ROASTED PEACHES
A low oven temperature and a touch of fresh lime juice take ripe summer peaches to the next level. Serve alongside Rose-Geranium-and-Cardamom Ice Cream and Almond Cookies.

- Preheat oven to 225 degrees. In a bowl, gently toss peaches with lime juice and oil. Lightly season with salt and pepper. Spread in a single layer on a rimmed baking sheet lined with parchment. Place confectioners' sugar in a fine-mesh sieve and dust peaches evenly.
- Bake until peaches darken and begin to curl, about 1 hour. Let cool completely; serve.
ROAST PEACHES
This recipe for roast peaches from John Doe restaurant in Notting Hill is super-easy but looks great and tastes delicious. It's ready in under 30 minutes, so it's perfect for a dinner party dessert

- Heat the oven to 180C/fan 160C/gas 4. Sprinkle the sugar into the bottom of a baking tray, dot over the butter and add the spices. Put the peaches flat-side down on the mix and roast for 15-20 minutes, or until soft but still holding their shape.
- Meanwhile, mix the vanilla with the mascarpone. Remove the peaches from the oven and while still warm, peel and discard the skin. Keep warm while you make the sauce.
- Scrape the sugar from the tray into a small pan, and reduce the cooking liquor until you get a drizzling consistency.
- Put 3 halves of peach per person on a plate, add a blob of the mascarpone, drizzle over the sauce and sprinkle over the amaretti biscuits.
BAKED PEACHES

- Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
- In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
- Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with vanilla ice cream, Greek yogurt, or a pour of heavy cream, as desired.

- Preheat oven to 400 degrees. In a large, shallow baking dish, combine butter, lemon juice, sugar, and vanilla bean (seeds and pod). Add peaches, and turn to coat with butter mixture; arrange, cut side down, in a single layer.
- Roast until peaches are tender and cooking liquid is syrupy, 15 to 25 minutes, brushing with cooking liquid halfway through. Serve peaches (warm or at room temperature) with ice cream and raspberries; drizzle with cooking liquid.
