Summer Sweet Grape Salad image

This is a great salad or dessert, especially for a summer BBQ. I chill a large glass bowl and line with curly red and green lettuce then add the beautiful grapes. Sprinkle with a little brown sugar and pecan pieces. I am always asked for the recipe or asked to bring it to the next party. Give it a try - Great when grapes are on sale and easy to make.

Ingredients

2 lbs grapes, I use 1/2 green and 1/2 red
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package sour cream
1/2 cup white sugar
1 teaspoon vanilla
2 tablespoons brown sugar
2 tablespoons pecans

Steps:

Mix first 5 ingredients.
Sprinkle with brown sugar and pecan pieces.
Refrigerate overnight.
Toss and serve very cold.

Ingredients

1 head romaine lettuce
2 cups cubed cooked chicken
1/2 red pepper, chopped
1/2 yellow pepper, chopped
1 cup dried cranberries
3/4 cup chopped walnuts or 3/4 cup pecans
1 cup crumbled feta cheese
raspberry vinaigrette dressing, enough to coat salad

Steps:

Rip lettuce into bite size pieces.
Mix all ingredients in with lettuce and coat with dressing.

In a large mixing bowl, using an electric mixer on medium speed, beat together the cream cheese, sour cream, sugar and vanilla extract until smooth and thick, about 3 minutes.
Add the grapes to the bowl and, using a rubber spatula, gently fold the grapes into the cream cheese mixture until everything is evenly coated. Refrigerate for at least 1 hour before serving, or overnight.
Prior to serving, sprinkle with brown sugar and chopped pecans. Leftovers can be stored in the refrigerator for up to 3 days.
