MUSHROOM-STUFFED PORK CHOPS WITH VERMOUTH SAUCE



Mushroom-Stuffed Pork Chops with Vermouth Sauce image

2 (1-inch thick) bone-in pork chops (14 ounces each)
2 tablespoons olive oil, plus extra for coating pork chops
Salt and freshly ground black pepper
2 medium shallots, thinly sliced
5 ounces cremini mushrooms, sliced
1 tablespoon roughly chopped fresh Italian parsley leaves
1/2 cup white vermouth
1 tablespoon unsalted butter

Steps:

  • Heat the oven to 400 degrees F and arrange a rack in upper third.
  • Pat the pork chops dry with paper towels and put on a cutting board. Using a small paring knife, cut a 2-inch opening horizontal to the cutting board, halfway up the meat in each chop. Move the knife back and forth in a fan motion to open the interior of the pocket without significantly widening the opening. (You don't want to pierce through the meat but simply create a pocket for the stuffing.) Brush the exterior of the chops with oil, season well with salt and freshly ground black pepper, to taste, and set aside until the stuffing is ready.
  • Heat 1 tablespoon of oil in a large ovenproof frying pan over medium-high heat. When the oil shimmers, add the shallots and cook until softened. Add the mushrooms, season well with salt and freshly ground black pepper, and cook, stirring rarely, until browned, about 10 minutes. Stir in the parsley and remove to a plate to cool slightly. Wipe out the frying pan and return it to the stove over medium-high heat. Taste the stuffing and adjust the seasoning, as necessary. Stuff half of the mushroom mixture into the pocket of each chop. If the filling is falling out, secure the chops closed with toothpicks.
  • Add the remaining 1 tablespoon oil to the pan over medium heat. When the oil shimmers, arrange the stuffed chops in the pan and cook until browned, about 4 minutes. Flip the chops to the other side and transfer the pan to the oven. Bake until the pork is cooked and an instant-read thermometer, inserted into the center of the chops, registers 160 degrees F, about 12 to 15 minutes.
  • Remove the pan from the oven and set the pork aside on serving plates to rest. Return the pan to the stove over medium heat and add the vermouth. Cook, scraping the bits from the bottom of the pan with a spatula, until the alcohol smell is cooked off and is slightly reduced, about 1 minute. Remove the pan from the heat, add the butter, and let it melt. Taste the sauce and adjust the seasoning. Drizzle the sauce over the chops and serve with a gratin, mashed potatoes, or polenta, if desired.

We love the stuffing so much I usually double the recipe for the bread crumb mixture, leave everything else the same. For the bread cubes, French bread works best, not sourdough.

4 raw chop with refuse, 113 g; (blank) 4 ounces thick cut pork chops
3 cups day-old bread cubes
¼ cup butter, melted
¼ cup chicken broth
2 tablespoons chopped celery
2 tablespoons chopped onion
¼ teaspoon poultry seasoning
1 (10.75 ounce) can condensed cream of mushroom soup
⅓ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet, heat the oil and brown the pork chops. Place the pork chops in a baking dish.
  • In a bowl, toss the bread cubes, melted butter, chicken broth, celery, onion, and poultry seasoning together. Put heaping mounds of the bread crumb mixture onto the pork chops.
  • Combine the cream of mushroom soup with the water, and pour this mixture over the stuffing and pork chops.
  • Cover and bake for 30 minutes.
  • Uncover and continue baking for 10 minutes longer or until juices run clear. The meat thermometer should read 145 degrees F (63 degrees C).

1 pinch garlic salt, or to taste
1 onion, chopped
½ pound fresh mushrooms, sliced

Steps:

  • Season pork chops with salt, pepper, and garlic salt to taste.
  • In a large skillet, brown the chops over medium-high heat. Add the onion and mushrooms, and saute for one minute. Pour cream of mushroom soup over chops. Cover skillet, and reduce temperature to medium-low. Simmer 20 to 30 minutes, or until chops are cooked through.

