ARTICHOKE BACON POTATO SALAD
I created this recipe because I tasted an artichoke and bacon pasta salad I liked and thought that the same concept would be good as a potato salad. This can be made more healthy by using fat-free mayo and turkey bacon.

Steps:
- Cook potatoes in boiling water until tender.
- Drain and cool potatoes.
- Cook bacon in oven (on raised rack over baking pan).
- Cool and crumble bacon.
- In large bowl, combine mayonnaise, garlic, and onion. Mix well.
- Stir in artichoke hearts, cheese, and salad dressing.
- Add salt and pepper to taste. Mix well.
- In large serving bowl, combine potatoes and bacon.
- Gently stir in dressing until well mixed.
- Cover and chill thoroughly before serving.
- Cook time is cooling time.

Steps:
- Cook bacon in a skillet until crisp.
- Transfer with tongs to paper towels to drain.
- Pour fat from skillet into a measuring cup and reserve.
- Coarsely crumble bacon.
- Pour vinegar into a large bowl.
- Put potatoes in a 5-quart pot, covered with cold water by 2 inches.
- And simmer, uncovered until tender, 20 minutes.
- Drain potatoes in a colander.
- Rinse slightly with cold water.
- When potatoes are cool, quarter them.
- Add them to bowl as cut, tossing to coat.
- Add 1 tablespoon reserved bacon fat and remaining ingredients.
- Toss and combine well.

- Place potatoes and water to cover in a large pot; bring to a boil over medium-high heat. Cook 25 minutes or until potatoes are tender. Drain and let cool. Cut into 1/2-inch-thick slices.
- Stir together sour cream and next 4 ingredients.
- Stir together potatoes, sour cream mixture, green onions, and parsley in a large bowl. Cover and chill at least 1 hour; keep chilled until ready to serve.

BACON POTATO SALAD
This is my favorite non-German bacon potato salad. What makes it special is that the potatoes are seasoned while they're warm so they soak up all the great flavors before you finish the salad. The use of lemon juice really brightens the dish, but you could always use vinegar if you prefer. This is an older recipe from Emeril Lagasse which, surprisingly, contains no extra bacon grease!

- Put the potatoes in a saucepan and add enough water to cover. Bring to a boil. Cook, partially covered, until fork tender, about 10 minutes. Drain and transfer to a salad bowl.
- While the potatoes are still warm, season with the salt, cayenne, black pepper and lemon juice and toss well to combine. Add the celery, green onions, parsley and eggs. Combine the mayonnaise and mustard and add to the bowl.
- Sprinkle the bacon over the salad and toss gently but thoroughly to mix well. Serve immediately or refrigerate and serve slightly chilled.

- In a large saucepan, cover potatoes with 2 inches salted water. Bring to a simmer and cook until potatoes are just tender, 15 to 20 minutes. Drain thoroughly. In a large nonstick skillet, heat oil over medium-high; add potatoes and garlic and season with salt and pepper. Cook, mashing potatoes slightly, until golden brown in spots, about 5 minutes. Transfer to a serving dish and keep warm.
- Add bacon to skillet. Cook until bacon is browned, about 3 minutes. Add green beans and cook, stirring occasionally, until bright green and crisp-tender, about 4 minutes. Add to potatoes along with lemon juice to taste. Season with salt and pepper and toss gently to combine.
