SUN OVEN BREAKFAST BREAD

1 1/4 cups milk
3/4 cup water
6 cups unbleached white bread flour
2 teaspoons salt
1 tablespoon granulated sugar
2 tablespoons butter
1 1/2 teaspoons rapid-rise (instant) active dry yeast

Steps:

  • Pour the milk and water into the bread machine pan. Sprinkle flour over the liquids making sure to cover completely. Add the salt, sugar, and butter in separate corners of the bread pan. Make a shallow indentation in the center of the flour and add the yeast. Set the bread machine to the dough setting and press start. When the dough cycle has finished turn the dough out onto a lightly floured surface, cut in half, and form two loaves. Place the loaves in lightly oiled bread pans, cover with oiled plastic wrap; let rise 30 to 45 minutes. Set Global Sun Oven out to preheat while the dough is rising. Bake loaves in Sun Oven until lightly browned, 45 minutes to 1 hour. Makes 2 loaves

6 cups white bread flour

Steps:

Check the dough after a few minutes of kneading and add a little more water if needed. At the end of the cycle turn the dough out onto a lightly floured surface and gently punch down. Cut the dough in half and shape it into two loaves. Put the dough in two lightly oiled bread pans. Cover the pans with oiled plastic wrap. Let the loaves rise in a warm spot 30 to 45 minutes. Set the Sun Oven out to preheat while the loaves are rising. Bake in the Sun Oven until the bread is lightly browned and sounds hollow when tapped, 45 minutes to 1 hour.

Steps:

  • Pour the water, yogurt, oil, and molasses into the pan of a bread machine. Sprinkle both flours over the liquids, making sure that they are completely covered. Add the wheat bran. Add the salt in one corner of the pan. Make a shallow indentation in the center of the flour and add the yeast. Set the bread machine to the dough setting and press start. When the dough cycle has finished turn the dough out onto a lightly floured surface and gently punch down. Cut dough into two pieces and form two loaves. Place dough in two lightly oiled bread pans, cover with oiled plastic wrap and let rise in a warm spot for 30 to 45 minutes. Set Global Sun Oven out to preheat while the bread is rising. Bake loaves in the Sun Oven until lightly browned and sound hollow when tapped, 1 to 1 1 1/2 hours. Makes 2 loaves

SOLAR-BAKED FOCACCIA BREAD

Number Of Ingredients 7

1 1/2 cups warm water
3 tablespoons olive oil, divided (plus additional for drizzling)
1 1/4 teaspoons salt
3 1/2 cups all-purpose flour
1 tablespoon rapid-rise yeast
1 sprig fresh rosemary
kosher salt

Steps:

  • Set Global Sun Oven out to preheat. Prepare two 7- by 9-inch baking pans by drizzling 1 tablespoon oil in each pan. Brush oil over bottom and up sides of pans. Combine water, remaining tablespoon oil, salt, flour and yeast in a medium sized bowl; beat at high speed with an electric mixer, using dough hooks, for 1 minute. Batter will be sticky. Let dough rest five minutes. Using a greased dough cutter, divide the dough in half and place into the prepared pans. Using greased hands, spread the dough out in the pans. Cover pans with plastic wrap and let dough rise at room temperature for 1 hour, until it's puffy. Gently poke dough all over with fingers. Drizzle dough with olive oil, sprinkle with rosemary leaves and kosher salt. Spray dough with a light mist of water. Place pans in GSO, stacking them criss-cross. Bake until golden brown, 50 to 60 minutes. Cool in pans on a rack 5 minutes, turn out of pans. Serve warm or at room temperature.

100% WHOLE WHEAT BREAD



100% Whole Wheat Bread image

2 tablespoons olive oil
1 1/2 cups water
2 tablespoons honey
3 3/4 cups whole wheat flour
2 tablespoons dry milk powder
1 1/2 teaspoons salt
1 1/2 tablespoons vital wheat gluten
1 packet hodgson mill active dry yeast for whole grain

Steps:

  • Set Sun Oven out to preheat Put the ingredients in the bread machine following the manufacturer's instructions. Set on dough cycle. When the cycle is complete, remove the dough from the machine, form into a loaf and place in a loaf pan. Cover the pan with a dish towel and let it rise in a warm spot for approx. 1 hour. Place in the preheated Sun Oven and bake for approx. 1 hour or until the loaf sounds hollow when tapped. Baking in the Sun Oven is pretty much like baking in a conventional oven. If the Sun Oven is not reaching the temperature called for in your recipe simply increase the cooking time. You'll be able to tell when your goodies are ready the same way you always would - appearance, toothpick test, etc. - and in the hotter months your house will stay cool.
