SIMPLE PERFECT ENCHILADAS



Simple Perfect Enchiladas image

Number Of Ingredients 16

2 tablespoons canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 medium onion, finely chopped
1/2 teaspoon salt
Canola oil, for frying
10 to 14 corn tortillas
Two 4-ounce cans diced green chilies
1 cup chopped green onions
1/2 cup chopped black olives
3 cups grated sharp Cheddar cheese
Cilantro, for garnish

Steps:

  • In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  • In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  • Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.

1/2 pound uncooked chorizo or spicy pork sausage
1 small onion, finely chopped
1/2 medium green pepper, finely chopped
2 teaspoons butter
6 eggs, beaten
3/4 cup shredded cheddar cheese, divided
3/4 cup shredded pepper Jack cheese, divided
2 cans (10 ounces each) enchilada sauce, divided
8 flour tortillas (8 inches), room temperature
1 green onion, finely chopped

Steps:

  • Crumble chorizo into a large skillet; add onion and green pepper. Cook over medium heat for 6-8 minutes or until sausage is fully cooked; drain., In another skillet, heat butter over medium heat. Add eggs; cook and stir until almost set. Remove from the heat; stir in the chorizo mixture and 1/3 cup of each cheese., Spread 1/2 cup enchilada sauce into a greased 13-in. x 9-in. baking dish. Spread 2 tablespoons enchilada sauce over each tortilla; place 2 tablespoons egg mixture down the center. Roll up and place seam side down in prepared dish., Pour remaining enchilada sauce over the top; sprinkle with remaining cheeses. , Bake, uncovered, at 350° for 25-30 minutes or until heated through. Sprinkle with green onion.

8 whole green chilies (about 2 [4-ounce] cans)
8 (7-inch) flour tortillas
2 cups cooked sausages, crumbled, or chopped ham or bacon
1/2 cup sliced green onions
1/2 cup finely chopped green bell pepper
2 1/2 cups shredded Cheddar cheese, divided
4 eggs
2 cups light cream
1 tablespoon flour
1/4 teaspoon salt
1 clove garlic, minced
Tabasco
avocado slices (optional)
salsa for garnish
sour cream for garnish
cilantro for garnish

Steps:

  • Place opened green chile on one end of tortilla. Combine meat, green onions, pepper, and 1/3 cup plus 3 tablespoons cheese. Spoon over green chile. Roll up and arrange in greased casserole dish, seam-side-down. Combine eggs, cream, flour, salt, garlic, and Tabasco, and pour over tortillas. Cover and refrigerate overnight. Uncover, and bake in 350° oven for 45-50 minutes. Sprinkle with remaining cheese and bake 3 minutes. Serve with avocado, salsa, sour cream, and cilantro.

1 cup butter
1 cup honey
2 cups sliced fresh peaches
1/2 cup packed brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
10 (8 inch) flour tortillas
1/2 cup sour cream
1 cup grated cheddar cheese
powdered sugar
cinnamon
strawberry
blueberries

Steps:

  • Preheat oven to 375 degrees. Spray a 9 x 13 inch baking pan with non-stick cooking spray.
  • Melt 1 stick of butter with the honey in a small saucepan; then set aside to cool.
  • Melt the remaining 1 stick of butter in a large saucepan over medium heat. Add the peaches, brown sugar, cinnamon, and vanilla.
  • Cook for 5-10 minutes, stirring frequently, then set aside to cool.
  • Spread 1 tablespoon of the cooled butter/honey mixture on each tortilla (reserve the remaining butter/honey mixture.).
  • Spoon the peach mixture equally (about 2 large spoonfuls) onto each tortilla. Dollop several small spoonfuls of sour cream onto each tortilla.
  • Roll up the tortillas and place them side-by-side in the pan.
  • Spoon the remaining butter/honey mixture over the tortillas, and sprinkle with cheddar cheese.
  • Bake for 10-15 minutes.
  • Place 1 enchilada on each of the 10 serving plates, and drizzle with the sauce from the baking pan.
  • Sprinkle with powdered sugar and cinnamon, then garnish with strawberries and blueberries.
  • May be served as a dessert, or substitution for salad.

1 pound bulk pork sausage
2 tablespoons canola oil
7 cups frozen shredded hash brown potatoes, thawed (20 ounces)
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1 can (4 ounces) chopped green chiles
2 cups shredded cheddar cheese, divided
10 flour tortillas (6 inches)
2 cans (10 ounces each) green enchilada sauce
Optional toppings: Chopped red onion, chopped sweet red pepper and chopped fresh cilantro

Steps:

  • In a large skillet, cook and crumble the sausage over medium heat until no longer pink, 5-7 minutes. Remove from pan with a slotted spoon; discard drippings., In same pan, heat oil over medium-high heat; saute the potatoes until lightly browned, 8-10 minutes. Remove from the heat; stir in seasonings, chiles, sausage and 1/2 cup cheese., Place 1/2 cup filling on each tortilla; roll up and place in a greased 13x9-in. baking dish, seam side down. Top with sauce. Refrigerate, covered, several hours or overnight., Preheat oven to 375°. Remove enchiladas from the refrigerator while oven heats. Bake, covered, 30 minutes. Sprinkle with remaining cheese. Bake, uncovered, 10-15 minutes or until lightly browned and heated through. If desired, serve with toppings.
