SAUSAGE SURPRISE BUNDLES
These are a really nice variation on a lunch sandwich. Our boys gobble these up! (they are ages 5 & 4) We enjoy these with a bowl of soup or served with salad. ENJOY!

Steps:
- Reserve bacon fat& saute onion until tender in the fat.
- Stir in sauerkraut, sausage, brown sugar, garlic salt, caraway and pepper.
- Cook& stir 5 minutes.
- Remove from heat; add bacon.
- Set aside to cool.
- In a bowl, combine hot roll mix& one egg, water and butter& mix to form soft dough.
- Turn onto a floured surface; knead until smooth& elastic- about 5 minutes.
- Cover dough& let stand 10 minutes.
- Divide dough into 16 pieces.
- On a floured surface, roll each piece into a 4" circle.
- Top each circle w/ approx.
- 1/4 c.
- filling.
- Fold dough around filling, forming a ball; pinch the edges to seal.
- Place seam side down on greased cookie sheets.
- Cover w/ towels& set in warm place to rise for 30 minutes.
- Beat remaining egg; brush over bundles.
- Sprinkle with sesame or poppy seeds.
- Bake@ 350 for 15-20 minutes, or until golden brown.

My husband, being born and raised in Wisconsin, loves bratwurst sausages. So I tweaked this strudel recipe to include some of his favorite filling ingredients and it was an instant hit. Serve with extra mustard for dipping. -Cleo Gonske, Redding, California

- Preheat oven to 400°. In a large skillet, heat butter over medium heat. Add bratwurst and onion; cook and stir until onion is tender, 8-10 minutes. Stir in sauerkraut; cool slightly., In a small bowl, mix sour cream, mustard and 1/2 teaspoon caraway seeds. Unfold one sheet of puff pastry. Spread with 1/3 cup sour cream mixture to within 1/2 in. of edges. Spoon 2-1/2 cups sausage mixture down center of pastry; sprinkle with 1/2 cup each Muenster and cheddar cheeses., Lightly brush edges of pastry with water; bring edges together, pinching to seal. Transfer to an ungreased baking sheet, seam side down; pinch ends and fold under. Repeat with remaining ingredients., Brush tops with water; sprinkle with remaining caraway seeds. Cut slits in pastry. Bake until golden brown, 25-30 minutes. Let stand 10 minutes before slicing.

SAUSAGE/EGG CASSEROLE SURPRISE
In my home, breakfasts have a tendency to be more on the casual side of the fence. As a matter of fact, it is not unusual to see most of my houseguests arriving at the breakfast table in their jim jams... It is a homey site. A dish like this is excellent for a casual morning. Steps:
- 1. Crumble the sausage, and cook over medium heat until browned. Drain the sausage on paper towels to remove any excess grease.
- 2. Combine the mustard powder, salt, eggs, and milk in a bowl.
- 3. Add the sausage, bread, and cheese. Then gently stir to incorporate.
- 4. Grease a 9x13 inch baking dish (or ceramic baking bowl) with butter, and then add the casserole mixture. Spread into an even layer.
- 5. Let cool overnight in the fridge. Cover with some cling foil to keep the casserole from absorbing any odors from the fridge. This step is important because it give the ingredients a chance to get to know each other.
- 6. The following morning, preheat your oven to 350f (175c), and begin waking up your sleeping guests.
- 7. Cover the dish with foil, and bake 45 to 60 minutes, or until the eggs are beginning to set.
- 8. Uncover, reduce heat to 325f (165c), and then bake an additional 30 minutes, or until eggs are firmly set.
- 9. Remove from the oven, tell your guests that breakfast is ready, and then serve immediately. Don't forget to mention to your sleepy-eyed guests that the serving dish is hot, hot, hot.
- 10. This is one of my holiday specials. I place the dish on a trivet on one of my sideboards; along with some homemade buttermilk biscuits, butter, honey, and assorted jams. The plates and utensils; along with coffee and juice are at the ready for my guests to dig in...
- 11. Keep the faith, and keep cooking.

- Uncase and separate sausage.
- Brown sausage in a skillet over medium-high heat.
- Drain off excess drippings.
- Combine cheese, chillies, green onions and sausage in a medium bowl.
- Spoon 1 round teaspoon of sausage mixture near 1 corner of wonton wrapper.
- Brush opposite corner with water.
- Roll up "jelly roll" style.
- Moisten ends of roll with water.
- Bring ends together to make a "bundle" overlapping slightly and pressing firmly.
- Repeat with remaining filling and wrappers.
- Heat deep fryer to about 365.
- Fry bundles a few at a time for about 2 minutes or until golden brown.
- Drain on paper towel and serve.

- Trim crusts from bread & cut into 4 squares.
- Line casserole with bread.
- Brown sausage & drain.
- Cut each link into 3 pieces.

- When ready to bake, mix evaporated milk & soup.

- In a large bowl, dissolve yeast in warm water. Add the milk, shortening, eggs, sugar, salt and 2 cups flour; beat until smooth.
