CITRUS & FRESH HERB ROASTED SALMON



Citrus & Fresh Herb Roasted Salmon image

A colorfully decorative slow-and low-roasted healthy salmon dish that's perfectly moist and celebrates easy cooking and food as art.

Number Of Ingredients 10

1.5 pounds wild salmon filet
2 oranges, blood oranges, mandarins, and/or grapefruits (can use a combo or not, very thinly sliced)
2 lemons/Meyer lemons/limes (can use a combo or not, very thinly sliced)
1 ½ cups olive oil
3 garlic cloves (thinly sliced)
1/2 red onion (thinly sliced into rings)
1 cup fresh herbs (such as parsley, dill, tarragon, oregano and/or cilantro)
handfull fresh herb sprigs (can use any of the herbs above)
salt
pepper

Steps:

  • Preheat oven to 300 degrees.
  • Dry salmon with a paper town, season both sides with salt and pepper and place on a large baking dish.
  • Decorate salmon with citrus slices, onion rings, sliced garlic, herb sprig and half of the fresh herbs. I have way too much fun with this part and hope you do too.
  • Drizzle salmon and all the fixings with olive oil. Season with a bit more salt and pepper.
  • Bake 25-35 minutes, until salmon is just barely cooking through and turning opaque around the edges. Exact cooking time will depend on the thickness of your cut.
  • Transfer salmon to a serving platter (or enjoy straight from baking dish but may want to pour some of the olive oil out if you choose to do so).
  • Sprinkle the remaining half of the fresh herbs on top and enjoy.

Marinated Croaker Collars With Citrus and Green Mango Salad image

I love to cook with ingredients that might otherwise be discarded, like fish collars. If you're tempted to treat them as scraps, please don't throw them away or use them merely for a stock. They're delicious as the main focus of a dish-think of them as the spareribs of the sea. Here, croaker collars are marinated in citrus, chipotle, ginger, and fish sauce, and served with a mango salad full of funk, spice, and crunch.

2 limes
2 lemons
2 oranges
⅓ cup extra virgin olive oil
1 chipotle pepper in adobo sauce, finely chopped
1 (3-inch) piece peeled fresh ginger, finely chopped
1 teaspoon plus 1 tablespoon chopped fresh cilantro
1 teaspoon fish sauce
4 (6-ounce) croaker collars (or snapper or cobia fillets)
1½ teaspoons kosher salt
1 green mango, pitted, peeled, and julienned
1 ripe mango, pitted, peeled, and julienned
1 tablespoon vegetable oil
1 shallot, minced
2 garlic cloves, minced
1 tablespoon dried shrimp, minced
1 bird's-eye chile, minced
½ cup peanuts, finely chopped
½ teaspoon chile powder
2 tablespoons unsweetened coconut flakes, toasted
6 fresh mint leaves, chiffonade

Steps:

  • Juice 1 each of the limes, lemons, and oranges into a medium mixing bowl. Add the olive oil, chipotle pepper, ginger, 1 teaspoon of the cilantro, and the fish sauce. Whisk until well combined. Divide the marinade in half.
  • Place half of the marinade in a large zip-top bag. Season the fish with ½ teaspoon of the salt and add to the marinade. Seal and move the fish around to evenly coat. Refrigerate for at least 30 minutes, or up to 2 hours.
  • Segment the remaining lemon, lime, and orange and add to the marinade in the mixing bowl. Add the mangos and stir to combine.
  • Heat the vegetable oil in a small sauté pan set over medium-high heat. When the oil shimmers, add the shallot, garlic, dried shrimp, chile, peanuts, chile powder, and remaining 1 teaspoon salt. Cook, stirring occasionally, until shallot is translucent and peanuts are browned slightly, 3 to 4 minutes. Transfer the mixture to the bowl with the mango and toss the salad to combine.
  • Bring 1 inch of water in a large pot to a simmer over medium-high heat. Remove the fish from the marinade and set in a steamer basket. Place the basket in the pot, cover, and steam until fish is cooked through, 8 to 10 minutes.
  • Garnish the fish with the coconut flakes, mint, and remaining 1 tablespoon of cilantro and serve with the mango salad.

1-1/2 pounds haddock, cod or halibut fillets
1/8 teaspoon salt
1/8 teaspoon pepper
1 medium onion, chopped
1/3 cup minced fresh parsley
2 teaspoons grated lemon zest
2 teaspoons grated orange zest
4 teaspoons canola oil

Steps:

  • Place an 18x12-in. piece of heavy-duty foil on a large baking sheet. Arrange fillets in a single layer on foil; sprinkle with salt and pepper. Top with onion, parsley, and lemon and orange zest. Drizzle with oil. Top with a second large piece of foil. Bring edges of foil together; crimp to seal, forming a large packet., Bake at 450° for 15-20 minutes or until fish flakes easily with a fork. Open foil carefully to allow steam to escape.

