Creamy Sun-Dried Tomato Spread image

This creamy, bubbly appetizer spread is sure to please. Baked to a golden brown, it gets its richness from cream cheese and mayonnaise. -Valerie Elkinton, Gardner, Kansas

Number Of Ingredients 10

2 packages (8 ounces each) cream cheese, softened
2 cups mayonnaise
1/4 cup finely chopped onion
4 garlic cloves, minced
1 jar (7 ounces) oil-packed sun-dried tomatoes, drained and chopped
2/3 cup chopped roasted sweet red peppers
2 cups shredded part-skim mozzarella cheese
2 cups shredded Italian cheese blend
1 cup shredded Parmesan cheese, divided
Assorted crackers

Steps:

  • Preheat oven to 350°. In a large bowl, combine cream cheese, mayonnaise, onion and garlic until blended. Stir in tomatoes and red peppers. Stir in mozzarella cheese, Italian cheese blend and 3/4 cup Parmesan cheese., Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining 1/4 cup Parmesan cheese. Bake, uncovered, until edges are bubbly and lightly browned, 18-22 minutes or until edges are bubbly and lightly browned. Serve with crackers.

1 6-ounce jar sun-dried tomatoes packed in olive oil
4 medium tomatoes, seeded and coarsely chopped
2 cloves garlic, skinned and any green part removed
1 cup loosely packed basil leaves
Coarse salt and freshly ground pepper to taste
2 pounds ricotta cheese

Steps:

  • Combine the sun-dried tomatoes, fresh tomatoes, garlic and basil in a food processor. Blend to a smooth puree and season with salt and pepper to taste.
  • Place the ricotta in a mound in the center of a large round plate. Smooth the tomato mixture around the side. Garnish the cheese with a sprig of basil.

1/3 cup oil-packed sun-dried tomatoes
2 garlic cloves, peeled and halved
1 tablespoon minced fresh basil
1 tablespoon minced fresh parsley
8 ounces fresh goat cheese, cubed
Assorted crackers

Steps:

  • Drain tomatoes, reserving 2 teaspoons oil. In a small food processor, combine the garlic, basil and parsley. Cover and process until blended., Add the goat cheese and reserved sun-dried tomatoes and oil. Cover and process until smooth. Chill until serving.

1 jar (8-1/2 ounces) julienned oil-packed sun-dried tomatoes
2 garlic cloves, minced
1 log (11 ounces) fresh goat cheese
Minced fresh parsley, optional
Assorted crackers

Steps:

  • Drain tomatoes, reserving 3 tablespoons of oil., In a small skillet, heat reserved oil, tomatoes and garlic over medium-high heat. Cook and stir 5 minutes or until garlic is golden and tomatoes are heated through. To serve, place cheese on a serving plate. Pour tomato mixture over cheese. If desired, sprinkle with parsley. Serve with crackers.
