Bacon-Stuffed Pork Chops with Creamy Balsamic Sauce image

This is a recipe I made up after not finding what I wanted. My wife and family enjoyed it, so I wanted to share it. It makes a lot of sauce. I usually serve this over buttered egg noodles.

2 (6 ounce) thick-cut pork chops
1 tablespoon butter
2 tablespoons bacon bits
2 teaspoons Worcestershire sauce
2 teaspoons chopped onion
½ teaspoon prepared yellow mustard
½ clove garlic, minced
8 toothpicks, or as needed
2 tablespoons butter
1 clove garlic, minced
½ cup balsamic vinegar
¼ cup Worcestershire sauce
1 teaspoon prepared yellow mustard
2 cups sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lay a pork chop flat on your work surface. Use the tip of a sharp boning or paring knife to create a pocket by making a slit in the side; repeat with remaining pork chops.
  • Melt 1 tablespoon butter in a skillet over medium heat; add bacon bits, 2 teaspoons Worcestershire sauce, onion, 1/2 teaspoon mustard, and 1/2 clove garlic. Cook and stir until onion is soft and translucent, about 5 minutes. Allow stuffing to cool, 5 to 10 minutes. Stuff into pork chops and secure with 2 crossed toothpicks.
  • Heat 2 tablespoons of butter in a large skillet over medium heat. Brown pork chops, about 2 minutes per side. Transfer to a baking dish, reserving drippings in skillet. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until pork chops are no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Heat reserved drippings in the skillet over medium heat. Add 1 clove garlic, balsamic vinegar, 1/4 cup Worcestershire sauce, and 1 teaspoon mustard; simmer until reduced, about 5 minutes. Stir in sour cream. Coat pork chops with sauce.

2 bone-in pork loin chops (1 inch thick and 8 ounces each)
3 tablespoons butter, divided
1/2 cup sliced fresh mushrooms
1/4 cup chopped onion
1/4 teaspoon dried oregano
1/8 teaspoon pepper
2 slices deli ham
1/2 cup sherry or chicken broth
2 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • Cut a pocket in each chop by slicing almost to the bone; set aside., In a large skillet, heat 1 tablespoon butter. Cook and stir mushrooms and onion until tender, 2-3 minutes. Remove from the heat. Stir in oregano and pepper. Place a ham slice in the pocket of each chop; fill each with mushroom mixture., In the same skillet, brown chops in remaining butter. Add sherry, stirring to loosen browned bits from pan. Bring to a boil. Reduce heat; cover and simmer until a thermometer reads 145°, 20-25 minutes. Remove pork to a serving platter., Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with pork chops.

1/2 teaspoon dried thyme, crushed
1/2 teaspoon dried sage, crushed
1/4 teaspoon salt
1/4 teaspoon pepper

1 tablespoon butter
1 tablespoon olive oil
1/4 cup seedless raspberry jam
1 tablespoon orange juice
2 tablespoons white wine vinegar
4 sprigs fresh thyme (optional)

Steps:

  • Preheat oven to 200 degrees.
  • In a small bowl, combine crushed thyme, sage, salt, and pepper. Rub evenly over pork chops.
  • Melt butter and olive oil in a nonstick skillet.
  • Cook pork chops for 4 to 5 minutes on each side, turning once.
  • Remove from skillet and keep warm in preheated oven.
  • In the skillet, combine raspberry jam, orange juice, and vinegar.
  • Bring to a boil, and cook for 2 to 3 minutes, or until sauce is reduced to desired consistency (sauce will thicken as it cools).
  • Spoon sauce in a pool onto a serving plate, and top with pork chops.
  • Garnish with sprigs of thyme.

1/2 cup chopped dried apricot
1/2 cup honey
2 tablespoons diced onions
2 tablespoons cider vinegar
1 tablespoon fresh lemon juice
salt & freshly ground black pepper
4 pork loin chops, 1 1/2 inch thick
1/2 onion, sliced into rings

Steps:

  • Preheat oven to 350.
  • Combine jam, apricots, honey, diced onion, vinegar, lemon juice, salt and pepper in medium bowl.
  • Make slits in sides of pork chops, forming pockets. Generously stuff some of jam mixture into each chop and secure with toothpicks. Set aside remaining jam mixture.
  • Arrange chops in 9 x 13 baking pan, sprayed with cooking spray. Bake 30 minutes.
  • Top each chop with some of the reserved jam mixture and onion rings. Cover and continue baking until meat thermometer registers 160F, about 30 to 40 mins more.

1/2 (8 oz.) pkg. prepared stuffing
1 egg, beaten
1/4 cup onion, chopped
1/4 tsp poultry seasoning
Salt
Pepper
For sauce
1/3 cup minced shallots (2 medium)
1/2 cup dry red wine
1 cup fresh or thawed frozen raspberries (4 1/2 oz)
3/4 cup chicken stock or broth
3 tablespoons packed light brown sugar
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried, crumbled
2 tablespoons unsalted butter

Steps:

  • 1. Add butter, water, egg, onion, and seasonings to stuffing. Mix thoroughly. 2. Cut pockets into pork chops into the bone, pack with stuffing mixture and close with toothpicks. Add salt and pepper to chops as desired. 3. Brown stuffed pork chops in pan, then place covered pan in oven at 300F for 2 hours. 4. Make sauce: Sauté shallots in fat remaining in skillet over moderately high heat, stirring, until golden, about 5 minutes. Add wine and deglaze by boiling over high heat, scraping up brown bits, until reduced by half. Add raspberries and stock and simmer, stirring occasionally, until raspberries begin to burst, about 2 minutes. Stir in brown sugar and thyme and simmer, stirring, until berries are collapsed, about 3 minutes. Remove from heat and stir in butter until incorporated, then season with salt and pepper. 5. Top cooked pork chops with sauce, or serve with sauce on the side.

