SUPER EASY BREAKFAST BURRITO - NO MEAT
An easy and tasty breakfast burrito for those of us who prefer ours with no meat. Me and my hubby have been cooking this for breakfast for several years now.

Steps:
- Prepare your skillet by heating and oiling. When oil is hot, add bell pepper and tomato pieces. Stir constantly until peppers are tender. Add Eggs to veggies (it's easiest if you move the veggies to the side of the pan and put the eggs in the "empty" spot) and stir together, so that they are scrambled. Add seasonings. When eggs are done, turn off heat and add cheese. Dish egg mixture on to tortillas, add salsa to taste, roll tortilla up and enjoy!

SUPER EASY BREAKFAST SHAKE
When my bananas start to get over ripe I peel them, wrap them and stick them in the freezer for these shakes. These can be modified by changing veggies and fruits.

MINCEMEAT RECIPE #3947527459 - NO MEAT
I'm always on the lookout for mincemeat that meets the following criteria. 1) No meat, suet, or tomatoes 2) Not cloyingly sweet 3) Enough ingredients to make most of them a mystery 4) Keeps for a long time in the fridge, with the addition of enough booze 5) Cooks long enough to become the consistency of sludge After perusing more recipes than I can count, I finally synthesized this. I don't know if it meets criteria #4 yet, but it's working out pretty well with everything else.

Steps:
- In small batches, pulse all the dried fruits in a food processor until very finely chopped.
- Melt butter in a large pan.
- Add all ingredients except 1/2 c of brandy and nuts.
- Simmer over very low heat for one hour, stirring frequently, or until the liquid is reduced and the ingredients are stiff and difficult to stir.
- Stir in nuts and remaining brandy. Refrigerate, covered, 2-3 months. Replenish brandy as it evaporates.

EASY MONEY BREAKFAST BURRITOS
Yummy burritos that are so good that my husband was selling them for a buck apiece at corp school in the Navy. I was making them every night, and we bought a new couch with the money! These freeze really well; just defrost and eat. I also add fresh cooked mushrooms in these on occasion. I do find that these taste better when made ahead of time and eaten at a later time.

Steps:
- Place the pork sausage and onion into a skillet over medium heat, and cook until the sausage is browned, about 10 minutes. Break the meat apart into crumbles as it cooks. Drain the excess grease.
- In a separate skillet over medium heat, melt the butter until the foam subsides, and cook and stir the beaten eggs with the chilies until softly scrambled but not wet, about 3 minutes. Transfer the scrambled eggs into a large bowl, and stir in the cooked sausage mixture.
- Place a tortilla onto a microwave-safe plate, and cook in the microwave on High setting for 10 to 20 seconds. The tortilla should be warm and pliable. Spoon about 1/2 cup of the sausage and egg mixture in a line down the the tortilla, slightly off center. Top with about 1 tablespoon of shredded cheese, and 1 tablespoon of salsa. Fold 2 opposite ends of the tortilla over the filling. Press the 2 ends down so they stay folded. Carefully roll the shorter unfolded edge over the burrito, pushing the filling to the back of the roll as you go, to snugly enclose the filling. Keep the 2 ends folded as you roll. Wrap in foil if desired. Repeat with the rest of the tortillas.
