- In a small mixing bowl, beat together cream cheese, deviled ham, worcestershire and cayenne pepper until smooth. Stir in green pepper. Cover and refrigerate 1 hour or until ready to serve. Serve with crackers or vegetables.

DEVILED HAM DIP
This dip was brought to work for a holiday snack pitch-in. I & everbody in the office loved it. I got the recipe and made it for the fsmily that night. It was a huge success and is now a must make for Thanksgiving and New Year's day morning as a snack while parade watching. I make it the night before, so it is ready when needed....

Steps:
- 1. place all ingredients except crackers in food processor with metal knife blade. Blend until thoroughly combined and mixture is a consistent pink color throughout with no white streaks. Store in a covered bowl in refrigerater 'til a few minutes before serving.
- 2. place assorted crackers on large plate/tray on table near dip.rovide small plates& small knives for indifiduals to place a portion of dip to spread on crackers to avoid inadvertent double dipping.
- 3. AS I said, it goes fast in my home, so make as many batches[multiple batches can be made in same food processor bowl at same time.] as you like.leftovers if there are any he. he. store well in fridge in covered bowl for quite a few days.
DEVILED HAM DIP
This is a recipe my mom made as far back as I can remember. I have since taken over the family get-togethers over the past 25+ years, and this is a "must" at everyone of them (because my 91 yr old mom still says so). Personally, I will say this dip "must" be served with "Bugles" corn chips made by General Mills (that's all I've ever known and liked with this). I know some people may not be able to find them, so choose your favorite. I hope you like this super simple recipe. (Cook time reflects refrigeration time). Enjoy.

Steps:
- Mix everything in a bowl (except chips). Cover with plastic wrap and refrigerate for at least 2 hours to soften onion and allow flavors to blend. May be made a day ahead for ease of serving at a party.
- Serve with your favorite dippers. Enjoy!
DEVILLED HAM - COPYCAT UNDERWOOD'S DEVILLED HAM
I looked for a long time for an acceptable substitute to Underwood's Devilled Ham, and this is really close! It's also called potted meat. I buy a smoked ham shank and use part of the ham for this. You will need to process this recipe in a pressure cooker used for canning. I use those small 1/4 pint jars - those little fancy jam/relish jars, but you could put in 1/2 pints too.

Steps:
- Dissolve chicken cubes in 1 cup of boiling water.
- Add gelatin.
- Soak rice cereal in the 1/2 cup of hot water.
- Put Ham, rice cereal/Water, Chicken cubes/water and spices in blender or food processor.
- Process until it turns into a paste - it will be rather sloppy.
- Spoon into jars, leaving 1/2 inch headspace.
- Apply the lids and tighten the rings.
- Process either 1/2 or 1/4 pints for 50 minutes at 10 lbs pressure. If your altitude is over 2,000 feet, process at 15 pounds pressure. This recipe can be multiplied. If you use chicken instead of ham, you will have to add fat to the chicken or it will be too dry to eat!
