  • Peppery Edamame. Don't forget about the other sushi restaurant classics, including can't-eat-just-one edamame. Although most sushi joints simply steam these soybeans, this recipe gives them extra flavor with a sprinkle of black pepper.
  • Avocado and Watercress Salad. You can easily recreate the classic sushi menu salad at home with a ripe avocado and some pretty watercress. The secret to this bright and tangy dressing?
  • Carrot-Beef Sushi with Caper-Basil Mustard. This pretty, modern take shows that anything goes when it comes to sushi rolls. The recipe swaps the traditional nori wrapping for very thinly sliced carrots, the rice-and-fish filling for beef top loin, and a bright mustard sauce instead of soy sauce.
  • Sashimi Salad with Soy and Orange. Once you've found pristine fish, the hard work is done. Make sure to shop at a quality fish purveyor and ask for sushi-grade salmon or tuna.

  • 1 rice cooker cup (180 ml, 150 g) yields roughly 330 g of cooked rice, which is roughly 1 ¾ US cups. One sushi roll requires ½ - ¾ cup (90-135 g) of sushi rice.
  • To make sushi vinegar, combine rice vinegar, sugar, and salt in a small saucepan and bring it to a boil over medium-high heat. Whisk until the sugar is completely dissolved. You can also put the ingredients in a microwave-safe bowl and microwave for 1 minute, or till sugar is dissolved. Set aside to let it cool.
  • When the rice is cooked, moisten sushi oke/hangiri (a round, flat-bottom wooden tub) or a baking sheet lined with parchment paper, or a large moisten glass bowl. Transfer the cooked rice into the sushi oke and spread out evenly so the rice will cool faster. While it’s hot, pour sushi vinegar over the rice. Tip: If you're making more/less rice or using the sushi vinegar bottle, the required sushi vinegar for rice should be roughly 8-10% of the cooked rice weight.

  • It’s important to have all of your ingredients prepped and ready to go before you begin to assemble your rolls. (I especially recommend cooking the rice 1-2 hours ahead of time, so that it can cool to room temperature before assembling the rolls.)
  • Lay a sheet of nori on a sushi mat* smooth-side-down, with the longer side of the nori facing you. Place a bowl of water nearby. Dip your fingers into the water (this will help the rice not to stick) and sprinkle approximately 1 cup of sushi rice evenly over the nori, leaving a 1-inch border open at the top. Using your fingers, gently but firmly press the rice onto the nori in an even layer, dipping your fingers back into the water as often as needed so that they do not stick. You want the rice to cover the nori as evenly as possible, all the way to the bottom, left and right edges of the sheet. (See photos above.)
  • Place the fillings in long horizontal lines on top of the rice, layering the different fillings side by side instead of in one big pile. Sprinkle the toppings a pinch of sesame seeds, if desired.
  • Lift up the bottom edge of the sushi mat and carefully fold it over the fillings until they are enclosed in a roll, yet still leaving the top 1-inch of the empty nori exposed. Use the sushi mat to squeeze the roll in as tightly as possible. (Although not too tight, as you don’t want all of the fillings to squish out!) Dip your fingers in the water bowl once more and use them to wet the remaining 1-inch of nori. Then use the sushi mat to finish rolling up the roll until it is completely enclosed. Give it a few extra squeezes all around so that it is nice and firmly-packed. Then transfer the entire roll to a cutting board. Repeat with the remaining ingredients to form about 5 sushi rolls.