This is my recipe for basic stuffed pork chops dressed up with a mushroom-wine sauce. (NOT using cream of 'shroom soup!) You can either use thick chops for stuffing, or my way, using basic chops just placed on top of the stuffing. Delicious and easy! (See additional notes at the bottom of the recipe)

2 pork chops, bone-in
oil, for browning
2 cups fresh bread, cubed
1 tablespoon butter
1/4 cup chopped onion
1/4 cup green pepper, diced
1/4 cup chicken broth
2 tablespoons chopped parsley
1/8 teaspoon salt
1/8 teaspoon poultry seasoning
1 tablespoon butter
1 cup sliced fresh mushrooms
2 tablespoons dry sherry or 2 tablespoons white wine
2 tablespoons flour
1 cup chicken broth

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in medium skillet and add onion and green pepper, and saute over medium-high heat until tender, about 5 minutes.
  • Place bread cubes in medium bowl, add onion and green peppers, and remaining stuffing ingredients and mix well.
  • The stuffing should be fairly moist. Add more broth if needed or if using hard bread cubes.
  • In same skillet, heat olive oil over medium-high heat and quickly brown chops, about one minute each side.
  • Spray a casserole dish large enough to hold the chops with cooking spray.
  • Spoon stuffing into 2 mounds in dish, place browned chops on top, and cover.
  • Bake for about 45 minutes, until done.
  • About 10 minutes before chops are done, using the same skillet, melt butter over medium heat.
  • Add sliced mushrooms and saute for about 2 minutes, until they begin to soften.
  • Add wine and cook until its almost all evaporated.
  • Stir in flour well.
  • Dont worry, it will be dry.
  • Stir in chicken broth and let it quickly come to a boil.
  • Immediately reduce heat and let simmer for a few minutes to thicken.
  • If too thick for your liking, just stir in more broth and continue to simmer.
  • Spoon a little sauce over each chop and serve hot!
  • NOTE: I use whatever bread i have on hand for stuffing.
  • This was particularly good with sunflower bread, as you could taste the sunflower seeds.
  • NOTE: If stuffing chops, follow the directions as they are but stuff them before browning, using toothpicks to hold them together.

This recipe if from the Buxton Inn in Granville, Ohio. Two school teachers are busy restoring not just the inn, but the whole block in this town amid Ohio's Welsh Mountains. People drive from miles around to eat at this beautiful inn. This is an awesome dish. If fresh berries are not available, of course you can use frozen. If you prefer not to use brandy, you could use apple juice.

1 cup chopped onion
1 1/2 cups chopped celery
1/2 cup butter
3 cups cored and chopped tart apples
1/2 teaspoon ground allspice
1/4 teaspoon ground cardamom
5 cups dry bread cubes
1/2 cup raisins
1 (3 -4 lb) single boneless pork loin roast
1 dash garlic powder
1 dash salt & pepper
2 cups fresh raspberries
1/2 cup apricot nectar
1/2 cup red currant jelly
2 tablespoons brandy
1 tablespoon honey
4 teaspoons cornstarch
1 tablespoon water

Steps:

  • In large skillet, cook onion and celery in butter until tender.
  • Add apples, allspice and cardamom; cook, uncovered for 5 minutes, stirring occasionally.
  • In large bowl, combine apple mixture with bread and raisins; toss gently until bread is coated.
  • Preheat oven to 325°.
  • Trim excess fat from meat and split lengthwise almost through.
  • Spoon about half of the stuffing over the meat; fold and tie with string to secure.
  • Place remaining stuffing in 1-quart baking dish.
  • Place meat on rack in a 17x12-inch roasting pan.
  • Sprinkle with garlic powder, pepper and salt.
  • Insert meat thermometer.
  • Roast meat, uncovered, 60-70 minutes or until thermometer registers 160-170°.
  • Cover and heat remaining stuffing during the last 40 minutes of roasting.
  • To serve, slice pork, serve with additional stuffing and raspberry sauce.
  • To prepare RASPBERRY SAUCE:.
  • In medium saucepan, combine raspberries, nectar, jelly, brandy and honey (if choosing not to use brandy, you can use apple juice).
  • Over low heat, stirring frequently, cook until mixture boils.
  • Strain to remove seeds; return mixture to saucepan.
  • In small bowl, combine cornstarch and water; add to raspberry mixture.
  • Makes about 1-3/4 cup sauce.

  • Sprinkle pork with garlic pepper. In 12-inch nonstick skillet, heat oil over medium-high heat. Add pork to oil.
