WILD RICE STUFFED SQUASH



Wild Rice Stuffed Squash image

I made this recipe when we invited both our families to celebrate our first Thanksgiving in our new home. There were 37 of us, and those who tried this dish raved about it. -Robin Thompson, Roseville, California

Number Of Ingredients 11

4 medium acorn squash (about 22 ounces each)
3 tablespoons olive oil, divided
1 package (6 ounces) long grain and wild rice mix
2-1/3 cups vegetable or chicken broth
1 teaspoon rubbed sage
1 teaspoon dried thyme
2 celery ribs, chopped
1 medium onion, chopped
3/4 cup dried cranberries
1/2 cup coarsely chopped pecan halves, toasted
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 400°. Cut each squash crosswise in half; remove and discard seeds. Cut a thin slice from bottom of each half to allow each to lie flat. Place on baking sheets, hollow side up; brush tops with 2 tablespoons olive oil. Bake until almost tender, 30-35 minutes., In a large saucepan, combine rice with contents of seasoning mix, broth, sage and thyme. Bring to a boil. Reduce heat; simmer, covered, until rice is tender and liquid is almost absorbed, 23-25 minutes. Meanwhile, in a large skillet, saute celery and onion in remaining oil until tender. Stir in cranberries, pecans and parsley. Remove from heat. Stir in rice mixture., Fill each squash half with about 1/2 cup rice mixture. Return to oven, uncovered, until rice is heated through and squash is tender, 12-15 minutes.

STUFFED BABY SQUASH WITH CREAMY MUSHROOMS & TARRAGON



Stuffed baby squash with creamy mushrooms & tarragon image

Delight dinner guests with these stuffed baby squash, made with mixed grains, mushrooms and tarragon. It makes an ideal veggie centrepiece at Christmas

4 onion or acorn squash
4 tbsp olive oil
50g dried wild mushrooms
2 banana shallots, peeled and sliced
200g chestnut mushrooms, finely chopped
2 garlic cloves, crushed
100ml vegetable stock
250g cooked mixed grains
4 tbsp crème fraîche
½ small bunch of tarragon, finely chopped
80g mature cheddar, finely grated

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Using a serrated knife, cut a small disc off the bottom of each squash so they stand upright on a baking tray. Slice off the tops (these will be used as lids), and scoop out and discard the seeded centre. Rub 2 tbsp oil on the inside and outside of the squashes, then season.
  • Tip the dried mushrooms into a heatproof bowl and cover with 100ml boiling water. Cover and leave to soak for 15 mins. Meanwhile, heat the remaining oil in a non-stick frying pan, and cook the shallots for 10 mins until softened and translucent. Drain the rehydrated mushrooms (reserving the soaking liquid) and roughly chop, then add to the pan along with the chestnut mushrooms. Fry for 10 mins more. Stir in the garlic and cook for another minute. Add the stock, most of the reserved soaking liquid (leave the last few drops in the bottom of the bowl, as this may contain grit) and the grains, and bring to the boil. Remove from the heat and stir in the crème fraîche, tarragon and cheese. Season.
  • Divide the filling between the hollowed-out squashes. Put the 'lids' on top and bake for 1 hr-1 hr 10 mins, depending on the size of the squash. When ready, the squash skins should be blistered and the flesh soft and cooked through. Leave to rest for 10 mins before serving.

This easy cheesy mince and squash recipe makes a fab family meal

2 butternut squash , halved and seeded
2 tbsp olive oil
500g pack minced lamb
1 tbsp tomato purée
1 tsp ground cumin
100g couscous
100g goat's cheese or feta, crumbled
mint leaves, to serve (optional)

Steps:

  • Heat grill to high. Place squash on a baking sheet, drizzle with 1 tbsp olive oil, season and pop under the grill. Cook for 15 mins, turn and cook 15 mins more until softened. Scoop out the fl esh, and chop.
  • Meanwhile, heat remaining oil in a pan over a high heat. Cook the mince for 10 mins. Mix in the purée, cumin and couscous. Add 100ml/3½fl oz water. Cover, remove from heat. Leave for 10 mins.
  • Tip in the squash with most of the cheese. Fluff up the couscous. Pile into the hollow squash. Top with remaining cheese and grill until bubbling.

Kumi kum also sometimes known as Kamo Kamo. This is a truely flavoursome recipe that is just as delcious eaten cold the next day. I used dried sage and oregano for the herbs as I didn't have any fresh ones available. I used less pinenuts than the recipe calls for and used frozen spinach.

1 kumi kum squash, large
4 tablespoons olive oil
fresh herb, marjoram, oregano, rosemary
1 onion, finely chopped
3 garlic cloves, finely chopped
3 mushrooms, chopped
200 g aubergines
150 g feta, crumbled
100 g pine nuts
1 bunch spinach, washed and torn into small pieces
salt and pepper
150 g breadcrumbs

Steps:

  • Cut kumi kum in half, scoop out the flesh and leave aside.
  • Rub the 2 halves with olive oil and fresh herbs.
  • Bake 10 minutes at 180 degrees Celsius.
  • Saute the flesh of the squash in 4 tbsp of olive oil, with the onion, garlic, mushrooms and aubergine until softened. Remove from heat and stir through the feta, pine nuts and spinach. Season with salt and pepper. If desired you can add a glug of wine or a dollop of cream.
  • Stuff the kumi kum halves with the mixture, sprinkle with breadcrumbs which have a little olive oil poured over them and bake at 180 degrees C for about 30 minutes or until the kumi kum is cooked and the shell soft.
  • Serve on a bed of brown rice with a fresh green salad if desired.
