Absolutely beautiful served warm from the oven, these tasty sausage rolls are a total joy.

olive oil
1 red onion, peeled and finely sliced
1 sprig fresh sage, leaves picked
6 higher-welfare pork sausages
1 handful breadcrumbs
fresh nutmeg, for grating
250 g ready-made puff pastry
1 free-range egg
a little milk

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4. Heat the olive oil in a saucepan and add the onions. Cook gently for about 20 minutes until soft and golden brown. Add the sage leaves, cook for a couple of minutes more and then spread out on a plate to cool.
  • With a sharp knife, slit the skins of the sausages and pop the meat out. Put it in a mixing bowl with the cooled sage and onion mix and the breadcrumbs. Add a good grating of nutmeg, then scrunch well with your clean hands to mix together.
  • On a floured work surface, roll the pastry out into a big rectangle as thick as a pound coin and cut it lengthways into two long, even rectangles. Roll the mixture into sausage shapes with your hands and lay along the centre of each rectangle.
  • Mix the egg and milk and brush the pastry with the mixture, then fold one side of the pastry over, wrapping the filling inside. Press down with your fingers or the edge of a spoon to seal the join.
  • Cut the long rolls into the sizes you want and space them out on a baking tray. Brush with the rest of the egg wash and bake in the preheated oven for 25 minutes or until puffed, golden and cooked through. Serve with piccalilli and a cress salad.
  • Tip: Lamb or beef sausages work just as well in this recipe if you don't fancy pork.

Eat these family-friendly sausage rolls with a chutney or pickle. They make a great snack for a party buffet

375g all-butter puff pastry
flour, for dusting
2 tbsp apple sauce, pickle or chutney
400g sausagemeat or sausages, skins removed
1 egg, beaten
2 tsp sesame seeds or nigella seeds (optional)

Steps:

  • Roll out the pastry to a 35 x 30cm rectangle on a surface lightly dusted with flour. Trim the edges neatly, then cut in half lengthways to form two long strips. Spread with a thin layer of the apple sauce, pickle or chutney, leaving a border along the edges.
  • Tip the sausagemeat into a large bowl, add 3 tbsp cold water and squash together. Divide the mixture in two and mould each half into a cylindrical shape. Put each portion of meat into the middle of a pastry strip, leaving a border at either side. Brush the pastry border and the top of the sausage mix with the beaten egg. Fold one edge of the pastry over the meat and roll to encase, then use a fork to press the pastry edges together. Cut the sausage rolls into 5cm lengths and arrange on a lined baking tray. Chill for 20 mins. Can be made a day ahead or frozen for up to one month; to bake from frozen, add an extra 10 mins to the cooking time.
  • Heat oven to 200C/180C fan/gas 6. Brush the sausage rolls with the rest of the beaten egg and sprinkle with the sesame seeds or nigella seeds (if using). Bake for 30-35 mins until the pastry is deep golden. Transfer the sausage rolls to a wire rack and leave to cool for 10 mins.

The traditional British sausage roll is so quick and easy to make, plus it is the perfect snack or party food and can be served hot or cold.

1 tablespoon vegetable oil
1 medium onion (finely chopped)
2 pounds sausage meat
3 medium eggs ( free-range if possible; divided)
Ground black pepper (to taste)
Salt (to taste)
1/8 cup flour (for rolling out pastry)
25 ounces puff pastry (or shortcrust pastry )

Steps:

  • Gather the ingredients.
  • In a frying pan, heat the vegetable oil on medium heat and add the onion to cook for approximately 7 minutes, or until it starts to lightly brown.
  • In a large mixing bowl, add the sausage meat, cooked onion, and 2 of the eggs. Season with a couple of pinches of black pepper and a good sprinkling of salt. Mix well until all the ingredients are thoroughly and evenly combined.
  • Preheat the oven to 400 F. On a lightly floured surface, roll out the pastry into two 8- by 10-inch rectangles. Cut each rectangle into 2 long strips (4 total) and rest them in the fridge for at least 10 minutes.
  • Place the cold pastry onto 2 lightly greased baking pans. In the center of each pastry, form the sausage meat into a long sausage the length of the pastry strip. Beat the remaining egg in a small bowl and lightly brush the edges of the pastry.
  • Fold the pastry over the meat filling to form long rolls. Flip the sausage roll over so the seam is underneath. Lightly brush the top surface with egg.
  • Cut the rolls into 1 1/2-inch lengths. Or vary the length to the style of roll you want.
  • Cook in the preheated oven for 20 minutes or until golden brown. Leave them to cool before packing them into your picnic basket or lunch box, or simply eat them right away. Enjoy.

2 (9 inch) frozen pie crusts, thawed and ready to bake
1 pound sausage
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
  • Place pie crust dough onto a flat surface. Spread them generously with mustard. Spread 1/2 pound of sausage onto each pie crust. Flatten the sausage down with a spatula. Roll the pie crust mixture up like a jelly roll. Slice the roll into 1/2-inch circular pieces.
  • Bake for 18 minutes or until sausage is cooked.

My mom made this recipe when I was little and called them Boonyalotties - it brings back wonderful warm memories - and now I make them for my kids too!

1 lb spicy pork sausage or 1 lb mild pork sausage, uncooked
1 (14 ounce) can pizza dough, Pillsbury dairy case
1 -2 teaspoon italian seasoning, to taste
1 -2 teaspoon garlic powder, to taste
1 -2 teaspoon onion powder, to taste
1/2-1 teaspoon black pepper, to taste

Steps:

  • Preheat oven to temperature suggested on pizza dough can.
  • Unroll refrigerated pizza dough onto countertop.
  • Pinch off pieces of uncooked sausage and place liberally all over dough, including corners and edges.
  • Sprinkle liberally with garlic powder, onion powder, italian seasoning and black pepper, to taste.
  • Roll up dough, jelly-roll fashion, and slice into 1" pieces.
  • Place pieces flat side down onto ungreased cookie sheet about 2" apart.
  • Bake approximately 12 to 14 minutes until a nice golden brown.
  • My kids enjoy these warm with sour cream or maple syrup.
