TRADITIONAL RICE STUFFING

My mother passed this recipe on to her daughters as it was passed on to her from her mother. It is a delicious alternative to traditional bread stuffing, and my family always requests it when a chicken or turkey is on the menu. It will be a stunning addition to your Sunday night dinner table. As with any good recipe, adjust the seasonings to your taste. This recipe quantity is for an approximately 5-pound chicken.

2 tablespoons butter
1 onion, finely chopped
3 cups water
2 teaspoons dried dill weed, or to taste
2 teaspoons poultry seasoning, or to taste
1 tablespoon dried parsley
ground black pepper to taste
2 tablespoons chicken bouillon, or more to taste
1 ½ cups long grain white rice

Steps:

  • Heat butter in a large saucepan over medium heat. Stir in onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add water, dill weed, poultry seasoning, parsley, ground black pepper, chicken bouillon, and rice; bring to a boil. Reduce heat to medium-low, cover, and simmer until water is absorbed and rice is just slightly undercooked, 12 to 14 minutes. Stir, taste, and adjust seasonings if desired. Cool completely before using to stuff a chicken.

Stuffing Fried Rice image

For this carb-on-carb fried rice recipe, you can use anything but boxed stuffing (the texture is too fine and will turn to mush). We chose a cornbread and chorizo stuffing, which can handle being cooked again and tossed in the stir-fry.

Number Of Ingredients 9

4 cups cooled cooked short-grain white rice (from 1 1/2 cups uncooked rice)
3 tablespoons vegetable oil, divided
1 large egg
1/4 cup sliced garlic chives or regular chives, plus more for serving
1/2 teaspoon ground coriander, plus more for serving
2 tablespoons (or more) mushroom soy sauce or 1 tablespoon regular soy sauce
8 cups (2-inch) cubes stuffing
1 bunch small Tuscan kale, ribs and stems removed, leaves torn
1 (3.5-ounce) package honshimeji or oyster mushrooms, torn into bite-size pieces

Steps:

  • Break rice apart with your hands or a spoon so grains are individual and not in clumps. Heat 1 Tbsp. oil in a large nonstick skillet over medium-high. Add egg and cook, breaking up with chopsticks or a rubber spatula, just until it is in small clumps and mostly set, about 1 minute. Add rice, toss to distribute egg, and cook, undisturbed, drizzling 1 Tbsp. oil around edge of pan, until rice begins to crisp, about 3 minutes.
  • Add 1/4 cup chives and 1/2 tsp. coriander to rice and cook, tossing occasionally, until rice is heated through and crisp in spots, about 4 minutes. Add mushroom soy sauce and toss to combine; taste and adjust seasoning with more soy sauce if needed. Transfer fried rice to a plate.
  • Heat remaining 1 Tbsp. oil in same skillet over medium. Cook stuffing, turning occasionally, until golden brown all over, about 5 minutes. Add kale and mushrooms and cook, tossing gently, just until vegetables are softened, about 5 minutes. Return fried rice to skillet and toss to combine. Serve topped with more chives and coriander.
  • Rice can be cooked (but not fried) 3 days ahead. Let cool; cover and chill.

ROASTED CHICKEN WITH FRIED RICE STUFFING AND SCALLION OIL



Roasted Chicken with Fried Rice Stuffing and Scallion Oil image

1 (5 to 6 pound) whole chicken, washed, patted dry (preferably organic)
2 1/2 cups cooked calrose/sushi rice
1 tablespoon canola oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 cup sliced scallions
1 minced jalapeno (or 2 serrano chiles)
Salt and black pepper to taste
Garnish with scallion oil, recipe follows
2 bunch scallions, green part only
1 cup spinach leaves
1 teaspoon salt
1 teaspoon sugar
2 cups canola oil

Steps:

  • Pre-heat oven to 550 degrees. Rub chicken with oil, then salt and pepper. Place chicken, breast side up, in the oven and cook for about 25 minutes or until golden brown. May have to rotate the chicken for even coloring. As chicken is cooking, in a saute pan, add a little oil and quickly brown the garlic, ginger, scallions and jalapeno. Add mixture to cooled rice. Rice should end up a bit sticky. Check for seasoning. When chicken is fully browned, stuff with rice and turn the oven down to 300 degrees. Cover with foil to prevent burning. Chicken will take another 45 to 55 minutes. Chicken is done when one can move the wing back and forth with great ease. Allow chicken to rest for 10 minutes before serving.
  • In a pot of boiling, well salted water, blanch scallion and spinach for 30 seconds and shock in ice bath. Squeeze out water and place in blender cup with salt and sugar. With blender on high speed, add canola oil in a steady stream. Blend for 5 minutes until cup gets slightly warm. This oil may be done a day in advance and will keep in the refrigerator for at least 1 week.

Cook, stirring occasionally, until shallots and garlic are golden brown, 14–17 minutes. Remove solids from oil with a slotted spoon and transfer them to a plate. Discard allspice and ginger. Add chiles to oil and return saucepan to medium heat. Toast, stirring constantly, until chiles just begin to darken, about 1 minute. Transfer chiles to the same plate; add sesame seeds to oil and set oil aside.
  • Pulse chiles in a food processor until finely chopped, adding some of the cooking oil as needed to loosen it. Combine chopped chiles in a large jar with shallots and garlic, and remaining oil. Add agave and season with salt.
  • Heat 1 Tbsp. ghee in a large nonstick skillet over medium-high. Add brussels sprout leaves and cook, tossing occasionally, until lightly charred and crisp-tender, about 3 minutes. Transfer to a plate.
