"Most lasagnas have too much salt and fat for me, so I came up with this version," notes Dorothea Rickner of Rochester, New York. "It's fairly easy to prepare and goes great with a salad and toasted garlic bread."

2 cups uncooked ziti or small tube pasta
1/2 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green pepper
1 can (8 ounces) tomato sauce
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
Dash pepper
3/4 cup ricotta cheese
1 cup shredded part-skim mozzarella cheese

Steps:

  • Cook ziti according to package directions. Meanwhile, in a skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, Italian seasoning, garlic powder and pepper. Cook and stir until heated through, about 3 minutes. , Drain pasta. Spread half of the meat sauce in a 1-qt. baking dish coated with cooking spray. Top with half of the ziti, ricotta cheese and mozzarella cheese. Repeat layers. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Let stand for 5 minutes before serving.,

1 lb whole wheat rigatoni or 1 lb ziti pasta
1 tablespoon olive oil
1 large yellow onion, chopped
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 lb ground turkey
3 garlic cloves, finely chopped
1/2 tablespoon dried oregano
24 ounces pasta sauce (or 26 oz)
15 ounces low-fat ricotta
10 ounces frozen spinach, thawed and squeezed to remove excess moisture
1/2 cup grated parmesan cheese
1 cup shredded part-skim mozzarella cheese

Steps:

  • Heat oven to 400°F
  • Cook the ziti or rigatoni according to the package directions.
  • Meanwhile, heat the oil in a large pot over medium heat. Add the onion, salt and pepper and cook for 5 minutes.
  • Add the turkey and cook, crumbling with a spoon until no trace of pink remains, about 7 minutes.
  • Spoon off and discard any excess fat.
  • Add the garlic and oregano and cook for 2 minutes.
  • Add the pasta sauce and cook for 3 minutes. Remove from heat.
  • Add the drained ziti to the pot and toss.
  • Add the ricotta, spinach and 1/4 cup of the Parmesan and toss again.
  • Spread the mixture into a 9-by-13 inch baking dish that is lined with aluminum foil.
  • Sprinkle with the mozzarella and remaining Parmesan.
  • Bake until the mozzarella melts (about 15 minutes).
  • You can also freeze this, thaw it overnight in the fridge and then cook it at 350F for one hour covered, then remove foil and cook for 10 minutes until cheese melts.

A vegetarian-ized version of a Real Simple recipe. I also substituted cottage cheese for ricotta because my husband doesn't like the texture of ricotta.

1 lb ziti pasta
1 tablespoon olive oil
1 large yellow onion, diced
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
3 garlic cloves, minced
1/2 cup chopped fresh oregano (optional)
1 (26 ounce) jar pasta sauce
1/2 cup grated parmesan cheese
1 (15 ounce) container low fat cottage cheese
1 (10 ounce) box frozen spinach, thawed and squeezed to remove liquid
1 cup grated mozzarella cheese

Steps:

  • Cook the ziti according to the package instructions.
  • Heat oven to 400°F.
  • In a large pot, over medium-low heat, heat the oil. Add the onion, salt, and pepper. Cover and cook until the onion is transparent, 10-12 minutes. Add the garlic and oregano (if using) and cook for 2 minutes. Add the pasta sauce and heat for 3 minutes. Remove from heat. Add the cooked pasta and toss to coat. Add the Parmesan, ricotta, and spinach and toss again. Spread the mixture into a 9-by-13-inch baking dish or individual ramekins and sprinkle with the mozzarella. Bake until the mozzarella melts, about 15 minutes.
  • Tip: If you prefer, substitute chopped broccoli for the spinach.
  • To Freeze: Assemble (but do not bake) the casserole. Cover tightly with two layers of aluminum foil. Store for up to 3 months.
  • To Reheat: Thaw overnight in the refrigerator or thaw partially in the microwave. Cover and heat in a 350° F oven for 1 hour. Uncover and heat until the mozzarella melts, about 10 minutes more.

I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

¾ pound hot Italian sausage
¾ pound sweet Italian sausage
2 tablespoons olive oil
1 large yellow onion, diced
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
2 (24 ounce) jars prepared marinara sauce
2 cups water
1 (16 ounce) package ziti pasta
1 drizzle olive oil
1 ½ cups whole-milk ricotta cheese
8 ounces mozzarella cheese, cut into small cubes
1 cup grated Pecorino Romano cheese
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Cut down the length of each sausage with a sharp knife. Remove and discard casings.
  • Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
  • Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
  • While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
  • Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
  • Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
  • Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.
