Steps:
- Heat 1 tablespoon oil in a large saucepan over medium heat.
- Add the onion and chorizo, and cook, stirring, for 5 minutes until the onion softens and the chorizo starts to crisp. Stir in harissa and cook for a further minute.
- Add tomatoes, lentils, capsicum and stock, bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 20 minutes until the mixture has thickened slightly.
- Season the prawns with sea salt and freshly ground black pepper, then add to the pan. Cover and cook for 5 minutes or until the prawns are just cooked through.
- Stir in the parsley, then serve with crusty bread and a mixed salad.

SWAI WITH SPICY LENTILS
Swai is a terrific choice for those who don't like a fishy fish. It is economical, low in fat, and low in calories. This recipe is an adaptation of another I'd seen here on food.com, but I had made so many substitutions I decided to submit it so I had a more accurate picture nutritionally.

Steps:
- Combine lentils, turmeric and stock in a saucepan. Bring to a boil then reduce heat, cover and simmer for 20 minutes.
- When lentils are ready (or just before) In a large pan heat , stir fry cumin, ginger, and cayenne for a few seconds then add lentils. Stir to combine.
- Add lemon juice and coriander. Stir gently.
- Lay the Swai atop the lentils, cover the pan, and cook on low heat for 10 minutes, turn the fish and cook for 10 minutes more.
- Absolutely not necessary, but we serve this over chopped cabbage and use a little bit of sauce similar to that on a fish taco (with non-fat yogurt as a substitute for mayo). When I have found our perfect combo, I will amend this recipe to add it.

SPICY CATALINA SWAI
Tasty grilled fish fillet with a tantalizing color and zesty, zingy taste. I love to experiment with grilling fish and marinades, and this is one I've recently come up with. Recipe also works well with trout; haven't tried it with other types of fish, though. If cooking more than one fish, grill each in separate foil to preserve flavor.

- Preheat an outdoor grill for medium-high heat.
- Place a large piece of aluminum foil on a work surface; pinch edges together forming a boat-like shape to contain liquids. Pour Catalina dressing in the middle of the aluminum foil. Place fish fillet in the dressing, turning to coat fish in dressing completely.
- Mix chile-garlic sauce, garlic powder, ground black pepper, sea salt, red pepper flakes, mustard powder, and white pepper together in a small bowl. Coat both sides of fish fillet with spice mixture. Wrap aluminum foil around coated fish fillet and dressing, sealing the edges together.
- Cook fish on the preheated grill until opaque and flakes easily with a fork, 8 to 12 minutes.

BACON WRAPPED SWAI
I found this recipe online when I was looking for something to do with my Swai fillets. Swai is similar to catfish with its white flesh, but has a milder flavor and more delicate texture. The recipe came from Milk & Honey Naturals. The fish stayed nice and tender (not dry at all) and the broiling at the end crisped up the bacon nicely.

Steps:
- Preheat oven to 400.
- Liberally grease a baking sheet or line with foil.
- I lined mine with foil and it didn't stick to the foil at all.
- Lightly sprinkle the fillets with the Italian seasoning.
- Lay out 3-4 strips of uncooked bacon depending on how long your fillets are.
- Lay a fillet on top of the bacon.
- Wrap the bacon around the fillet so that there are few gaps between the slices.
- I overlapped some of my slices-it was fine.
- Repeat the process for the other fillet.
- Bake at 400 for 30 minuets.
- After the 30 minutes are up, broil on High for 1-3 minutes to crisp up the bacon.
- Watch it carefully so the bacon doesn't burn.

- In a skillet, heat oil over medium heat.
- Add onions, and cook, stirring, until softened, about 3 minutes.
- Add garlic, ginger, coriander, cumin, and black pepper.
- Cook, stirring constantly, for one more minute.
- Add lentils, tomatoes, and stock. Bring to boil. Transfer to slow cooker.
- Cover and cook on LOW for 8 hours or HIGH for 4 hours.
- Stir in coconut milk, salt, and chili flakes.
- Cover and continue to cook for 30 minutes.
- Ladle into soup bowls and top with a poached egg.
- In order to make in advance:.
- Complete steps until mixture is placed into slowcooker.
- Refrigerate overnight and then transfer to slowcooker.

Cooking time for lentils can vary from 15 minutes to as long as 1 hour, depending on the type and age of the lentils. Red Lentils (which turn yellow when cooked) cook very quickly because they are split and after 15 to 20 minutes they soften to a puree. Brown lentils hold their shape better but can take longer to cook. Serve this soupy stew-like dish in a shallow bowl over brown rice. I got this from Prevention Magazine.

Steps:
- Sauté onion in oil until tender.
- Stir in ginger and cumin, sauté for 30 seconds.
- Add lentils, water and salt.
- Heat to a boil, reduce heat to low and simmer, partially covered for 15 minutes.
- If the lentils are soft, uncover and gently boil until most of the liquid evaporates.
- If the lentils are not yet tender, continue to cook, partially covered, testing every 10 minutes or so.
- Remove from heat and stir in cilantro and lemon juice.
- Serve warm with brown rice.

- Cover and cook for 10 mins until soft.
- Add garlic, curry powder, cumin, coriander and cook for 1 minute.
- Add water, broth, lentils and bay leaves and bring to the boil.
- Cover and reduce heat, simmer for 2 hrs until tender and the liquid is absorbed.
- Remove bay leaves, add the yogurt and tomato puree and simmer 5 minutes until heated through.
