SLICE AND BAKE PEANUT BUTTER SANDIES



Slice and Bake Peanut Butter Sandies image

Number Of Ingredients 7

1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon fine salt
5 tablespoons unsalted butter, softened
1/3 cup smooth peanut butter
1/3 cup packed light brown sugar
12 peanuts, halved

Steps:

  • Whisk together the flour, baking soda and salt in a medium bowl.
  • Combine the butter, peanut butter and brown sugar in another medium bowl. Beat with an electric mixer until light and fluffy, about 2 minutes. Add the flour mixture and blend until just combined. Shape the dough into a log: Place it onto a piece of plastic wrap about 18 inches long. Use your hands to pat the dough into a log about 7 inches long and 2 inches around. Roll the plastic wrap around the dough. Twist both ends of the wrap, like a candy, and tighten both sides until the dough log is compact and tightly wrapped (this might cause the dough to shrink down to a 6-inch log instead of a 7-inch log, but that is okay). Tuck the twisted ends under the dough and refrigerate until firm, at least 2 hours.
  • When ready to bake the cookies, preheat the oven to 350 degrees F and arrange 2 racks in the middle of the oven. Line 2 baking sheets with parchment paper. Remove the plastic wrap from the dough and use a sharp knife to slice the dough into 1/8-inch-thick rounds. Place the rounds about 1 inch apart on the baking sheets, about 12 cookies per baking sheet. Press a halved peanut into the center of each cookie. If the dough is still very cold, it might crack slightly around the peanut. Simply use your finger to lightly push the dough back together.
  • Bake the cookies until the edges are very lightly browned, 10 to 12 minutes. Halfway through cooking, rotate the baking sheets front to back and top to bottom.
  • Cool the cookies slightly on the baking sheets for 5 minutes, and then transfer to a cooling rack and cool completely.

1/2 cup all-purpose flour
1/2 cup whole-wheat pastry flour
3/4 cup finely chopped pecans
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup almond butter
3 tablespoons unsalted butter, at room temperature
1/2 cup plus 2 tablespoons confectioners' sugar, plus more for dusting cookies
1 egg white
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Whisk together flours, pecans, cinnamon, and salt. Cream butters and sugar. Add the egg white and continue beating until light and fluffy. Beat in vanilla extract. On low speed, gradually add flour mixture and beat until a dough forms.
  • Shape the dough into 3-inch balls, about 1 heaping tablespoon each. Place dough balls 2 inches apart on baking sheets lined with parchment paper. Bake until lightly browned on the bottom, 10 minutes.
  • While cookies are still hot, sift confectioners' sugar over the tops. Transfer to a wire rack and cool completely.

2 stick butter
1/3 c sugar
2 tsp water
2 tsp vanilla extract
21/4 c all purpose flour
1 c finely chopped pecans
11/3 c ready-made mincemeat
1/2 c confectioners' sugar

Steps:

  • 1. Preheat oven to 325F, with mixer, beat butter and sugar until combind. Add water,vanilla; beat well. Stir in flour and nuts.
  • 2. Shape dough into 21/2 inch circles, using about 1 tbsp. dough for each.Top each with slightly rounded tsp.of mixture, shape dough around mixture. Place cookies seam side down on ungreased baking sheet. Bake 20 min. or until bottoms are lightly browned.
  • 3. Cool on wire racks, place confectioners sugar in plastic bag. Add cookies, a few at a time, and shake gently until coated.

HAZELNUT SANDIES

1/3 cup blanched hazelnuts
1 cup all-purpose flour
1/4 teaspoon ground allspice
1/4 teaspoon salt
1 stick unsalted butter, at room temperature
1 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
Cooking spray

Steps:

  • Spread the hazelnuts on a baking sheet and bake until golden brown, about 10 minutes; let cool, then finely chop.
  • Whisk the flour, allspice, salt and hazelnuts in a medium bowl. Beat the butter and 1/4 cup confectioners' sugar in a large bowl with a mixer on medium speed until light and creamy, about 3 minutes. Beat in the vanilla. Reduce the mixer speed to low and gradually beat in the flour mixture until the dough comes together. Cover with plastic wrap and refrigerate until firm, at least 1 hour or overnight.
  • Preheat the oven to 350 degrees F. Coat a baking sheet with cooking spray. Roll tablespoonfuls of the dough into balls and arrange 1 inch apart on the prepared baking sheet. Bake until light golden on the bottom, about 12 minutes. Meanwhile, sift the remaining 3/4 cup confectioners' sugar into a medium bowl.
  • Immediately transfer the warm cookies to the bowl of confectioners' sugar and gently toss to coat; transfer to a rack to cool completely. Roll the cookies in confectioners' sugar again when completely cool.

  • Cream butter and sugars until light and fluffy. Beat in vanilla and eggs, one at a time. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture. Refrigerate, covered, until dough is firm enough to shape, about 2 hours. , Preheat oven to 375°. With floured hands, wrap tablespoonfuls of dough around mints (about 42) to form rectangular cookies, covering completely with dough. ⅓ cup white sugar
2 teaspoons water
2 teaspoons vanilla extract
2 cups sifted all-purpose flour
1 cup chopped pecans
3 tablespoons confectioners' sugar

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the water and vanilla. Stir in the flour and pecans until well blended. Cover dough and chill for at least four hours.
  • Preheat oven to 325 degrees F (165 degrees C). Shape dough into walnut sized balls or crescents. Place 2 inches apart onto unprepared cookie sheets.

1 cup oleo or 1 cup butter
1/2 cup confectioners' sugar (XXX)
2 teaspoons vanilla
1 tablespoon water
2 cups plain flour, sifted
1 cup coarsely chopped pecans

Steps:

  • Cream oleo and sugar together.
  • Add vanilla and water.
  • Add flour to mixture, a little at a time.
  • Mix in pecans.
  • Roll into small balls (coat hands with flour if necessary).
  • Bake for approximately 20 minutes at 350°F, turning to brown other side after 10 minutes.
  • Sift 1/2 box XXX sugar in bowl.
  • Coat Sandies as soon as they are removed from the oven.
  • Line can with wax paper and sprinkle with XXX sugar.
  • Separate layers with wax paper.
