BAKED POLENTA WITH CHEESE



Baked Polenta with Cheese image

Want a different family side dish but with flavors sure to please? Then try this. With some store-bought polenta in a tube and a few other ingredients, TADA ... scalloped polenta, yum!

1 teaspoon butter, or as needed
2 teaspoons grated Parmesan cheese, or as needed
3 tablespoons butter
2 cups finely chopped onion
2 cloves garlic, minced
2 teaspoons all-purpose flour
1 ½ cups whole milk
1 pinch salt and ground white pepper to taste
1 ½ cups shredded Cheddar cheese
½ cup grated Parmesan cheese
½ cup bread crumbs
1 (16 ounce) tube polenta, cut into 1/8-inch slices

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease an 8-inch square baking pan with 1 teaspoon butter. Add 2 teaspoons Parmesan cheese to the baking pan and shake gently, back and forth, until the bottom and sides are coated with Parmesan, discarding any extra.
  • Melt butter in a large skillet over medium heat. Add onion and garlic and saute until tender, about 5 minutes. Add flour and stir until well combined. Turn off heat and whisk in milk. Turn heat to medium-low and bring sauce to a simmer; cook until thickened, about 5 minutes. Season with salt and pepper.
  • While sauce is thickening, mix together Cheddar cheese, Parmesan cheese, and bread crumbs in a bowl.
  • Layer 1/2 of the polenta slices in the prepared baking dish and top with 1/2 of the sauce. Repeat with remaining polenta and sauce. Top with cheese mixture.
  • Bake in the preheated oven until cheese is melted and golden brown, about 25 minutes.

previously prepared sun oven polenta, cut into slices
previously prepared sun oven chili, any kind
grated white cheddar cheese (optional)

Steps:

  • Set Sun Oven out to preheat. Spray a baking dish with cooking set aside. Cut polenta into enough 1/2-inch thick slices to cover the bottom of the baking dish. Spread 1/2 of the chili over the polenta in the dish. Cover the chili with another layer of polenta slices and then another layer of chili. Finish with a layer of polenta slices. Cover the baking dish with tin foil and a dark tea towel. Bake in Sun Oven until heated through, 30 to 45 minutes. Remove the tea towel and the tin foil; sprinkle the cheese on top. Leave dish in the Sun Oven until the cheese melts, 3 to 5 minutes.

Steps:

  • The "sun oven no stir polenta" from my previous post turned out to be an extremely convenient food to have in the fridge. The other day when I was pressed for time I sliced it up and put together this quick vegetarian meal. You could use pretty much any combination of cheese and veggies, just layer them in an oiled baking dish and bake it in the GSO until the cheese has melted and the polenta begins to brown. On this particular day I used leftover mixed greens that had been sautéed in garlic and oil, gorgonzola and parmesan cheese, and, of course, polenta. If you don't have an oven bag handy you can seal the baking dish with foil and cover it with a tea towel.

cooking spray
2 cups water
2 cups milk
1 cup stone-ground cornmeal
1 ½ teaspoons salt
1 (14 ounce) can pumpkin puree
1 cup shredded Jarlsberg cheese
½ cup grated Parmigiano-Reggiano cheese, divided
¼ cup sour cream
½ teaspoon ground nutmeg
⅛ teaspoon coarsely ground black pepper
salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 3-quart baking dish with cooking spray.
  • Combine water, milk, cornmeal, and salt in the prepared baking dish; mix well. It's normal for the mixture to separate a bit.
  • Bake, uncovered, in the preheated oven for 40 minutes.
  • Remove from the oven and stir in pumpkin, Jarlsberg, 1/2 of the Parmigiano-Reggiano, sour cream, nutmeg, pepper, and salt. Return to the oven and bake for 10 minutes.
  • Remove from the oven and top with remaining Parmigiano-Reggiano. Turn on the broiler.
  • Broil until top is brown and bubbly, about 3 minutes. Let stand 5 minutes before serving.

Our Test Kitchen created this delicious vegetarian bean and polenta bake that combines spicy chili, mixed veggies and homemade polenta. It's a warm and comfy casserole that is sure to please everyone, vegetarian or not.

4 cups water
1/2 teaspoon salt
1-1/4 cups yellow cornmeal
2 cups shredded cheddar cheese, divided
3 cans (15 ounces each) vegetarian chili with beans
1 package (16 ounces) frozen mixed vegetables, thawed and well drained

Steps:

  • Preheat oven to 350°. In a large heavy saucepan, bring water and salt to a boil. Reduce heat to a gentle boil; slowly whisk in cornmeal. Cook and stir with a wooden spoon 15-20 minutes or until polenta is thickened and pulls away cleanly from sides of pan. , Remove from heat. Stir in 1/4 cup cheddar cheese until melted., Spread into a 13x9-in. baking dish coated with cooking spray. Bake, uncovered, 20 minutes. Meanwhile, heat chili according to package directions. , Spread vegetables over polenta; top with chili. Sprinkle with remaining cheese. Bake 12-15 minutes longer or until cheese is melted. Let stand 10 minutes before serving.

SUN OVEN WHITE BEAN CHILI

Number Of Ingredients 13

2 cups dried great northern or cannellini beans, picked over, rinsed, soaked overnight, and drained
1 tablespoon olive oil
1 white onion, chopped
4 cloves garlic, finely chopped
5 cups chicken broth or water
1 cup dry white wine
2 teaspoons cumin seeds
2 teaspoons coriander seeds
1 (4-ounce) can diced roasted green chili
1 teaspoon dried mexican oregano
1/2 cup heavy whipping cream
1 tablespoon fresh basil leaves, coarsely chopped
salt and white pepper to taste

Steps:

  • Set Sun Oven out to preheat. Heat the oil in a large pot. Add the onion and sauté until lightly brown, about 10 minutes. Stir in the garlic and sauté for another few minutes. Grind the cumin and coriander seeds in a coffee mill or spice grinder and add them to the pan stirring well. Add the beans, broth, wine and chilies. Cover and transfer to the Sun Oven. Cook until the beans are tender, 1 1/2 to 2 hours. About 3o minutes before serving stir in the oregano, cream, and basil and season to taste with salt white pepper.