½ yellow onion, sliced
4 pork chops
26 ounces condensed cream of mushroom soup
¼ cup water
2 cubes beef bouillon

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Place sliced onion pieces on the bottom of a glass baking dish. Lay pork chops over the onions. Cover chops evenly with cream of mushroom soup. Add water and bouillon to the top, breaking up bouillon cubes to get the flavor spread out. Cover with aluminum foil.

5 medium thick pork chops, split
1 cup dry breadcrumbs
2 tablespoons onions, chopped
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup milk
1 (10 1/2 ounce) can cream of mushroom soup

Steps:

  • Combine bread crumbs, onion, salt, pepper and milk.
  • Place 2 tablespoons mixture in split chop; close with skewer (I used toothpicks).
  • Brown chops in skillet turning to brown both sides.
  • Add soup; cover; bake for 45 minutes.
  • You may also place them in a casserole dish and add soup; cover and bake at 350F for 1 hour.

Pork Chops in Mushroom Soup (Aka Pork Chop Dinner) image

A simple weeknight dinner that my parents prepared often when I was a child. I make this every couple of weeks for my DH and his kids and it always goes down without a fuss. Although I don't usually condone the use of convenience foods, I cannot deny the importance of having ingredients for this on hand as a quick meal on a busy night or a comfort food meal when you need a hefty dose of nostalgia.

1 tablespoon vegetable oil
1 medium onion, diced 1/4-inch
2 garlic cloves, minced or crushed
4 pork chops (boneless loin chops work best)
2 (10 ounce) cans Campbell's Cream of Mushroom Soup
4 medium potatoes, sliced 1/4-inch thick
1 tablespoon dried parsley
salt and pepper
1 (8 ounce) can mushroom stems and pieces, drained well (optional) or 2 pieces dried porcini mushrooms (optional)

Steps:

  • Heat oil in a large, deep skillet and add onion. Sweat onion over medium heat until translucent. Add garlic and continue cooking over medium heat until fragrant.
  • Sprinkle pork chops with salt and pepper and add to the skillet, browning them over medium high heat. Flip the chops to brown both sides. The meat should be golden brown on both sides but does not have to be cooked through.
  • Meanwhile, stir together the two cans of soup, parsley and canned mushrooms/dried mushrooms (if using).
  • Place the potato slices into the skillet around, between and atop the chops and pour over the soup mixture. Use a spoon or spatula to gently stir the contents of the skillet to distribute the sauce over all the potatoes and meat. Be sure to scrape up the golden brown bits (fond) from the bottom of the pan and stir them into the sauce.
  • Simmer over medium heat approximately 30-40 minutes or until the potato slices are cooked through (tender), stirring gently at least twice through the cooking time.
  • Note: If your family likes strong mushroom flavours then I highly recommend the use of dried mushrooms in this dish. If your family is not so keen on mushrooms then leave out the canned and dried mushrooms. The sauce will still have a strong cream-gravy, especially if you fried the chops to a golden colour and scraped the bottom of the pan to rescue those flavours. This recipe holds up well to experimentation with dried spices and other add-ins. Try adding dried pakprika (sweet), chives, thyme, sage, applewood smoke seasoning, a few spoonfuls of sour cream or a handful of homemade bacon bits for variation.

6 pork loin chops, 1/2 inch thick
1 tablespoon vegetable oil, or as needed
1 (10.75 ounce) can cream of mushroom soup
1 cup water
½ (6 ounce) can french-fried onions, divided
½ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together flour, salt, and pepper in a rimmed plate. Dredge pork chops in flour mixture; shake off excess.
  • Heat oil in a large skillet over medium-high heat. Add pork chops and cook, turning halfway, until browned on both sides, about 2 minutes per side. Place chops in an 11x17-inch baking dish.
  • Stir canned soup and water together in a small bowl until well blended. Pour over pork chops and sprinkle with 1/2 of the fried onions.

3/4 teaspoon seasoned salt
1/2 teaspoon garlic powder

1 cup shredded smoked Gouda cheese

Steps:

  • Prepare stuffing according to package directions; cool slightly. In a small bowl, mix seasonings.
