtight container up to a week.

6 cups popped white popcorn
1 cup salted roasted nuts (one kind, or a mixture), optional
1/2 cup sugar
1/3 cup orange-blossom honey
1 teaspoon coarse salt

Steps:

  • Preheat oven to 250 degrees. Place popcorn and nuts in a large ovenproof bowl, and keep warm in oven. Pour sugar into a small, heavy saucepan and place over medium-low heat. When sugar is melted and a light caramel color, add honey and stir until smooth and liquid. Remove from heat.
  • Take popcorn from oven, sprinkle it with salt, and then pour sugar syrup over it. Using a potholder to steady bowl with one hand, stir quickly, using a large fork, to fluff and coat corn. Spread on baking sheet, and let cool. Break into large pieces and eat as a sweet snack. Store in an airtight tin.

I love the combination of sweet, spicy and crunchy that good spiced nuts have, but the ones you buy at the store are crazy expensive! Here's my take on sweet and spicy nuts, or as I like to call them, Sassy Nuts. Berbere seasoning is an Ethiopian spice mix available at African markets or on the Internet. I highly recommend it if you are a fan of full flavored hot spice blends. I put these nuts into festive gift bags for my children's teachers at Christmas time. Enjoy!

Number Of Ingredients 7

6 cups pecan halves or 6 cups nuts, of your choice
1 large egg white
1 teaspoon water
1 teaspoon salt
1/2 cup light brown sugar, packed
1 teaspoon cinnamon
1 teaspoon berbere (Or substitute 1/2 teaspoon cayenne, 1/4 teaspoon nutmeg and 1/4 teaspoon allspice)

Steps:

  • Preheat oven to 350 deg F.
  • Pour the 6 cups of nuts into a gallon size zipper top plastic bag. In a small bowl, beat the large egg white with the teaspoon of water until the white is frothy. Pour the frothy egg white into the plastic bag with the nuts, seal and shake until all the nuts are coated with the egg white mixture.
  • In a separate bowl, mix the salt, brown sugar, cinnamon, and Berbere spice mix (or your substitute), until well blended.
  • Pour the brown sugar spice mix into the plastic bag, seal, and shake until all the nuts are covered.
  • Line a jellyroll pan with parchment paper. Pour the spiced nuts onto the pan, spread out in an even layer. Bake in a 350 deg F oven for 20 minutes, stirring every 5 minutes, until the spice glaze is set and the nuts are toasted.
  • Allow to cool completely before serving. The spice glaze will set hard as it cools.

  • Make the popcorn by adding the oil to a large pan, cover with a lid and cook over a medium heat until you see all 3 kernels pop. Remove the 3 kernels and add the remaining popcorn kernels and cover the pan, and remove from the heat. Wait 30 seconds then return the covered pan to the heat and leave until you stop hearing the kernels popping. TIP: after about 1 minute, give the pan a gentle shake.
  • Whilst the corn is popping, make the caramel sauce by adding the sugar to a saucepan over medium heat. Allow to dissolve WITHOUT stirring.
  • After about 3 - 4 minutes, you will see the sugar begins to turn to liquid around the edges of the pan. At this point, give the pan a shake but don't stir!
