SAUSAGE STUFFED TURBAN SQUASH

This is my very favorite squash and it is a complete meal! One hint may be to have help with cutting this one open. It is very hard shelled.

1 medium turban squash
1 lb seasoned pork sausage
1 1/2 c seasoned salad croutons
1 medium white onion
4 clove fresh chopped garlic
2 medium red and yellow peppers
1/3 c olive oil
4 dash(es) each salt and pepper to taste
1 can(s) 14.4 oz. can of stewed tomatoes

Steps:

  • 1. Pre-heat oven to 375. Wash and open the turban squash and clean out the seeds and loose pulp.
  • 2. In a heavy pan, season with olive oil and add onions, garlic and peppers (chopped) and tomatoes. When veggies are starting to cook add sausage and one can of seasoned tomatoes and cook on low for about 15 minutes. Salt and pepper. Put one cup of the croutoins on the base of the large end of the turban squash.
  • 3. Next, add sausage mixure in the squash over the crouton and add the rest of the croutons on top (what you can fit).
  • 4. Put top of turban on the larger portion and place in a large oven proof dish or bowl with about 2 cups of water at the bottom.
  • 5. Cover with foil and place in the oven for about 1 1/2- 2 1/2 hours.
  • 6. No need to check on it untill about 1 hour in. Its OK if water is gone but make sure it is cooking. Should be done in 1 1/2 hours depending on the size of the squash.
  • 7. Enjoy with fresh green salad and some french bread!

1 (3 lb) turban squash
2 tablespoons butter
1/4 small onion, chopped
1 stalk celery, chopped
1 carrot, finely diced (optional)
1/2 lb pork sausage
1/4 cup soft breadcrumbs
2 tablespoons light brown sugar
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350°F.
  • Cut the top off the turban squash, as you would for a jack-o-lantern type pumpkin.
  • Scoop out seeds and pulp and discard.
  • Place turban squash, cut sides down, on an oiled or foil covered baking sheet, and cover with more foil.
  • Roast for 50-60 minutes or until tender.
  • Scoop out tender pulp from cavity of squash.
  • In a saucepan, saute onions, celery, sausage and diced carrot in butter until vegetables are tender.
  • Drain any fat.
  • Mix in brown sugar, bread crumbs, salt, pepper, and cooked squash.
  • Stir until well-mixed.
  • Spoon filling lightly into the cavity of the turban squash, and cover with the top.
  • Place extra filling (if any) into a separate dish.
  • Bake squash and any extra filling for 20-25 minutes or until heated through.
  • Serve hot.

Turban squash is a winter squash that looks like a pumpkin wearing a striped green turban. The texture is similar to pumpkin and butternut squash. This recipe has been a long time favorite at Thanksgiving with my family.

3 pounds turban squash
salt to taste
1 pound bulk pork sausage
1 cup chopped celery
½ cup sliced fresh mushrooms
¼ cup chopped onion
½ cup sour cream
¼ cup grated Parmesan cheese
1 egg, slightly beaten
¼ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and lightly grease foil.
  • Cut the top off the squash using a serrated knife and scoop out seeds. Lightly salt the inside of squash. Place squash, cut-side down, onto the prepared baking sheet.
  • Bake in the preheated oven until tender, about 1 hour.
  • Cook and stir sausage, celery, mushrooms, and onion in a skillet over medium heat until sausage is browned and vegetables are tender, 10 to 15 minutes; drain excess grease.
  • Combine sour cream, Parmesan cheese, egg, and 1/4 teaspoon salt in a bowl. Stir sausage mixture into sour cream mixture.
  • Scoop the meat from the inside of squash, being careful not to tear the skin. Mash squash meat in a bowl.
  • Spoon some of the sausage mixture into the hollowed squash, making a ring. Spoon a ring of mashed squash over sausage mixture. Continue layering until all the sausage mixture and mashed squash are used.
  • Bake in the oven until heated through, 20 to 25 minutes.

  • Cut out the Turban top from the squash and scoop out the seeds. Lightly salt the inside of the squash. Place squash, scooped end down, in a shallow baking dish. Bake at 375F until tender, about 1 hour. Meanwhile, in skillet, combine pork sausage, celery, mushrooms & onion. Cook until vegetables are tender & meat is brown. Drain well. Combine egg, sour cream, cheese & salt and stir into the sausage mixture. Turn squash, scooped side up and fill with sausage mixture. Bake 20-25 minutes longer. Serves 6.

STUFFED BUTTERNUT SQUASH

Make a veggie roast everyone will love - this squash is packed with nuts, barley and herbs, so it has plenty of flavour and lots of lovely textures

150g pearl barley
1 vegetable stock cube
25g pine nuts
25g flaked almonds
1 tsp fennel seeds
2 tsp coriander seeds
1 large butternut squash (about 1.2kg)
3 tbsp olive or rapeseed oil , plus a drizzle
1 red onion , finely chopped
1 leek , finely chopped
2 garlic cloves , finely chopped
200g feta , crumbled
small bunch sage , leaves picked and chopped
few sprigs rosemary , leaves picked and chopped
50g dried cranberries or apricots, chopped, or a mixture of both
1 lemon , zested
2 tbsp tahini
1 lemon , juiced
1 tbsp honey
small bunch parsley , chopped

Steps:

  • Cook the pearl barley following pack instructions, crumbling the stock cube into the boiling water for extra flavour. Drain and set aside to cool.
  • Meanwhile, toast the pine nuts and almonds in a dry pan until nutty brown. Tip into a bowl and set aside. Use the same pan to toast the fennel and coriander seeds for a couple of mins, until aromatic. Grind the spices using a pestle and mortar.
  • Cut the squash in half lengthways through the centre. Scoop out and discard the seeds and any fibrous bits. Keep scraping to carve out a channel down the centre of both squash halves for stuffing, you may need to score the flesh with a knife first if your squash is very firm. The squash shell should be about 1.5cm thick all over when you've finished. Roughly chop any squash you remove and set aside. Score the flesh of the 2 squash halves in a criss-cross pattern, trying not to pierce the skin, rub with 1 tbsp oil and season well.
  • Heat oven to 180C/160C fan/gas 4. Heat the remaining 2 tbsp oil in a pan and cook the onion, chopped squash and leek for 8-10 mins until soft. Stir in the garlic and cook for another min. Add the pearl barley, nuts, spices, feta, herbs, dried fruit and lemon zest. Season well and cook for a min or 2 more, then pack the filling into the cavities in the 2 squash halves, keep any leftover stuffing. Tie the halves back together with kitchen string, as you would a joint of meat. The squash will shrink a little as it cooks, so make sure you make the knots nice and tight. Rub the outside with a little more oil and season well. Alternatively, wrap well in foil.
  • Place in a roasting tin lined with some foil or parchment and cook for 1 hr. Check if the squash is cooked by inserting a knife, it should go in with little resistance and the flesh should feel soft. Scatter any remaining stuffing around the squashetta and return to the oven for another 5 mins to warm through. Mix the tahini, lemon juice, honey and a drizzle of water to make a dressing. Carve the squash into slices and serve drizzled with the tahini sauce and scattered with parsley.