4 Arctic char fillets, each about 180 g
1/4 cup bread crumbs
2 tbsp finely chopped parsley
2 tsp olive oil
1 tbsp lemon zest
1/4 tsp salt

Steps:

  • 1. Remove fish from refrigerator 10 min before cooking. Preheat oven to 225F (325F???). 2. Stir bread crumbs with parsley, oil, lemon zest and salt. Season with pepper. Arrange fish in an 8 × 8-in. baking dish. Coat the tops of each fillet with bread crumb mixture. 3. Bake in centre of oven, uncovered, until char fillets are just cooked but is still tender, about 25 min. Serve with Dillicious beet salad.

FISH WITH CITRUS-CHILE SAUCE



Fish With Citrus-Chile Sauce image

This light yet earthy sauce lends a generous, almost floral warmth to any white, sturdy fish. For heat, there are crushed Calabrian chiles, smoky and sunny; for a mellow sourness, Moscatel vinegar - feel free to substitute apple cider vinegar and a little sugar to approximate the same fruitiness; and for funk, fermented white pepper (although regular white pepper will work too). Other notes include delicate marjoram, cousin to oregano but less forward, with its comforting contour of balsam, and Timur pepper from Nepal, fragrant and bright, calling to mind a just-peeled tangerine. (If you use Sichuan pepper instead, give it a citrus boost with extra orange juice and a shower of orange zest.) The sauce comes out denser than a vinaigrette but still loose and the orange-red of a young sunset.

1/2 teaspoon Timur (Timut) peppercorns (see Tip)
1/4 teaspoon white peppercorns, preferably fermented (see Tip)
1 1/2 tablespoons Moscatel vinegar (see Tip)
2 teaspoons crushed Calabrian chiles (in oil)
1 1/2 teaspoons fresh marjoram leaves, finely chopped
1/2 teaspoon orange or tangerine juice
1 small garlic clove, minced
3 tablespoons extra-virgin olive oil
Salt
4 sturdy white fish fillets or steaks (about 6 ounces each), such as halibut, red snapper, sea bass or swordfish

Steps:

  • Make the sauce: Toast the Timur pepper in a dry skillet over medium heat. When the pods are fragrant but not yet darker brown, remove them from the heat and let cool. Using a spice grinder or a mortar and pestle, crush into a fine powder, along with the white peppercorns.
  • In a small bowl, whisk together the vinegar, chiles, marjoram, juice, garlic and the freshly ground Timur and white pepper. Let sit for 30 minutes for the flavors to meld, then gradually whisk in the olive oil. Add salt. Taste and add more of whichever seasonings you like, whisking as you go. Use immediately or refrigerate in an airtight container for up to 1 week.
  • Make the fish: Pat the fish dry and season on both sides with salt and pepper. If cooking on the stovetop, coat a skillet with oil and heat over medium-high. (The skillet should be large enough to hold all the fillets with space between them. If it isn't, work in batches.) Carefully add the fish to the hot oil and pan-fry the fish until browned, about 3 minutes on each side. (Gently probe the fish with a fork; if it flakes, it's done.) Remove from the heat and transfer to plates.
  • If grilling, heat a grill to medium-high. Generously brush or rub the fish with olive oil to coat. Place on the hot grill grates, skin side down if there's skin and cover if using a gas grill. Cook until the fish releases easily from the grate, about 3 minutes. For thinner fillets, the flesh will be just opaque throughout and starting to gape and the fillets don't need to be flipped. Simply transfer them to plates. For thick fillets or steaks, carefully flip the fish and cook until just opaque throughout, 2 to 3 minutes more, then transfer to plates. Spoon the sauce over the fish and serve.

1 orange, peeled, sectioned, and cut into bite-size
½ cup canned pineapple chunks, undrained
¼ cup diced fresh mango
2 jalapeno peppers, seeded and minced
3 tablespoons orange juice
1 tablespoon diced red bell pepper
2 teaspoons white sugar
1 tablespoon chopped fresh cilantro
½ cup fresh orange juice
1 tablespoon olive oil
¼ teaspoon cayenne pepper
1 tablespoon pineapple juice concentrate, thawed
1 ½ pounds swordfish steaks

Steps:

  • Make the salsa: In a medium-size bowl, combine oranges, pineapple chunks, mango, minced jalapenos, 3 tablespoons orange juice, diced red bell pepper, sugar, and cilantro. Mix well, and refrigerate covered.
  • In a non-reactive bowl, mix 1/2 cup orange juice, olive oil, cayenne pepper, and pineapple juice concentrate. Place swordfish steaks in bowl, and turn to coat well. Marinate the swordfish in the mixture for 30 minutes.
  • Prepare an outside grill with oiled rack set 6 inches from the heat source. On a gas grill, set the heat to medium-high.
  • Grill the swordfish on each side for a total time of about 12 to 15 minutes, until opaque in the center. Serve the grilled fish with the salsa.
